It smells so wonderful and warm when you enter and it's really a feast for your eyes. Everything looks so delicious and it's hard to choose. The staff was ver patient with me. My "go to" is the most famous twice baked almond croissant. On this visit ordered the "go to" , blueberry ginger scone, ratatouille sandwich, turkey havarti sandwich, banana bread, and some Americanos to go. I got the twice baked chocolate croissant for 7.25! Might seem pricey but the pastry was genuinely so big that I think the price was actually a good deal. The croissant was on the crispier side, especially with the almond crumble on top it was a bit too cripsy for me, but I tend to like soft and flakey pastries so it's probably a matter of taste. There was a TON of almond filling in the middle. I enjoyed the taste and texture but it was too much filling for me personally. I would have liked more croissant in my croissant, so to say haha. Bakery Nouveau has exploded in popularity over the years, with locations in West Seattle, Cap Hill, and Burien on account of their plethora of creative sweet treats and artisanal coffee concoctions. It's so popular that you might even run into your ex there on a Saturday stroll. If you scroll through the pics here, you'll find some truly genius (or even odd?) baked goods that they're handing out daily. I even caught a glimpse of some sort of pistachio flavored shoe, not sure who gave the green light on that one. If you're looking for a decadent dessert, then you've found the right spot. You may have to wait in line if you come in the morning, but the sights and sounds of Cap Hill will keep you entertained while you're day dreaming about your Kouign Amann. I would advise coming here with a plan, otherwise you may fall victim to a case of what I call Bakery Glass Indecision. The moment of panic that sets in when there is an extensive array of beautiful cakes in front of you, and a hangry group of patrons behind you. However, the good folks at Nouveau are more than willing to help you find that special something to take home. I elected to go with the carrot cake, which has always been a personal favorite of mine. As you can see from the picture, she is truly a goddess. The cake has the perfect texture in all of the right places, but was just a touuuuch too sweet for me. I love Bakery Nouveau. I got their twice baked almond croissant and their twice baked almond chocolate croissant. I usually don't like twice baked croissants since either they're baked too much to a crisp or soaked in too much syrup to make a soggy, sad mess, but Bakery Nouevau threads the needle every time to make one of the best, delicious pastries in the Seattle metro area. Both of these croissants are capped with a generous amount of powdered sugar on top of slivered almonds. The slivered almonds are glued on the croissant with almond cream. Each croissant is split and filled with more almond cream and then dipped in syrup. Instead of a butter croissant, the chocolate almond croissant has a pain au chocolat as its base. The topping has an additional baton of chocolate atop of it as well. These pastries are crisp, flaky, and not laden down with soggy syrup. They're on the sweeter side, so be sure to pair it with some black coffee! Ordering was quick- enter the store and someone greets you as you meander down alongside the cases picking out your treats. Bakery Nouveau allegedly has the best almond croissant in the city so I was super excited to finally come and try this out. I was planning to eat it in store, but the bakery actually does not have any seating. All the sandwiches and pastries in the casing looked so good! We ended up getting the almond croissant and the German chocolate cake. Here is where it goes downhill.... I asked for my croissant warmed up, and it came out so crunchy. The flakiness and airiness of a croissant is completely gone. I'm not sure if they heated it up for too long or if something went wrong during the process? I also drove 5 minutes home but I don't think that short of a time would've impacted the croissant. But I would not suggest getting your croissant heated up. The German chocolate cake is very rich and dark and the outer casing with coconut is pretty good. I also got a 12 oz latte. Base price is $5 which is not bad nowadays. I opted for soymilk and vanilla syrup which added $2 extra to my drink. I was also standing and waiting for my drink while the workers were just chit chatting for a good minute while my latte was sitting in its cup waiting for ice. All in all, maybe I have a one-off experience, but it did not live up to its hype for me. Zero stars. I can't write a review about the food or pastries because I didn't get any after being treated with condescension by the guys behind the counter. "Hi how's it going" was returned with...nothing. It was my first time there so I was asking the usual questions: and was told curtly by the prick behind the counter,' the pastries you can order there.' Ok...I proceeded to order some quiches then moved on and saw the ham croissant with brisket, asked for it and was met with two guys with stone faces as if they didn't know what I was saying, I was pretty peeved at this point, I accept that Seattle is the capitol of passive aggressive microaggression, but I was just not in the mood. I told the guy how I felt and instead of saying I'm sorry or something similarly customer-friendly "ok, I'll get someone else to help you" again very matter-of-fact, curt and the other guy also turned out to have a similar attitude. It was not the just the attitude, it was their inability to simply explain how ordering worked--it can't be that complicated! I'd had enough. I walked out never wanting to come back to this place which is a shame because they lost a customer for life. This doesn't affect the gig workers behind the counter because they don't own the place, and they will likely not be there in a month or two given the work ethic these days but I hope the owner reads this and gives a basic lesson on customer service to their employees. It doesn't matter how good your pastries are but if your employees treat people with disrespect you are the one losing money. After ordering 5 dessert slices to go and tipping 15% for what was a 2 minute transaction I get to my car only to realize they missed an entire slice of cake. We ended up getting a California Club and a BLT for lunch. I'm pretty sure that the California Club was the best sandwich I've ever had. For desert we got a piece of carrot cake and a lemon meringue tart. The plan was to split them..but once I had my half of the lemon meringue tart, I had to go back to take just one more bite. Came here for the first time on a Wednesday morning and got 3 items for almost $32. The junction croissant was good, pretty filling for a pastry. It had egg, cheese, thick bacon, and bechamel sauce. Not super flavorful though. Would maybe get again. The ham and cheese baguette was my absolute fav. So simple yet so delicious. The baguette was obviously the star. As a practicing Muslim, I choose not to consume any food/drink products that include alcohol and I recently found out the twice and thrice baked almond croissants are dipped in a liquor. I'm very sad about this, but I will continue to support the bakery and hope one day they come up with a recipe w/o alcohol! This is by far my favorite bakery in Seattle for French baked goods. I love the twice baked almond croissant and the consistency of the filling is buttery with the right type of substance. I also really enjoy the flakiness and crunch of the croissant. Delicious. I've never had fugasse before Bakery Nouveu and ate a whole one every time I bought it. For me, the trick is to eat it within the hour as I noticed that the dough can change consistency. There is some oil in the dough which is lovely and it balances well with the olives that are used. Like pizza, a 4 hour fugasse does not taste the same nor does reheating it do any justice. This is just my opinion. The macaroons, Kouign Amann, and specialty tarts are outstanding. I originally visited Bakery Nouveau a bit over a year ago on a visit to Seattle. I found it to serve stellar pastries, but the main one I wanted, the Kouign Amann, wasn't in stock. Per the employee, they didn't meet quality standards and couldn't be sold to customers that day. Since I moved to Seattle, I haven't had a chance to visit again until recently. This was at 11:30 on a Saturday and there was no line at all. Surprising, given that I waited over 30 minutes in line the previous time on a random weekday morning! And this time they had the Kouign Amann! I also went ahead and placed a preorder for Paczki, Bakery Nouveau being one of the few places in Seattle for me to continue the Paczki Day tradition I picked up from Detroit. Kouign Amann ($6) - Nice flakiness with a good crust on the exterior. There's a good sugar hardened crust, especially on the bottom, but it doesn't make the pastry overly sweet. The interior isn't very sweet and instead is quite buttery and pretty much identical in flavor to a croissant. It certainly tastes good and has good mouthfeel but I think this is most likely just the croissant dough mixed with more sugar. Then again, I'm no expert! (4/5) Garlic Parmesan Focaccia ($5.50) - Woah, this is a massive piece of bread, being around 8 in diameter by 3 in tall. I haven't seen this size of focaccia around Seattle! Usually bakeries only give out small rectangular slices that cost at least 50% more than what Bakery Nouveau churns out. This really can't be beat for value. But... is this really a focaccia at all? The crust is golden brown throughout, but not dark enough to develop a harder crunchy crust and the exterior is somewhat oily. They are very generous with the parmesan, allowing the top to develop a spectacular caramelized cheese crust. There are soft and creamy whole garlic cloves baked inside. The interior... is not focaccia. It's more similar to a pullman loaf - dense, doughy and chewy with very small air pockets, nothing like the airy crumb of most other focaccia. No wonder it only cost $5.50 for the loaf. Still, I think it's worth it, given that it's plenty tasty. (4/5) Twice Baked Chocolate Croissant ($6.50) - I normally prefer more traditional almond croissant/pain au chocolat, but when I want a decadent almond or chocolate treat, I go to Bakery Nouveau. This croissant melds the best of both the almond and the chocolate. There's a very generous layer of almond frangipane spread in the center and another layer spread on top. When I say generous I mean it - both layers are like a half inch, 3 or 4 times as much as most bakeries put in their croissants. The amount of frangipage crushes the laminated croissant layers so they are no longer flaky or airy and instead pressed together into sweet bliss, being dipped in simple syrup. Since the croissant is double baked, the exterior exhibits a very well baked crunch, with all the butter in the croissant completely caramelizing and giving a rich flavor. There's some chocolate melted inside the croissant to one side and a bar on top - dark chocolate, sweet, rich, and slightly bitter. (5/5) Paczki ($5) - I preordered a box of four for Paczki Day this year. Preorders are chefs choice. I was a bit afraid that I would receive a package of the traditional flavors (prune bleh), but I was pleasantly surprised to open the box and find four unique and utterly delicious looking paczki. First - raspberry, filled with a thick raspberry jam studded with seeds, sweet yet tangy, and topped with a raspberry icing, more tart than the interior, made with real fruit instead of flavorings. Second - cut in half with cream, very fluffy and lightly sweetened, piped inside and studded with cut strawberries. The strawberries lend the cream a nice fragrance. Third - cut in half with the same cream as above piped in. And finally - a Boston Cream paczki, cut in half and filled with a dollop of eggy pastry cream in the center and a ring of the lighter cream around it, with a top of slightly sweetened, rich chocolate ganache. All four types are not too sweet and easy to eat. The base dough used is indeed richer than donut dough, making this more similar to an authentic paczki than a jelly donut. I do have to say that typically eating a single paczki from a bakery in Detroit fills me up, but due to the lighter fillings and being less sweet, I could down more than one of these. (5/5) The paczki are seriously good. Are they the most authentic ones? No, but I prefer the newer interpretations anyways. I still give the nod to New Palace Bakery for my top choice, but Bakery Nouveau would give a lot of bakeries in Detroit a run for their money. Bakery Nouveau's other products are also very solid, albeit not the most traditional. I would definitely revisit anytime I'm looking for a sweet pastry. read more

The tanginess from the apricots combined with the sweetness from the pistachio almond paste thing is such an amazing combo! Pretty creative to put pistachio and apricots together. It's soooo good. Other bakeries in California have followed suit and make them too now, but it was years ago that this bakery introduced to this pastry from Brittany. As I said, they make it best. Until today. I dunno what happened but that was the worst kouign amann I've ever had from Bakery Nouveau. I was in the branch nearby in Tukwila a few weeks ago and I had the same and it was the same - good. Today, it was made differently and I don't know how to describe it except it didn't taste the same and it felt like I ate flaky pastry with no taste. I am quite disappointed and worried that the high standard I am so used to getting from this bakery is changing for the worse. I hope not. I always tell everyone in California that the best non-frou frou bakeries are in my hometown of Seattle. Bakery Nouveau management: I hope this was a one off. And maybe it was just the Capitol Hill store one off. But please don't ever change. Fix this if this is a trend. I want you to always be the same and consistent in the quality of what you sell. I would hate to not have my favorite bakery to come to when I visit my hometown. read more

The spinach and cheese croissant was highly memorable and I will be dreaming about it for a long time. I will definitely be back for more of those. Very friendly and speedy. There's not anywhere to sit at the moment but it's spacious and well lit. You can also take it outside to the park or to go. read more
