    They had a stand at the Issaquah Farmer's Market, and there was a huge line. I thought, they must be good, but we walked past and continued exploring. We came back around to grab food nearby, so I decided to get in line and try out the place. We got the Rhubarb Tart, Raspberry Pistachio Suisse, Hazelnut Croissant, and Raspberry Croissant. Everything was good, but I really loved the Raspberry Croissant. I want to come back for another one of those. Staff working the stand were wonderful and super friendly.

    One of the most amazing pastry I have ever tasted a Kouign amann. It is best when warm, but just as delicious later. As we had to buy a box to go. It is like caramelized croissant but rolled like a cinnamon bun! You must try!

    I've been meaning to go to French Guys Bakery and I'm glad I finally went: it honestly reminded me of the cafés in Paris. The prices are fair for the amazing quality, and everything is fresh and looks beautiful. I got the almond croissant, and it was super flaky with a generous amount of almonds while not being overly sweet. The inside is small but cozy (it's literally warm from the ovens), and the cottage-style exterior adds to the charm. The staff was friendly, and while seating is limited, it's a sweet little spot to sit and enjoy a pastry.

    Delicious pastries, unique loft style seating, and friendly staff. These are just some of the reasons why I love stopping by this bakery on my way to the office. They have both indoor and outdoor seating and is a wonderful vibe especially during spring and summer. This bakery is located on East Roy in the Capitol Hill area and opens at 7AM. They also have a 2nd location in University Village that recently open this past Spring. This bakery serves up delicious pastries, breads, sandwiches, and desserts. I've tried numerous pastries from their line up. My favorites are their framboise croissant, chocolate hazelnut croissant, pain au chocolate, french toast, madeleines, sablés, and canelés. I've also tried their warmed up caprese sandwich and it did not disappoint. They sometimes sell Paysan Breton French butter for $9. I took one home along with one of their fresh baguettes. Aside of pastries they also have a coffees and teas. The French Guys is worth the carb and sugar intake. Great service as well.

    Delicious pastries in a cute, small shop! I got a Cannelé and a ham and bechamel croissant, which were both delicious! The croissant had creamy bechamel layered inside along with perfectly crispy cheese on top, and the pastry itself was perfectly flaky. The Cannelé was a perfect small sweet bite as well! The service was good, and the line was pretty quick on a Thursday morning. Would love to come back next time I am in the area!

    I was shopping at the U District farmer's market, and I couldn't resist the beautiful display of carbs at The French Guys stall. Kouign Amann ($6) - Hmm, these looked a bit suspicious and after examining them more closely, I'd say these particular pastries are a cross between a cinnamon roll and a croissant, more akin to a morning bun than a typical kouign amann. The pastry has very loosely rolled croissant dough which is doused in a sticky, stretchy caramel syrup. When I say sticky, I mean exceptionally sticky, even sticking to and tearing the wax covered paper bag it was placed in. The exterior areas not covered by the caramel have a bit of a dry, hard crisp. I don't believe the dough is laminated with sugar at all. Is this pastry tasty? Certainly. But is it a kouign amann? Emphatically no. (3/5) Almost Croissant ($6) - Tons of smooth almond frangipane fill the inside of the croisannt, giving a fragrant almond flavor. The exterior has a good caramelized flavor but there is essentially no crust and the flakiness is lacking. I wonder how many hours ago this pastry was baked. It does not feel fresh and instead seems to have some moisture buildup. It's a very sweet treat. (3/5) Baguette ($4) - The crust of this baguette is a bit weaker and soft, while the inside has an okay chew. There are larger holes so it's relatively airy. Flavor is mostly of the flour - the ferment time seems to be a little less than required to give a really complex flavor. It's just not that developed and kind of wan. It's better than a typical grocery store baguette, but really pales in comparison to many of the artisan bakeries in Seattle. (3/5) To be fair, everything was purchased at the farmers market, so the bread/pastries could have been stored in plastic containers or something to be shipped out from the baking facility. That might explain the issues with all of the crusts. I'll have to visit one of their actual bakeries and try to get fresh pastries.

    I got a raspberry croissant and it was delicious! It was filled with plenty of jam & the stripes of red are so pretty! Service is amazing, it was my first time here so I asked about when these were made and the staff were super attentive & patient.

    I didn't think this place was as bad as everyone made it out to be. I really enjoy the vibes, decor, and quiet upstairs dining. If you're looking for a new place to work in U Village, this is the best. But the coffee is a bit pricey, and I've had it served lukewarm a few times. The pastries look delicious but every one I tried was just ok and tasted maybe a couple days old. Also, all of the workers act like they're tired of dealing with customers. Now I understand why many don't think it's that great. It's not as prestigious as it tries to be, but it's still a decent spot for a snack or morning breakfast.

    Stopped at The French Guys when leaving Seattle to have some great pastries for our road trip home - and this was definitely one of the main highlights of our Seattle trip. The pastries were all incredible and I recommend all of them. I'll be thinking of these pastries for a very long time.

    Cute coffee shop with 1.5 levels of indoor seating and a couple tables outside. Limited pastry items are mostly sweet. Try the French toast!

    The worst kouign amann ever: a gooey-sweet snail leaking greasy rancid-tasting butter. Yuck. Also, the tuna sandwich was just disappointing.

Through several visits: Baguette, Large ($7.95) - Great baguette with bubbling golden exterior complete with the perfectly baked crust even after waiting 3 hours before cutting in and eating. The interior has the perfect moisture level and is delightfully soft and chewy. The taste overall has a deep developed flavor. This is a great baguette. The only problem - the price. I can find ones for half the price that are maybe 80% as good as this one. (5/5) Seasonal Biscuit ($4.50) - This biscuit definitely isn't Southern-style. It's more of a drop biscuit, combining a relatively soft and tender interior with a nice exterior crust, without any flakiness or layering. The interior is almost cake-like in texture and crumb, and is plenty moist. They add plenty of fresh black pepper inside. It's distributed very evenly, giving a peppery bite with every mouthful. Parmesan is added to the top of the biscuit before baking, giving plenty of umami and richness but only on the upper layer. (4/5) Green Vinaigrette Cafeteria Style Pizza ($6.25) - The pizza is kept under a warming lamp, so it starts getting a little dried out after I assume a couple of hours spent there. I do love the base though - it's focaccia-like giving a really crunchy dark golden brown crust underneath, which supports the toppings. The pizza slice has lots of structural integrity and doesn't flop over. There's a base of fragrant concentrated tomato paste-like flavor which is topped with a very even layer of cheese. Since it's warmed rather than freshly baked, the cheese starts congealing a bit. The cheese is peppered with parsley, garlic, and a bunch of mustard seeds, giving a special zing. The toppings go all the way to the sides of the pie, making it great for people who dislike crust. Even though it's cafeteria style pizza that's kept under heat lamps, I quite liked it. I wonder if I can get a really fresh slice if I get there right at 11AM when lunch starts. (5/5) Chocolate Croissant ($6.10) - Great lamination with a very aesthetic honeycomb pattern. Baked on the harder side, causing fantastic crispy flaky layers to flake off, but also creating a darker golden brown character that is on the verge of bitterness. Nicely buttery soft and chewy interior. Chocolate is a darker variety, probably somewhere around 70%, so it has a pleasing balanced sweetness and chocolate flavor. It's not typical baton, instead seems to be a section from a bar. Still warm and melty even through I didn't eat the croissant until ~30 minutes after purchasing. When cooled down further, some red fruity notes start appearing, so this seems to be be pretty high quality. (5/5) White Sourdough ($12.60) - Now this is a loaf of bread. Superb crust, probably 2 or 3 times as thick compared to competitors, creating a supreme crusty bite with a chew approaching a hard crunch with almost caramelized molasses notes on the bottom. The interior is moist and tender with a pleasing slight sourdough tang. It's a superb piece of craftsmanship. (5/5) Kouign Amann ($5.80) - This is another heavier bake with some acridity development on the top surface. Unlike many other bakeries where the kouign amann is basically a differently shaped croissant with sugar glaze, Sea Wolf's version feels more in line with tradition. The crumb is denser and richer, more like brioche. There's interesting black speckling inside which I believe is due to the inclusion of espresso powder given the mild coffee-like flavor. The crust is again baked hard, but it's lighter and not as flaky as the croissant. They sprinkle just a bit of salt on top of a very light caramelized sugar glaze. It's not very sweet and I didn't find it too salty unlike some other reviewers. (5/5) Plain Focaccia Slice ($4.80) - Good quality olive oil, some salt sprinkled on top to boost the flavors. Light and airy interior, but the exterior is a little wan, being more light golden brown and lacking some good crusty crisp especially on the fried bottom. Quite oily. (4/5) Sea Wolf gives out free sourdough starter, which can be requested from the cashier. Since picking it up several weeks ago, I've gone through several feed/bake cycles for making sourdough focaccia. I've visited Sea Wolf 3 or 4 times in the last month. That's a testament to how high quality their pastries and breads are. I think the only thing stopping me from visiting more is thanks to the starter I got from them fanning my baking instincts. I bake so much now that I don't have any need to buy their bread! Note: Sea Wolf charges a 3% credit card fee. This is not noted on their menu - it only appears in the POS right before paying. The tofu sandwich was pre made and served cold, and the bottom piece of bread was starting to fall apart because it was so soggy. The breads were all ok but overpriced, especially the baguette; $8 is crazy, especially when other bakeries nearby sell better ones for $3. The service was quick (4/5).

The soft serve was okay, but not as creamy as I was hoping for, and it melted pretty quickly. If you decide to add a syrup flavor, I'd recommend asking for only a small amount. Mine came absolutely drowning in syrup, and honestly, the flavor tasted pretty artificial and overpowering.
