I definitely passed on the Rocky Mountain oysters... but enjoyed everything else!!! This restaurant is literally in an old fort, basically a stones throw from red rocks! It is higher end and old fashioned in a good way. My wonderful bestie got a table reservation for Denver restaurant week. I arrived at 701 and everyone was already seated for our 7 pm rez. The waitress was a national treasure lol.. she was so nice and helpful and patient! The restaurant week deal was excellent! A salad, steak with a side (I chose their Mac n cheese- get it!!!), and dessert for $35. The steak also came with a little cooked bird.. quail? Cornish hen? I have no idea. Everything was perfect, although I didn't touch the bird too much because it's not a super familiar food to me and I was too busy enjoying everything else! I got the cocktail that says there's a limit of two because you all know I'm a lush. Yummy!!! A man came around with animal pelts and told old Wild West stories and facts. It has been some time since we have been there to eat. Now I remember why it food is still not good. My wife ordered steak and lobster that they forgot to cook. We sent it back I kept my plate thinking they would rush hers back, But to my surprise no it was 25 minutes for it to come back. It was cooked but mine was cold by then. You would think someone would have come by to check how it was but no one came. But I guess when you are just a place people go for special occasions you should expect half ass food with no flavor cause they don't care. The appetizer was a can of bean dip with chips. Sounded more special than that on the menu. The lobster was not cooked and the potatoes were salty the steak was not very good. Just one bad experience. You would think the wait staff would have said something to the manager. when the check came you know they were asking for a 20% tip and 3% for the kitchen for the shit food. Will never go back. They will not care about just one out of a million people in the area. If you read the reviews a lot of food is okay or nothing special apologize and ask to come give them another chance. But do nothing for you to make it right at the time. But come back and give us more money but we don't have time for you while you are here. What a great meal! The food was absolutely amazing - melt in your mouth good. We had the peanut butter stuffed jalapenos as an appetizer. Surprisingly good and unexpected. Also had the pumpkin spice creme brulee for dessert and it was so delicious!! Being a Colorado native, I've always thought of The Fort as a prestigious restaurant. After about 20 years since my last visit, I was excited to take my family of 5 to experience what The Fort has to offer. I'm so sad to say that the food was simply nothing special, unless you are looking for a few exotic game choices such as snake, rabbit, quail, etc. We tried many items and unfortunately we were just not impressed. Our bill (expectedly) was just over $400. We are accustomed to paying higher prices for a nice experience and meal, but again, it was simply not worth it. We lucked out yesterday - it was the first day of the yearly Native American market - such talented artisans, music performances and beautiful performers. The views are beautiful. That's about it. Let me start off by stating that I am Argentinean. I know my meats. The pricing for the quality of food is absurd. Ordered a low quality ribeye cooked at medium and it came out medium-well. Maybe it rested too long at the window. Also, it was the rib eye was not dry aged. I am a fan of the art and I, myself dry age and salt cure my meats. The menu simply does not make sense. Steakhouse with guac and chips? I did enjoy the bone marrow appetizer. The service was nothing special, our server seemed to avoid eye contact and almost looked right through us when speaking. Also, there was something distasteful about the whole set up. White Americans playing Native American music in a state with a long history of massacring innocent native lives. This review won't matter, the place is packed. We had stuff mushrooms for an appetizer and several sides and everything was just really, really good. While it has been a couple of years, we have eaten here numerous times. This time was garbage. I get the ambiance they are going for with the tables in the cantina, however they're really uncomfortable and no room for your feet at all. You have to straddle the massive table column for a really small table top. Service in said cantina was really poor, we were 5 feet away from the bartender but I had to ask the food runner for another drink. When the food came it was cold and did not have the vegetable the bartender said it was coming with. Mentioned to the bartender food was cold and all he said was okay, nothing else other than I'll get the bill. After paying the bill I went to the host stand to ask for the manager, not for anything free but to mention how bad it was. Not only did he just walk past us like we didn't exist after she said we wanted to talk to him, when she did get his attention his reply was a snotty "what?" I mentioned what was wrong and he had zero remorse or sincerity in his apology. Whomever owns this restaurant should be ashamed this is what represents them. I used to recommend this restaurant but now I plan to tell everyone to stay away from this toxic hell hole. It's a shame the tourists who likely keep it going don't know any better. So this was a great atmosphere, a neat menu, but just meh on the food side. Appetizers: Bison tongue, Rocky Mountain Oysters, Bison Bone Marrow. Bison tongue had a livery taste and texture. Topped with a white horseradish, these were OK. Rocky Mountain Oysters: Had to order these. The small ones were OK, the bigger ones made me a little queasy. Just deep fried stuff, go for the novelty but these weren't any good. Bone Marrow: Known as "Prairie Butter" this was really good. A very rich marrow spread on crackers, with a dash of tobacco. Great! Meal: The Game Plate with extra Quail Bison Medallion served medium - This was tough, chewy, and lacking any flavor. Very disappointing. I've been wanting to visit the Fort for so long now. Finally did and guess what? It's an awesome establishment where you are valued as a customer. They want your business and they will show you that they do. I'm so predictable. If a cowboy steak is on the menu I don't see anything else. Anticipation builds up based on how the description is of my favored cut. This one is special. It's Kit Carson's 16 oz Buffalo Ribeye. At this particular day the market value was $59. With a side of their creamy mashed potatoes and seasonal veggies which was at that time was green beans. This was the best looking charred meat ever! It was perfect! This type of meat should never be ordered rare. It's too gamy. Medium and maybe medium rare. If cooked rare...like one movie dialogue goes..." there will be blood " and I mean you will taste blood. It will feel taste like you're eating your own flesh. Well, at least that's how I imagine it will taste. But the folks here know what to do. They're the experts. So. Did I imbibe? Nope! Obviously there is a very good reason why not. Duh. But we did order their Chocolate Chile Bourbon Cake. Don't be afraid. It's not spicy. It's not spiked with Bourbon so you can't taste or get boozy with it. It's just really, really good! Now the view. I'm going back summer or when it's finally warm. For me, the appetizers looked far more appealing than the main courses. We ordered the bone marrow, rocky mountain oysters, and Bison tongue. And I when I say I was overwhelmed with joy, is an understatement. The bone marrow was so rich and buttery, that I didn't need Chapstick for a couple weeks. But do order this dish and you will leave with a big smile on your face. My only complaint is that I wish it was served with a thicker bread. The bread that came with the marrow, was thin and crispy. I felt it was too hard and didn't really compliment the marrow. The rocky mountain oysters was probably the best I have ever had in Colorado. It was soft in the inside, but crispy outside. The bison tongue was my least favorite out of the 3. But this was still delicious dish. There just wasn't enough of it(3 pieces on top of bread), and the slices were small. My roommate and I split an entrée. We ordered the Game Plate. I can see why this is their most popular dish because you have 3 of the best slices of meats; The Quail, The Elk, and the Bison. The Fort sure knows how to treat their meats! All 3 were delicious! But I think the best experience we had was our server. Took my partner here on a little date before he moves back to our home state. Between just two people, if you want the whole experience, expect to spend $200+. That was some drinks, two appetizers, two entrees, and a dessert to go. Everything was amazing. The atmosphere itself is worth going for. Immediately you're greeted by an amazing view of Morrison in about every direction and authentic feeling interior. The food is traditionally made with varieties of meat to try (vegetarian varieties too!) from rattle snake to bison to salmon. Everything is prepared with love and talent. Perfect meat temperature for my steak and my partner's buffalo. Well seasoned and prime meat. We also got the Rocky Mountain Oysters and bone marrow to try some new things before we left the west. Both were actually really good. HIGHLY recommend the bone marrow and tried Julia Childs' way! Last night we dined at The Fort Restaurant in Morrison, CO about 20+ miles outside of Denver, near the Red Rocks Amphitheater. This was to be a belated 30th birthday celebration for my daughter's boyfriend and a thank you to them both for helping us do some moving. I wanted this to be a special celebration for his birthday since he is an avid bow hunter & fisherman, and I thought this would be the perfect place to go since he had never been before. My husband and I have dined here in the past with out-of-town guests on several occasions. Being able to enjoy the Denver city view in the distance is unique, the building itself is iconic and the game dishes aren't your average fare. I had made reservations the week prior explaining in the notes section on Open Table that "we'd love to have a view table of Denver" and gave them the details of the nature of the celebration that night and so on. Traffic getting to the restaurant was extremely light for my husband and I traveling from the south and we were about 20 minutes early for our 7 pm reservation. Chris at the front desk asked if we'd like to go ahead and be seated. "Sure," we said, "Why not." We were ushered by a hostess to a snug table for four located in a corner located in the North Patio dining area. Perfect I thought, until I looked up after sitting down. Parked outside in front of the outdoor patio areas was a huge event truck completely blocking the Denver city lights view. Familiar with these trucks from taking our youngest daughter to perform at various music venues (a singer/songwriter in Nashville now) I knew that they were either setting up for some type of festival, concert, or a wedding or they were breaking down one of those events. Now granted, I know that setup for these events can take time (we dined on a Wednesday night) but this truck was just sitting there blocking everyone's view. So after about 20 minutes I politely asked both our server Ruth & her assistant Alex if it was possible to move the vehicle since nothing had been loaded in or taken out of it for the time we were there. The truck was just sitting there. Ruth said she would check. Our kids were running a bit late (traffic for them) so my husband & I ordered drinks while we waited. It was an Old Fashioned for me ($14) & margaritas ($13x2) for the husband which he enjoyed. My drink was a bit heavy on the bitters so I asked for a few extra cherries which made my drink much more enjoyable. When our kids arrived, we promptly ordered a full order of the Historian's Platter for four people ($44) & drinks for them (2 x $7 O'Dells & 2 x $16 Bears Blood). The Historian's Platter is a sample platter of different appetizers on The Fort menu (you can look that up on their menu) & we happily consumed everything. The meats, the dipping sauces, the famous guacamole - it was all delicious! We ordered dinner while finishing our appetizers. Our salad course was great & received as ordered; our dinners followed promptly thereafter. My husband had the Gonzales Steak with Fort potatoes ($58) & the birthday guy the Santa Fe Trail Game with mashed potatoes ($54). My daughter & I ordered the Mountains Meet the Sea (steak & lobster tail) ($65 x 2), she with Fort potatoes; I with the wild rice blend. The kids also ordered a side of the President Jefferson's Mac N' Cheese ($12), an iconic side dish at The Fort. All the steaks were cooked to order (medium rare for everyone) but they all lacked seasoning (except for the Gonzales which is stuffed & covered in green chile). The other negatives would be that the lobster tails were overcooked, dry & very small for the price of this dish. In general, our dinners were weak on seasoning for our taste. Just as we were finishing our food, low & behold, someone went outside to move the truck. We were so excited that we were going to get to see the city view! Not so. Once the truck was moved the view was still blocked by a huge event tent that we couldn't see from our table. It was a major bummer for us all. The kids did go out onto the patio just prior to us leaving the restaurant so they could at least take in the view for themselves and snap some pictures. I will tell you that this place has a 4-dollar sign price tag & for good reason (our bill was $490+ with our server tip & the kitchen staff tip of 3% that was included). The kitchen staff tip isn't an issue for me since I was born & grew up in Europe where 10 to 18% is a standard tip on a bill which is then divided up between the kitchen & serving staff accordingly. If you wanted to tip more than what's included on the bill for awesome service you can. I don't recall this place being this pricey from previous visits, but obviously that's changed. The Fort is still after all considered to be fine dining. I'm not saying we will never come back. But if we did return it would be with reservations for the outdoor patio on a warmer night & we'd just do appetizers - no dinners. A solid (3) for a rating from us. read more

Our server Ruth was so informative, full of facts about the restaurant and recommendations of dishes that she enjoyed. She has worked there for 15 years and was a joy to have as our server. We were also greeted by the in house musical performer who was so kind and talented. The drinks were tasty and we loved the Prime Rib and Elk Steak. You must get the Green Chile Mac N Cheese and I also loved the egg nog Creme Brulee. It was lovely to learn the history for this building and enjoy a delicious meal.
