Okay...now, about Tamashii ramen. I have been to their location in Astoria, and I was merely okay with it - it was pretty telling that each and every time I head to the area I do not attempt a re-visit (there are much better places to eat in the area, starting with Los Portales). I have always maintained that their flavors need a bit of rebalancing, and that something always seemed "off". Then I walked into their location in Forest Hills on Saturday evening, ordered a bowl of their signature ramen, and figured out what exactly I didn't like about it. First, let's talk about my preferences in ramen - I prefer shio broth (soup seasoned with sea salt), not shoyu (soy sauce), and not miso (not that I dislike it, but it typically walks over other flavors). Now, in most ramen places you typically deal with chintan (a clear soup), paitan (milky soup) or a hybrid of both (often mixed by the chef in your bowl) - I prefer a more assertive paitan rich in mouthfeel, assertively salty, and with a blast of umami. Now, there's the tonkatsu at Zundo-ya (or Terakawa, closed) the almost cream-of-chicken-like tori (or chicken) paitan at the late and lamented Mew-Men, and then there's the porky shoyu paitan at the Santouka ramen counters in Mitsuwa marketplaces - all of them I have an affinity towards. Now when it comes to thicker noodles, you need thicker, stiffer noodles to stand up to it. In all cases, that's what you got. So, what's with the shio ramen at Tamashii? Well, on Saturday evening me and the missus decided that the hype died down sufficiently for us to warrant a visit, and coincidentally they placed us on a table right next to the grill man in the see-through semi-open kitchen, who actually prep the char-siu (braised and then torched to give it a broiled appearance), and ladle the soups for the noodle cook. So I ordered the namesake noodles, the missus the cham-pon seafood noodles, and we also got some fried squid legs. First, the squid. The oil doesn't taste too clean, and the tempera batter didn't adhere very well, but at least the flavor of the squid still manages to come through. Then comes my shio ramen. The shio soup is a 30/70 paitan/chintan mix, with the paitan seemingly not pork based, but rather dashi (seaweed/dried fish flakes) and chicken, but missing some of that thick mouthfeel (probably because they are targeting rail-thin millenials preferring a thinner soup?). It does lend a certain unexpected fishiness to the flavor, which I didn't like - if you favor thick meaty gelatinous tonkatsu broths, well, this will not appeal to you. Then there is the issue of the noodles, which is both thin and overly soft - didn't really help its case. Then there is the bamboo shoots, which seem a bit too rough and assertive to work well with both the noodles and the broth. The semi saving-grace of the meal came in the form of the champon noodles for the missus - that one is a 70% paitan soup with a richness that was lacking in the shio, with a hit of Korean gochugaru (spicy pepper). Why yes, champon (jjampong) is a Korean Chinese noodle soup, but hey, ramen shops in the east village often feature the dish. Anyways, the seafood came from a pre-blanched seafood mix (remember me watching the cooking?), but when combined with the thicker noodles and the sprouts, it actually worked much better than the shio. Anyways, the decor is nonsensical (wooden anchors, anime posters), the service was decent, and in terms of value, it's okay. However, if you are a fan of ramen, you probably know of better places already. I am not really a fan of their shio, but I could in theory go for their tsuke-men the next time I drop by, but just like their location in Astoria, that would not come any time soon. read more

Finally! I have been waiting for the day for good ramen to come to my neighborhood (I've been waiting for 5 years!) and the day has finally come. I came yesterday evening with two girlfriends and we all got the same thing - the signature Tamashii Ramen. Delish!! A generous amount of ramen, beautifully done hard boiled egg, and the broth was perfect. It didn't leave me deathly thirsty as too much MSG sometimes will do. We also tried the Toboyaki for apps and that was spot on as well. This is a place people (definitely me!) will come back to week after week. Appetizer + Entree for under $20 per person including tip and tax for good food is a winner in my book. Especially with fast service (despite them having JUST opened) and really well done interior design. Very smart spatial layout as it's a narrow block with really only one wide storefront window but somehow the way it's designed, it feels really roomy in there and not crammed at all. Hopeful more and more new businesses of Forest Hills get this. Five stars for the Layout, decor, fast service, great food and appropriate price for the neighborhood. Constructive feedback (keeping in mind this visit was within their first days of opening) would be that they need someone to "man" the host/hostess desk. The waitresses were very friendly but I could see it was crazy in there and they sat another group before mine who came in after us, and who didn't have their full party there while my whole party was there. It was an unintentional error so, forgivable, but it was due to the staff not being able to keep track of the incoming crowds as they were so busy. Arrived on a Friday evening, 7ish. There was a line of ppl waiting for tables and seats. Good sign that the food is delicious. Love the anime posters and customized posters about its noodles, which is part if its food menu adorning all the walls. 10 to 15 minutes later, we got seated at a high table in the back. I prefer the regular height tables, but those weren't vacant. We ordered Ebi Potato (tiny shrimp wrapped in shredded potato), shrimp teriyaki (platter with white rice and salad of cabbage, radishes, slices of tomato with a delicious creamy dressing) and Curry Ramen (bowl of noodles, fried tender chicken chunks, ground chicken in the bottom of the bowl, a little cabbage and 2 pcs of broccoli in a broth). I thought everything was delicious, a cut above other Japanese restaurants. Generous amount of chicken in the Curry Ramen. Curry flavor was mild and seemed lacking. I sipped every drop of broth. Also notable is the teriyaki for tossing the cooked regular-sized shrimp in. It tasted like and had a glaze consistency. It looks like a sweet and sour sauce, but with a savory-ness to it. The Ebi Potato was cooked, golden brown. Shredded potato was crispy, airy and fleshy in the center. The shrimp inside was minute and non-existent to make a contribution to this appetizer. $6 for 4 pcs. It is served with 2 dips: one mayo-based and the other seems sweet. I think it'd be better paired with a ponzu dip or vinaigrette. Complimentary hot black tea is offered, if you ask. It definitely serves iced water. 2 restrooms located in the back. Lastly, I liked that I didn't leave smelling like I've been cooking in the kitchen. Seems restaurant is well-ventilated. Food and service here is enjoyable. Enjoy patrons! read more

I had the Kara Veggie Ramen that was full of flavor and had a nice spice to it. I also ordered edamame as appetizer which was prepared well but I did not receive any spicy mayo. Come here if you are hungry! The spicy miso ramen will leave you satisfied. I always find myself asking for just a little bit more noodles but they do it right here. It's perfect and really goes with the ratio of soup and veggies. Perhaps add another slice of pork. But besides that the flavor was on point. Fried chicken was also delicious tender and crunchy. The restaurant itself was nice, I came with my wife for a date night dinner and the ambiance was very cool. We were also able to find street parking easily but I imagine it can be very difficult depending how busy it is. We are both vegetarian and came here because they have a dedicated section for vegetarian ramen which uses a vegetarian broth. We tried ordering an appetizer of gyo-za but they didn't have any left. The ramen was good, but we were honestly expecting better. The bowl was warm, I wish it was a bit hotter temperature wise. Also, I opted for tofu as an add on, it was good but way too soft. Solid ramen if you're in the neighborhood! I had this twice in a row, which is more due to my ramen craving now that the cold has officially hit. But it does attest to Tamashii being crave worthy. I had their basic Tamashii ramen for takeout, then the Miso ramen the day after. The Tamashii ramen noodles weren't my favorite, but I'm not sure if that's because I waited to eat my takeout or if the noodles were the pre-made type. The service is efficient and friendly. Family friendly but also good for a date night or with friends. The food was delicious! We started with the kani salad buns and they were fresh and tasty. The sauce on it was a spicy mayo and soy sauce mix and it was a perfect blend to start to the meal! As our main meals, I got a spicy veggie ramen and my boyfriend got the miso ramen (pork). Both were delicious. His was a little thicker and mine was spicy. I thought the spicy was a little too much and would recommend getting the plain broth for your first time. So I was reading some reviews that it was bland and tasteless compare to other places. Well.. most of their ramen uses shio (salt) broth. Taste obviously won't be as tasty as chicken, pork or even miso broth. We had the chasyu ramen and the Kara tsukemen. Chasyu was ok. Lightly roasted. Nothing spectacular. The wait is definitely longer at the LIC one because it's smaller so if you have the choice I would go to the Forest Hills one. We got the curry ramen and our server was really great about telling us exactly what was in it e.g. pork in case we didn't eat it. The noodles have the perfect texture and the broth is flavorful and very hot. The cabbage, onions and broccoli add a great crunch. I have been here more times than you can count with your hands and feet. I have been there maybe three times within two weeks once. This is one of my favorite go to ramen shops! They have a spicy kara veggie ramen that can accommodate to vegans or Muslims. This shoyu broth is so clear and delicious. I do not have any dietary restrictions and I get this almost 95% of the time. My other favorite is the Tantanmen, it's for when I want a light but creamy broth. My others friends have tried almost all of the ramens on the menu and no one has ever complained! I have tasted the Buta Kimchi-don and the pork has a flavor and texture that melts goodness into your mouth. The shrimp bun is a great appetizer, I recommend that more than the takoyaki and ebi shrimp potato which are for more distinct cravings. Okay, a bit late but hey, better late than never lol Me and my friend went to this spot that's located in Forest Hills, mind you, I haven't been to Forest Hills in ages. Straight to the food: I ordered two bowls for myself since I was pretty hungry . I ordered the Kara Hiyashi Chuka bowl, it's a summer ramen where it is serve cold. The toppings were interesting, it came with thinly sliced chashu pork, shredded scrambled eggs, cucumber, nori, tomato, ginger, sesame seeds and topped with their special soy sauce which had a nice sweetness to it. I forgot to mention that this was a brothless ramen. As many know, I love authentic ramen with a hearty broth. This bowl was an exception, it was delicious in it's own way and I encourage people to try it. The second bowl I ordered was the Tamashii Tsukemen, comes with their original dipping sauce which it was sweet and a slight tang to it. It's served with chashu pork, scallion, onion, seaweed, menma and an egg...which was a regular scrambled egg that's thinly cut up....I want my delicious hard, soft boiled egg! Overall, it was a delicious bowl and I'm glad I went outside my comfort zone and tried their tsukemen (I normally don't order tsukemen). On a scale of 1 to 5 for the ramen I had: Kara Hiyashi Chuka: 4.5 out of 5, due to it's uniqueness and how damn yummy it was! Tamashi Tsukemen: 3.75 out of 5, it's quite there but still delicious. Overall, it was a very rewarding experience trying their ramen dishes and I plan to come back to try their more traditional bowls of ramen. The noodle, by itself, is a very very very good bite and we can tell they make it FRESH!! The pork is excellently tender and good thick cut. The soup base is very light and not salty at all, but it's a little too light in our opinion haha. The Takoyaki was very good too! However, the Ika Kara-Age was meh! The dough batter was bad, barely sticked to the squid! Too doughy per my husband who loves fried squid BUT definitely not from here. I came here for the first time last week. I've been super excited that we have a ramen spot on Austin street but I never had a chance to run in. I decided to get the miso broth since that's generally my favorite at other ramen spots. Sadly, I thought this was some of the worst ramen I've ever had. There was so much cabbage in the broth to start, which was different and not good. The bamboo shoots in the bowl were putrid. I don't know if they were spoiled or what, but they were disgusting. Even the noodles had a weird taste. The worst was the broth, which I had an issue finding under all the salt they used. It was like licking a salt lick. It was inedible and I had to throw it out.
