There were multiples of the potato salad left so I would think (and this is coming from someone with 13 years of restaurant experience), give the customer a potato salad as a thank you for waiting.

We then saw our server stand in the doorway between indoor/outdoor seating and survey the dining area for a minute. Still, she didn't come back to our table and walked back inside. We got tired of waiting and went to the bar to pay for the drinks we received. While paying/explaining to the bartender why we were leaving, our server came up and asked if we were ready to order as if there were no issue.
