This phrase literally translates from Italian to mean "to the tooth." It describes the texture of cooked pasta when it's tender but firm and chewy when one bites into it. Located on Center Avenue in Westwood, my colleague and I had the opportunity as first-timers at Al Dente Pasta Fresh Pasta Co. for lunch. Upon entering their casual and friendly vibe, we were greeted by the staff and had the place to ourselves in their dining area with an open kitchen. Their menu features a fantastic variety of appetizers, salads, pizzas, pastas, sandwiches, and desserts. The star of this establishment has to be the fresh homemade pasta dishes made from Caputo Semola flour imported straight from Italy, accompanying the amazing sauces, each crafted with care and creativity. We decided on their Pasta Bar--Spicy Chili Vodka Cavatelli with Chicken Cutlet and Bolognese Pappardelle. Each came with fresh focaccia bread. The food arrived, and one can taste the difference of freshness. It was absolutely delicious using the high-quality ingredients. The portion was just right as well as the price. Our server, Hunter, was friendly and accommodating. We even had a chance to make small talk with the owner; Joe connected next door at the sister location, Luciano's, for pizza and garlic knots. It's Old World charm with a modern twist, and we can't wait for a repeat performance.

The pasta is made fresh daily and also sold by the pound for take home meals. Casual but perfect for a date night or solo dining. In the summertime they have picnic tables outside to dine at as well. The focaccia bread is made in house daily and is served warm with a drizzle of good olive oil and flakey salt. Don't ever skip out on the bread!! The cucumber salad was inspiring. The cucumbers were served on a bed of hazelnut fava bean hummus??? Excuse me? My mouth is still watering from looking at the photos. It was so fresh and tangy. The pasta dish was warm, filling and cozy. It settled in all the right places and makes you feel warm and fuzzy. The chocolate chip cookies are also a must!! I'm not sure if they use cake flour or something because the cookies are crunchy on the edges but think and chewy once warmed up. They are not skimping on the chocolate inside either! This small and incredible pasta shop serves up delicious home made and hand made pasta dishes that rotate seasonally from their simple yet powerful menu. When you eat a bowl of pasta at DPNB you eat a bowl of love. Not only do they make everything themselves but they also source locally from local farmers and support so many other great local businesses. I love this pasta shop so much and can't wait to be back in Nyack to enjoy another one of their incredible pasta dishes. Be sure to try their piccolo negroni (absolutely incredible!) or if you're feeling something more light go for the not a spritz, you will not regret hehe. First come first serve, no reservations, 14 quaint seats, come with a small group or just on a date :)

The small raviolis just can't swim in my pot! The older gentleman behind the counter asks if he can help me. I ask him to open the box and actually show me the larger ravioli. Oh baby, they are large and in charge. Why I walked out with one box still boggles my mind because I should have bought 3. I'm not in the area too often and the extra boxes would have carried me through the winter. I hand over my cash and the gentleman says God Bless to me. I'm not getting blessings on Long Island! The pillowy little pockets didn't even need sauce (I ate one plain like a toddler). Nothing against the sauce: it's a celebration of the tomato, bright and smooth. I also got to watch the master (Bivona) at work. It was like what I imagine witnessing the efforts of a Renaissance sculptor to be like. It was also fun and educational watching him guide customers and give them a tour of the day's pasta shapes. For me, one of the best marks of quality is when you can look at the pasta and see the texture. You know that means your sauce is going to cover all that surface area, that will adhere brilliantly to your noods. The Cannookie (chocolate chip cookies sandwiching cannoli cream) was way more delicious than it had any right to be. I'm not going to ever have one again on principle because it sounds like a racial slur for Canadians, but that doesn't change the fact that it was outstanding.
