I was staying at the Hyatt Regency and came here my first night and sat at the bar. I highly recommend the Old Fashioned at the bar. My only recommendation is to ask for that he ice cube if that's your preference. I didn't know to ask and got small cubes that watered it down a bit... or I just drink too slowly. After reading other reviews, I had to try the Miso Marinated Black Cod. I was so not disappointed! The cod was perfectly cooked with sweetness that paired nicely with the baby leeks and mushrooms. I also had the Loaded Baked Potato as my side. The potato was incredibly fluffy and I loved that I could mix in the butter, chives, sour cream and cheese to make it just as I liked it. I didn't have dessert but they all looked delicious!

Pretty good cocktail. Sushi was average. Should expand HH offering to include more food offerings. Overall a great experience for a big chain hotel restaurant. Also did sushi takeouts there to eat in our room.

We dined here because I was in town for a conference and the daily F&B credit. However when the restaurant was nearly empty at 8pm on a Thursday night we should've left. The service was great but the quality of the food and flavor profile was poor. We ordered lobster bisque, creamed spinach, octopus, hamachi jalapeño and the worst kale and freisee salad known to mankind. The bisque was burnt, lacking in silky rich flavors, it was salty and charred. The octopus was rubbery and bland. The sushi roll was warm and unbalanced. I ended up just picking the fish off the top and eating it because the inside of the roll was poorly executed. When the salad came to the table I was shocked, it was dry and just a pile of vegetables and not a well thought out salad. It hit several bitter notes. I love beets, kale radish etc but the presentation and preparation of this salad was a miss. Our server was nice, but unfortunately the food missed the mark and was underwhelming.

For convenience and hanger issues, I tend to eat at the restaurants at hotels. I also set my expectations low bc I don't want to be disappointed when I am anticipating an amazing meal. BUT...Stetsons did NOT disappoint. It started off slow and calm as it wasn't a very busy night. The host sat us near the bar with a view of this mesmerizing fireplace. It definitely isn't your usual steakhouse as it has a whole sushi bar in the restaurant like you'd think it was a dedicated Japanese restaurant. I wasn't in the mood for steak but really wanted to try the fish and how fresh it was. Now, where can you get a wedge salad, sushi rolls, lobster bisque, char grilled octopus and miso marinated black cod in the same place? HERE. That's where. Salad was chilled and knife ans fork ready. The creamiest blue cheese crumbles and I don't really like blue cheese. This one wasn't so sharp but very palletable. Charred Octopus was another favorite. Great flavors. Tender. The black miso cod was the star of this meal for me. Could not get enough of it. Surprised as this was a steakhouse + sushi bar. Loved every single bite. Hubs gave me spoonfuls of his lobster bisque. NGL, it was pretty legit with pure flavors vs covering it up with cream and butter. Their dessert was no joke. I wanted to sample everything. Had their toffee cheesecake AND their chocolate cake. The cake was huge! Like back in the days where Claim Jumpers was around. Nice and moist and not too sweet. Some bites were dryer than others. Needed a glass of milk for it. Our server Hussein, I believe, was slow to warm up to us. But by the end of the night we were joking around and had a very enjoyable last night dinner. Our 1st meal in Chicago. Love the convenience of this resto being in the hotel. No reservation needed though we made one anyways since it was getting late. We were not rushed to leave at all though it was close to their closing time.

Love this place located right inside the Hyatt Regency in downtown Chicago! Went with a large group and we ordered several items. Staff was very attentive and everything was delicious! Check out that seafood tower. It had everything on it you would like! For dinner, I had the prime rib I could only eat half of it.

Truthfully only came here for the happy hour while we were staying at the Hyatt. Half price sushi and $6 old fashions obviously drew me in! Super cute, mature, and classy restaurant. We sat at the bar and all the bartenders were so nice to us. I got the sunset roll and it was perfect.

One of the best dining experiences I've had in Chicago! My sister and I came to Stetsons Modern Steakhouse + Sushi for a girls' night and everything was exceptional from start to finish. We decided to trust our server, Anthony, with the entire menu -- and he absolutely delivered. His recommendations and wine pairings were spot-on for every course and truly elevated the whole experience. We ordered a mix of sushi and steakhouse classics, and every dish was outstanding. The Sunset Roll and Dragon Roll were packed with flavor, the Shrimp & Scallop Roll was fresh and bright, and the 10oz Filet Mignon was perfectly cooked and melt-in-your-mouth tender. The sides were just as impressive -- especially the grilled corn with lime crema and chipotle dust and the creamed spinach. The crab cake was another standout with almost all crab and barely any filler. Between the incredible food, the cozy upscale atmosphere, and Anthony's thoughtful, attentive service, this was an unforgettable night. Highly recommend Stetsons whether you're staying at the Hyatt Regency Chicago, planning a date night, or just craving amazing sushi and steak in the same place. I'll definitely be back!

Not the best steaks in Chicago, but it is priced like they are. The food was very good and the service was excellent. They have a good cocktail menu as well as a great wine list (which they bring to you separately on an iPad). I got the 10 ounce fillet with the peppercorn sauce which was very good. I ordered it medium and it was cooked perfectly. My guest got the salmon and she also liked the flavor. A good steakhouse, but not outstanding.

Came by for happy hour drinks while staying at the Hyatt Regency in downtown Chicago. Sat at the bar and got a $6 old fashioned! The happy hour menu is definitely worth checking out, as this is an upscale restaurant. Very classy ambiance.

Stayed at the Hyatt Regency and decided to grab some dinner because I wanted to have a chill night before my flight out the next day. Called the restaurant to place an order for pick up and was told that they only take orders in person. WTF, this is a restaurant inside of a Hyatt. Why would they not allow call in orders. I guess they've been burned by people placing orders and not picking them up. Ordered the lemon & pepper calamari, sunset and California roll. While waiting, I also ordered an Old Fashion with Makers Mark. The Old Fashion was just ok, but a little stiff. Not the greatest, but at $14, I guess you can't expect that great of a drink at a hotel restaurant. For the amount of calamari you get for $22, it wasn't bad. It's understandable that the calamari wasn't as crispy, but I did notice that the lid to the aioli melted due to the heat. When it says lemon & pepper, I was thinking something similar to what you would get at a Chinese restaurant. This wasn't seasoned at all, but did have an aioli sauce to dip in. But it did not taste anything like lemon or pepper. I wonder if they forgot to season it. The California roll had real crab meat in it. But at $22, that's a big pricey. I can't comment on the Sunset roll as I didn't eat it, but my wife said it was just ok. Based on how everything was, this place is definitely overpriced for food taste. Only saving grace is that this restaurant is located inside of the Hyatt.

Great service that was slightly overly attentive but the food was great. I love the Calamari here and the Miso soup is beautiful presented but tastes the same as I could get at a Chinese takeaway. I didn't order any steak. The steak prices are extremely expensive even for a lower quality cut like ribeye. I had a salad which was very fibrous but protein on it would've made it more palatable. Those are not offered over the menu. They have a great wine assortment and I enjoyed a crisp half-glass of Pinot Grigio. The bread is thick and served warm. I did adore the Apple Pie which is flaky, buttery, served warm (without having to ask), and is paired with decadent vanilla ice cream.

The scallops are buttery, rich, and had a perfect crispy crust. The Seabass was flaky and light-overall a very good combination of flavors. We got a side of the broccolini and then the crème brûlée and a piece of Keylime pie to go. Overall a very filling and delicious meal-I was pleasantly surprised with the scallops and how light the sea bass was.

Messy is to be expected but surprisingly the food mess was manageable and did not take away from my dining experience. The amount of crab legs in my bag to me did not justify $32 and if it wasn't for the potatoes and two corns I'm sure I would of still been hungry. Seafood boils are not a cheap experience neither, our meals with the two lemonades and no alcohol was $110, so definitely not an every weekend dining option, but leaving I did see on their info board that their shrimp, crab bags are $28 Monday - Thursday and they look to have a pretty good happy hour so this might be a reason for a quicker return. The beignets can get a little messy but they were good as well being that it was my first time.
