They will weigh your bowl & cook everything. It was nice of them to split the bowl into two, so me & my boyfriend can have our own bowl. The beef bone golden broth was good. Mild wasn't spicy enough for me. The ingredients were fresh & the beef quality was standard. There aren't many things to make your sauce with, but they have some of the essentials. I got mild spice level and it was spicier than medium at many other spots so be careful when ordering. The soup comes with a hearty layer of chili oil floating on top. I inhaled some of the chili oil while slurping my noodles a couple of times making me cough and it definitely cleared my sinuses. The beef is a flavorful cut with veins of tendon running through it and cooked until super tender. The plentiful noodles were cooked al dente to provide a nice chewiness. The broth was so spicy for me that I couldn't judge the depth of flavor on it. 4-stars. The soup dumplings had a nice tender wrapping and a fair amount of soup inside, but I thought there were a bit too heavily seasoned with soy sauce. They didn't come with any shredded ginger either. 3.5-stars. The soup dumplings at Jeng Chi are much better IMO. You order via a website which is annoying confusing when you have a large group with many items. The soups came out very quickly after ordering. I've been meaning to try this place for a while and glad that I finally made it because it did not disappoint. I had the beef yam noodle soup (not spicy). The beef itself was already a tiny bit spicy. It is different from most noodle soups I've had because this was more vinegar-y. What I enjoyed most were the sides. We had cucumber, bamboo shoots, tripe, and salt and pepper pork ribs. The real star was the xiao long bao (soup dumplings). They were juicy, sweet, and savory. This place is great! I loved their minced pork with yellow peas dry noodles. It has a good flavor. I got mild and it was a good level of heat since it's Sichuan kind of spice. Their handmade pork and cabbage dumplings were a standout as well with how juicy and tasty it was. The only thing I was disappointed in were the soup dumplings, it does claim to be unique and I thought it was just a statement but it's true. The broth inside is dark brown so I think there's vinegar and rice wine in the pork as well as broth but it gives a sweet aftertaste. If you like that that's fine but it's not my favorite flavor profile so I won't be getting those again. This is a good asian spot for noodles. It's a pretty easy going place and you order on your phone by scanning a qr coat and the food will be served when ready. You pick your own utensils and napkins. No fuss, no frills. We got the popcorn chicken, a dry style with mince pork noodle; added an egg and some bok choice, and my bf got the spicy beef noodle soup. Chicken was good but not crispy enough. The noodles had a nice bite to it. My boyfriend's spicy beef noodle soup had all the works and since they used the mala Szechuan peppercorns, you had the tingling numbing sensation which was addictive. Soup was too salty for me but a very hearty bowl. I got the dry style noodles and it was good. They used soy bean paste so it had flavor. I put some black vinegar in mine to give it a little acidity. It was good but still a little underwhelming. I think next time I'd order some beef tendons in mine. I'd rate it a conservative 3 stars for now since it was my first time. read more

To complete this review, I made two visits. The first visit, we ordered the soup dumplings (xiao long bao, or xlb) and we ordered the 2 noodle bowl special for $19.95. I got the ground pork noodle soup and my wife got the beef noodle soup. We both added egg and got it medium spicy. The soup dumplings were the best I have ever had. They were large, meaty and filled with delicious broth. These were the star of the show. The noodle soups were good but I thought the broth lacked enough flavor to merit 5 stars. They offer the same bowls without broth so I decided to make a second trip and get the ground pork noodles without broth and bumped up the spice to hot to compare. I liked this version better. This is a great little restaurant next to 99 Ranch. Service is quick but I don't like having to order on my phone. read more

Right next to 99 Ranch, you might miss this noodle shop! It's definitely a place you wanna stop in and grab a quick lunch. We got the pork and yellow pea spicy noodles. What's great is you can choose your spice level. I went with mild and it was ok. There is that Chinese peppercorn in the sauce so you get that numbing feeling! So flavorful. Our meal came out very fast. You do have to wait for the soup dumplings. But they are worth the wait. As my kids said, it's very flavorful. It comes out in the bamboo steaming basket and piping hot. Probably the most flavorful soup dumplings in DFW. I love how the skin is thick so it doesn't rip easily. We also got dry noodle with pork and that was just as delicious. Since I've visited both Plano and Carrollton locations, I can't help but compare them. This Plano location gave you a bigger bowl of noodles in a real ceramic bowl. The Carrollton location gave you a paper bowl. Portion ? Plano gave you more bang for your bucks but the taste was lacking ... the Carrollton location noodles were much more flavorful. Verdict : we like Carrollton location better. Inside both locations are pretty clean. This Plano location also has a kiosk which you use if you want food for to-go. So I guess I'm the last one to get the memo that Sichuan Folk has closed, because my family and I initially tried to find the Sichuan Folk but was confused to see Noodle China instead. We decided to dine in anyways because we were hungry and tired. This restaurant is practically a self-service as you order through a kiosk or a QR code at your table, and you grab all utensils, napkins, and water from a self-service station. The family tried the Pork Ribs Rice Noodle Soup, Pork Ribs Dry Noodle, and the Sichuan style wontons. The portions of food are pretty generous. But the food was definitely spicy, even at the lowest levels. Multiple people in the restaurant were coughing from the spice (including me). The pork ribs were very tasty and tender. The noodle dishes were very solid. On the other hand, I was not a fan of the wontons at all. The restaurant has plastic soup spoons, which were way too small for the wonton. We came here at around 12:30pm on a Sunday and it was fairly empty, but the place filled up very quickly in about an hour. Their noodle dishes are Sichuan style (numbing spicy) and everything tasted very authentic. It's mostly self service, and you'll have to order at the cash register and tell them what type of noodle you want with what types of add-one's and side dishes. We ordered the beef noodle soup and also some pork add ons plus some side dishes. The food came fairly fast and the they give you a huge portion of noodles. Would come back again but maybe next time we'd order less side dishes because the noodle itself was very filling. Don't let the other reviews fool you. This is NOT a Taiwanese noodle place. This is the most authentic Szechuan/Chongqing noodle restaurant in probably all of the United States. The three dishes we got were the right amount of spicy, numbingness, and flavor. One bite and it took me right back to the street stall that I ate these noodles at in Chengdu. The beef noodles have a good amount of tender and melt in your mouth beef. The dry mixed noodles are not dry at all. At first glance it looks not spicy, but upon mixing the sauces at the bottom into the noodles, you get that saucy goodness. Come try this place. You won't regret it! read more

They have the laminated menu that has a 3 step process, but when she started to order, they had all these exceptions, which were explained by the counter lady. It says to pick a soup type, a type of meat, and different types of toppings. Literally ordering food took about 4-5 minutes. Want a particular kind of meat? They didn't have it. If you get this meat, you can only order it in a soup, yada, yada, yada. Wife also ordered 3 cold side dishes and while the wood ear mushrooms were good the sliced beef came with it one piece of steel wool. The noodles and broth weren't terribly good either. Noodle China has won the hearts of many in the DFW area in search of some authentic Chinese noodles. As a noodle lover, I had to try this place for myself, and my curiosity naturally peaked when I learned Noodle China served only noodles. I brought a group here on a Saturday afternoon. We had just finished lunch but had to get round 2 at Noodle China. We split 2 bowls of noodles amongst the 5 of us. The portions were so generous that we still had some leftovers to go. We got the Beef Noodle Soup (牛肉湯麵) and the Minced Pork Dry Noodles (燥醬拌麵), both at Medium spicy level. They were both delicious, and definitely satisfied our cravings for delicious noodles. I am not normally a fan of Mala spicy (with Sichuanese peppercorn for its numbing effect) but it worked so well with these noodle dishes. Meh... I was honestly really disappointed by this place considering that the pictures and other reviews looked good. I tried the minced pork noodle soup and dry noodles. They both had absolutely no flavor at all except for straight up chili oil. I wouldn't even call the noodle soup a real "soup", it's pretty much just straight up chili oil. To be honest, the dry noodles and the noodle "soup" tasted exactly the same (just pure chili oil). I don't mind the flavor of chili oil, but it should be an additive, not the base. There's practically no base flavor at all in these noodles. I would hope for like a pork broth base or something plus some supplementary spice, but the broth was nonexistent. My friends liked it because they like the numbing mala spice, which I get, but I don't get how you can enjoy a whole dish with just that one flavor only. Service was ok. Noodles with minced pork in Sichuan spicy chili sauce. You can add extra toppings such as spinach, egg, and soybeans to your order. I also got a traditional Sichuan dish called husband and wife's lungs sliced which is just a mix thin slices of beef tendon, shank meat and tripe. I think what make the food tasty is definitely the Sichuan seasoning which is a blend of Sichuan numbing peppercorn, chili pepper and hot oil. At last, an authentic Taiwanese noodle location. Granted, the Plano-Richardson-Carrollton area is full of asian cuisine, and with that, countless options for noodles, but Noodle China has been my favorite by far. It's as close to Taiwan noodles as you can get, or at least as far as I've been able to find. Not exactly sure why this place has only 3.5 stars - it's truly authentic. The noodles have the perfect texture. Nice and chewy and don't get soggy easily if you let it sit in the broth a little earlier. Speaking of the broth, it's incredible. Filled with spices and flavor and you might be able to see a little of it from the pictures, but it's got a nice fatty element to it as well. And because of that, it's able to stick to and coat every noodle in the bowl, ensuring that every bite is full of flavor and broth. What was a little surprise that I LOVED was there were bits of crushed peanut included in the broth, which absolutely sealed the deal. You can adjust the spiciness level, from mild, medium, hot. If you're sensitive to spicy at all, I'd recommend mild, maybe medium. I'm pretty sensitive and getting the medium was a little too spicy for me to fully enjoy the meal, so be wary. They do NOT skimp out on spice and peppercorns. They also have your typical Chinese side dishes. It's about $3.75 per side dish. I didn't get any this time, so I'm not exactly sure if the size is worth that money. Everything comes in 1 size and most noodles can be either dry or soup. I will definitely be back to try some dry noodle options. I highly recommend this place! read more

The Beef noodle soup came out quickly about 5 mins after I sat down. I asked for a medium level spice as other reviewers said they dont hold back. It was fairly spicy, but that's about it. Their was a fair portion of noodles and beef. The soup itself didn't have much flavor to it. It was was just an oily, spicy broth that wasn't much beyond that. I thought I'd written a review for Noodle China, but I was wrong and here I am with some overdue feedback. Better late than never! So I came by Noodle China because from the pictures, the noodles looked thin and chewy. The cravings were real and I decided to drop by to see what exactly this restaurant had to offer. This place is TINY. The space could only fit about 6 tables that could each sit between 4-6 depending on how much space you and your party may want or need. The only windows are the ones looking out to the parking lot of the restaurant (this place shares a shopping lot with manna shabu, 99 ranch, Maht Gaek, and others). Luckily I came on my own to satisfy my noodle cravings, and there were not many people on a Sunday afternoon. You order at the counter, and they bring the food to you. I was met with less than welcoming service at first. Which, made me very confused as I was standing at the register waiting to order, met eyes with a lady, only to be blatantly ignored. Rather than looking at it as rude, another gentleman came to help me instead, and he tried his best to explain the menu to me. It then occurred to me that their first language is not English, but yet they were still trying to make sure they provided decent help. With that, I am willing to overlook the initial impression I had on their service (or lack thereof). The menu is simple and direct. You pick a dish and set your spice. That's it. And thank goodness, because I'm pretty sure I would have stressed them OUT. I got greedy and ordered their wonton soup AND their spicy beef noodle soup. I will never forget the look the man gave me at the counter when he asked if I was sure I could eat all that. It made me laugh, and I decided to take on the challenge. I had their wonton soup at mild and their noodle soup at medium spice. The food came out hot and FAST. They filled the bowls up to the brim, and at the tables they provide black vinegar and white pepper. I will say I finished both dishes (with some struggle, but I did it) and the reason why I could was because their food is absolutely PHENOMENAL. Wontons were perfectly cooked with a thin skin. They gave a generous amount of the dumplings in the soup and were comforting to eat. The noodles were just as chewy and satisfying as they looked in the pictures. A huge plus is that their beef is unbelievably tender and complemented their numbing spicy broth perfectly. What really puts their food over the edge of other restaurants would be their price. I've gone back again and again, for over ten times now. My all time favorite is the beef noodle soup and medium spicy, and I've been loving the sour and spicy intestines vermicelli as well. It's self service, and the people working there aren't the nicest, but they're friendly enough. Beef noodle soup - tender lean beef, some have small pieces of tendon attached. They use yang chun style noodle (thin noodle, more from the southern parts of China & Shanghai), which absorb the flavor of the broth well. If you order medium, the heat builds up so be aware. The broth is on the lighter side but is still flavorful. Sour & spicy vermicelli - can be with beef or intestines. I think they use green bean or potato starch vermicelli, but it's very chewy. The beef in my soup almost melted in my mouth it was so tender. I love spice and the medium spice gave a wonderful flavor. The spice seemed to be more pronounced in the dry noodles versus the brothy dishes, but that could have just been my imagination. Restaurant was very clean, other reviews mentioned sticky tables, but there was no stickiness for us.
