The pimento cheese, pepper jelly, and pork rind app was amazingly sweet, spicy and salty. An absolute must try. My mom got the pork and greens dish and raved about it. Greens over cheese grits with pulled pork and red sauce and onion rings. Very flavorful and she had so much left over. Our waitress was very friendly and parking was no issue at the Hoover location. The undisputed star of the meal was the Saturday-only Beef Rib. It was everything you want in Texas barbecue: incredibly tender, easy to pull apart, packed with smoky flavor, and finished with a beautiful peppery bark. If you're visiting on a Saturday, order it. That's all you need to know. My wife ordered the Texas Trinity, and all three meats delivered. The brisket was moist and flavorful, the spare rib had just the right bite, and the sausage had a satisfying snap with balanced seasoning. Good across the board. The sides were less impressive. The baked beans were easily the best of the bunch and tasted like enhanced Bush's-style beans with thoughtful additions. The loaded potato salad, street corn, and mac and cheese were average to fair. We also sampled the white sauce and didn't care for it. I enjoyed the house barbecue sauce, while my wife wasn't a fan. Next time, I'd skip some of the weaker sides and double up on the baked beans or give the regular potato salad a try. Bottom line: Go for the meat. The Beef Rib alone is worth the trip, and the barbecue program is strong enough to keep us coming back.

Pinto beans with onions in a pineapple based sauce was phenomenal. The second side was the (corn elote) street corn had a delightful jalapeño bite along with cotija cheese. Simply wonderful. Service- expedient and friendly. Ambiance- BBQ themed with appropriate decor. Value- the meal with tax was $20 I believe the price was within the range for a brisket plate. I typically ask for no peppers; they said the onions and peppers are grilled together, but they're well cooked. There honestly weren't a lot (or cooked so small/soft I didn't notice much), so that was fine by me. It was also bigger than it looked, so I was able to take home half of it to enjoy for dinner that night. (It reheated well, btw.) Loved the artwork on the walls. I think that artist has done a few in the area, and I think they said they kept some of the images from the previous ideation of the space. They do have music on, and so if you're dining in, maybe have someone stay near the front until the food's ready. It was a little hard to hear since the counter was around the corner, and I noticed the couple at the next table must have not heard their name being called. Next time, I will likely look at ordering some of their wings; they seemed to offer a variety.
