I started eating sushi about 6 years ago. I was not a huge fan for the first 5 or 6 times. After a while you begin craving the stuff though. Being from a landlocked place like Ohio I'm not a fresh fish snob but I do know the difference. Sushi 1 is my favorite place in all of NorCo for Sushi. The fish was not fresh, period. In addition, the rice in the nigiri sushi was undercooked. The rice that came with the rainbow roll was decent, but the fish that laid on top was not fresh. I choked down a majority of the roll but couldn't get past the shrimp, which thankfully was cooked, but definitely did not smell or taste fresh. Instead of featuring special roll deals, I think this restaurant should focus on the quality of their fish. My wife and I love Sushi One! We once lived in Greeley and went here once a week for three years. We now live 25 miles away and still go out of our way to come here for sushi. It's literally the best in the area I cannot think of anywhere else in the northern Colorado that can come close. If you are in the Greely area you must go to Sushi One if you love great sushi! Maybe Halloween wasn't the best night for sushi --- because half of Greeley was here for dinner, dropping scads of money, eating like there was no tomorrow. The place was packed; take-out orders being picked up every 5 minutes. Every restaurant should want for business like this! And to their credit, the dozen(plus) staff/chefs were exceedingly gracious & on their game. Even Grandma & Grandpa werediligently bussing tables and keeping the flow. But my dinner fell flat when my tempura bento box sat for 10 minutes waiting for my outstanding Ninja roll (eel/avocado/crab & worth every bit of the $14 price tag). My rice was cold. So I have to give this place a review, its amazing. Sushi One is a gem. Seriously. I am not sure if this is saying much but... its THE best Sushi I have experienced in Colorado. I even schedule my meetings in Greeley around lunch so that I can stop and have this place. I have been to dinner there once, pretty good, one of my first sushi experiences, not sure what to expect. But I have had their lunch special well over 50 times now. Amazing. So heres the scoop. Lunch Special, I believe running from 11-3pm. You get 3 rolls for $ 11.99 (I think, it used to be $10) and other specialty Nigiri for a $1 a piece. Very good deal! I am a HUGE fan of the Philadelphia, even though they sometimes swap the avocado with cucumber for lunch. So I get that and their Baked Salmon Roll is to die for. California roll topped with baked Salmon glazed with their special Garlic sauce which makes this place! Totally recommend it if you're in Greeley some time! read more

Have ate here twice now. Once a year ago and once last week. Was happy to have the same server from the previous year. The restaurant is small and is comprised of all tables kinda close. The fish selection is what you'd expect. Nothing extraordinary. The miso soup is excellent. Couldn't believe the deals at lunch. They have great specials including 1.50 nigiri. Sushi One probably has the best sushi available outside of the Denver metro area. The sushi is solid (not spicy enough even though we requested extra spicy on the rolls) and has really good flavor. The service was good and we were frequently checked on to make sure we had enough to drink and to see if everything tasted alright. They've changed a little. There are things on the menu that I love ( sweet potato roll, ninja roll, and sashmi combo. My son loves the Thai fried rice.) and things that I used to love. The tuna tataki used to be my absolute favorite but they've change the recipe. It has less sauce and too much dry seasoning. The batter they used for the tempura is not what I am used to in Japanese tempura, it resembled the kind of batter you see in southern style deep fried fish, and was not as good as the usual Japanese batter tempura. Sushi One has a fantastic deal on a sushi dinner for two that comes with miso soup, jalapeno bombs or egg rolls, salad, several different kinds of rolls, drinks, and mochi ice cream for dessert all for around $30. It is a ton of food for two people, but somehow we always manage to finish everything. I have been here for lunch a couple times as well and their lunch special is also very good. My family and I and friends, too, have been eating at Sushi1 ever since they opened a few years ago. Greeley is lucky to have really good sushi. I've eaten at the Sushi Den on Pearl St. in Denver and I can honestly say that our Greeley Sushi1 is way better! I love the baked salmon roll; eel roll, phily roll, spider roll and California roll. The miso soup is always good, as is the edamame and the mochi ice cream (love the texture). Quite often we'll order their 3-roll special to go (good deal). There's so much to choose from on the menu, it's unreal. If you go on a Friday or Saturday night, you might want to go a little early, they're usually swamped! read more

I have been here so many times and I can't believe I haven't written a review! I was browsing on Yelp and I was curious to see any recent reviews. As Darrin V. mentioned they had a major fire but they do plan on reopening. They don't have an official date but I've seen cleanups and other stuff happening so hopefully by fall/winter. I am addicted to anything with Raw yellowtail and I can't live without the sashimi sampler when I go in. If you ask me raw is the only way to go. Sushi 1 is the best sushi around, period. Fast, friendly service and great food! My personal favorite is the Holy Cow roll. It has seared beef, crispy onions, and a really yummy sauce. Let me begin by saying, Sushi 1 has been our favorite sushi restaurant, so much so that for two consecutive years now we've gotten $100 gift cards. Tonight we ordered the cajun shrimp roll made with baked shrimp which we've had many times in the past. After my boyfriend and I each had eaten a slice we both decided the shrimp didn't seem to be fully cooked so we each took another piece to see if in fact the shrimp was not cooked through. Both of the pieces were filled with shrimp that was gray and translucent, not white and opaque as is typical of cooked shrimp. When I brought this to our waitress's attention, we were told that's because the shrimp was "boiled." Whether baked or boiled, I then I reiterated that it was not cooked through given the gray color and translucency which elicited a curt response asking what we wanted them to do about it, falsely claiming we had already eaten over half of it. I pointed out that we each had a slice on our plates (gray translucent shrimp pulled out for her to see) and four more pieces of the eight slice roll still on the serving platter, total 6 of 8. I told our waitress we didn't want to pay for the undercooked shrimp roll. She then asked if we wanted them to drop the charge for that roll or have them make a new one. We opted for a new one. While we waited for the replacement, one of whom I assume was a cook brought a piece of tempura shrimp to show us what cooked shrimp would look like--I told him I know what cooked shrimp looked like describing color/translucency, etc. We did receive a replacement roll with gracious apologies from another of whom I assume was a cook. This was our favorite sushi restaurant in Greeley, but now am soured on revisiting a place that falsely accused us of eating most of their undercooked shrimp roll implying we wanted a free roll by not wanting to pay for it. read more
