Ugh yum. So good. I've been wanting to visit Sub Rosa for some time and when husband mentioned a craving for croissants, I jumped on the opportunity. Currently they're doing pick up only, and it's fully contactless, where they'll bring out your bag after you text with your name. There was one person who picked up maybe a minute before me, and I picked my order up two minutes after I texted. Pro-tip: there is parking on the left side of the shop reserved for Sub Rosa pickups! Use it so you don't have to wait for your husband to circle the block! Definitely hop on the site exactly at 8AM - things can and will sell out in the next five minutes. They bake more throughout the day, but they still might be low on stock at other times during the day. If you're interested in the bread, they offer a sale assortment of day-old bread, and have some other loaves (they said they do around 50 loaves a day). But if you want a fresh loaf, they'll start to hit the site at 10am. The classic croissants are great - not the best I've ever had, but flaky and lovely nonetheless. The Einhorn croissant is similar with a slightly nutty flavor that I noticed but my husband didn't. Almond croissant was good but slightly dense since it's very generous with the almond filling. Not bad, but it did throw me off when I ate it first before the plain croissant. Lamb borek was deliciously seasoned and wonderful, and much larger in a rectangle puff than I expected! Actually that should be noted - these croissant sizes are HUGE. Like I could easily split it, but if I ate one solo, it'd be my lunch. A very flaky and delicious lunch. Anyway, really enjoyed! The best bakery in Richmond. Their pastries are incredibly flaky and buttery. They usually have seasonal pastries but my favorite of them all is the salami and cheese one. Their grains are local and everything is baked in wood ovens making this a unique bakery. Service is very fast paced and friendly. They have indoor and outdoor seating. There isn't tons of seating inside and it can get congested inside but there's plenty of seating outside. I don't love their coffee but I have to rate it 5 stars because their baked goods are amazing. read more

Here is my advice to the business owners as a fellow business owner: 1) Advertise yourself as a "first come, first-served" business. Many small, family run eateries do this. Let your customers know what time you usually sell out each day, and advise them to come before then or risk items being sold out. 2) Overbake for the day and have a "day old" section of your case at slightly discounted rates. Many customers, myself included, would love to purchase from this section. Then donate the rest to a food bank. It is simply unacceptable to advertise yourself saying you "bake multiple times a day, so pastries will always be fresh" -- https://youtu.be/ZdzXMs8EKj8 -- and then sell out at 1:15 pm, when your operating hours are 9:30 am-5:00 pm. I understand that you mill your flour fresh and many of your items' dough needs to cold ferment overnight. If you truly find yourself unable to accommodate the needs of your customers as early as after 10:00 am (half an hour after opening) according to another reviewer, you should 1) hire more staff, 2) expand your size, or 3) barring none of these are fiscally possible, advertise yourself on your website and social media as a "first-come, first-served" business. Then people wouldn't be disappointed then they come halfway through your operating hours and every single item in your shop is sold out. It would also help if you picked up your phone when people called to ask if you had anything left or your employees were friendly and warm and apologized when we walked in that they were out. read more

I ordered to go pickup this time a few days ahead and was so easy and simple to do. Went to pickup and it's on the shelf ready to go no waiting. We got chocolate croissant, fig and cheese, ham and cheese and Morning buns for our neighbor. We loved everything and so did they. The layers in the croissants are impeccable and perfect. Many will argue that Sub Rosa is one of the best bakeries on the east coast. There is really nothing else quite like it. Many have traveled overseas and compared Sub Rosa to actual bakeries in France and Sub Rosa always wins. I first came to Sub Rosa a year ago on a food tour of Richmond. It was our last stop and I was honestly full so I took my Millers Flour chocolate croissant back to my car and forgot it was in there until my drive back to NC. At this point it has been beat up a bit in my car and was at a minimum 14 hours out of the oven...yet I had to pull off 85 and foodgasm over its excellence. My wife has beeb saying for a year 'you better bring home things from that bakery next time you go to Richmond'. I will not disappoint. Got here at 7:30am to make sure I was first person in. There is a limit of 8 and large orders need 48 hour notice. Calling ahead next time for sure bc I want more! The fig and cheese did not disappoint- its sweet and savory all at once with a flakiness that transports you to Paris and shares your moment with the sparrows that start their day here too bc it's the best pastry bakery in the USA. Sub Rosa is a quaint little bakery that sits in the heart of the Historic Church Hill district of Richmond. It is often revered by many as the "Best Bakery in Richmond" and I must say, after sampling several of their pastries they 100% live up to the hype. There are an array of both savory and sweet pastries to choose from. I was with a small group of people and we sampled the salami & cheese croissant, the spring greens & feta croissant, the fig & gorgonzola croissant, the caramel apple torte, and the cinnamon bread pudding. Each pastry was flavorful, soft, and flaky perfection; furthermore, I honestly did not know which one I liked the best, but if I had to choose I would say the salami & cheese croissant and apple torte were my favorites. I'm thinking about how good they are as I type this review. All in all, Sub Rosa is a cozy spot to grab a lite bite to eat with friends. You must try if you ever find yourself staying in Richmond. The online ordering is crazy. Sometimes, you'll select something but by the time you actually order it, it'll sell out. But their system is efficient and punctual. Once you text them of your order, you'll have your food in about 5 min. My favorites (in order): Cherry pistachio croissant - Cherry isn't too strong making each bite so delicious. The croissant is flaky but moist. This was surprisingly my favorite one. Lamb borek - Filled with meat and it's flavorful! Very delicious savory pastry. Peach tart - Their tarts are huge! The peach was sweet and fresh, atop a crispy pastry. The middle had softened up but it still tasted so good. Salami and cheese croissant - Considering the ham and cheese was underwhelming, the salami and cheese actually shined. Chocolate croissant - A lot of chocolate! Too many times chocolate croissants have all the chocolate right in the middle but their croissant is evenly spread and plentiful. The layers are so beautiful too and flaky. Others (not in any order): Fire roasted poblano and cheese croissant - This was pretty good and savory, just didn't wow me. I was hoping for a bit more of a kick. Ham and cheese croissant - Maybe it was overshadowed by all the other delicious croissants.. Fig and cheese croissant - As beautiful as it was, this also wasn't as good as it looked. Mine looked a little overbaked and there was hardly any cheese. Almond chocolate croissant - This one tasted nice but was quite dense. Again, a lot of chocolate which is a plus but it was also a lot of almond. Maybe a bit of almond cream could moisten it up. Pogaca - their other Turkish pastry. I can't believe I had to come here twice before writing this awesome review. Long story short - I befriended an Insta user and she recommended this spot in Church Hill. I had not heard of it, but have seen great pictures on her account. She convinced me to go during a lunch break to try their pastries. I'm surprised that I'm not able to see the first set of pictures I've uploaded. But I tried their Lamb/Beef Borek and Pancetta/onion/cheese pastry. Omg - it was wonderfully made. The pastry was baked to perfection and the flakiness of it was just beautiful! I definitely had to get extras to bring home to the hubby. WHICH -- tasted just as amazing when I got it that afternoon. Just pop that in the oven at 325 degrees for 5-10 mins and it's just like you got them out of their oven! The second time coming to this location, I finally got to meet with an Instagram friend. We decided to meet up here and it was destined to happen since they were selling their Sour Cherry Pistachio, which was told to only be serving during the weekends! I'm super glad I got to try that with her because it was delicious and definitely different from what I've ever gotten at a bakery. Service: Since they are currently only doing online orders and pick-up, I had minimal interaction with any staff. The website is easy to maneuver for ordering. Options may go out of stock or back in stock over the day, so it can be helped to check again later. Since guests are not allowed into the store because of COVID, when you arrive, just text your name and someone will bring it out to a table outside within a minute (there weren't many people when I arrived there). It's easy to order upon arrival as well. Food: I ordered the pide flatbread, a pogaca, lamb borek, ginger walnut cushaw tart, and the spiced apple & pecan cream turnover. Everything was rich with unique flavors, although the breading textures were similar across the pastries. My favorites were the tart and the turnover. And to top it all off, they were each large in size, the borek particularly so. The pide was a little denser than I expected of focaccia, to which it was marketed as being similar, but still good. Value: The pastries do tend to be expensive, costing more than a loaf of bread. It can be a luck of the draw to be available to obtain one of the pastries or breads when they offer them, but I think it's worth the effort. read more

The chocolate almond croissant from Sub Rosa is the best one I've ever had..period. Also, the ham and cheese croissant and the tart was incredible. Bread ordering starts at 11am daily, but I would wait until around noon after the wholesale orders are complete, for the most options in bread types. This is the second time I've ever been to Sub Rosa. I first went a few years ago, but typically don't get to that part of Richmond so I hadn't been back. I was meeting a friend for lunch down the street and was so excited that they were open. I went in and bought some granola, two plain croissants, and two flavored croissants. Two of them have been saved for tomorrow, but the two that we ate for dinner, one with pistachio and one with raisins and cinnamon, were absolutely amazing! I've been waiting to try this place for ages. Finally got takeout - ordered online and pickup was ready in 10-15 min. Right now only certain pastries are available on the weekends - almond croissant, pistatcho croissant. Everything on the menu looked so good - I got the lamb/beef borek, almond croissant. I got home and broke open the borek - perfectly browned, so flaky and smooth, buttery, light. Suprisingly amount of meat, flavor soaks into the pastry. I split half to save for later, but then I toasted it and devoured the rest. I broke open the almond croissant, toasted almond on the top, sweet/nutty taste on the inside, crispy throughout. I couldn't finish all of it. I will definitely be back to try the rest. Slightly on the pricey side at $5-6 per pastry, but one savory pastry is more than filling - so really it's like $10-12 for an incredible lunch. read more
