We finally made it to The Meat Temple and it was divine! It was really tough to decide amongst the various amazing looking offerings, but I'm a sucker for steak tartare so I went with that. We also got a pickle plate and my husband went for the smoked beef sandwich with the crushed potatoes. First off, the pickle plate was nothing short of sublime. I mean... it had foraged fiddlehead ferns! Everything on it had a distinct, perfectly seasoned taste. The kimchee was better than my Korean buddy's mother's, which is saying a lot. The cauliflower retained the actual flavor of cauliflower... for $8 I was very impressed. The fiddleheads were amazing in particular! So, the steak tartare. It was LEGIT. The best I've had, and that is saying a lot. It had that unique egg yolk, which was infused with the tiniest hint of... brine? And the capers. Yet, none of that overwhelmed the delicate taste of the meat. It was still subtle, light, and honestly perfect. Even the crostini- just lightly buttered or oiled. Perfect portion size too. The crushed potatoes were mysteriously delicious. I typically don't love potatoes. But these had this intense potato flavor and creamy interior texture that reminded me of papas criollas. The crust (menu says sauerkraut?!) was indescribable umami/fermented deliciousness- really you just need to get them. They're not heavily fatty at all, the creaminess is all the potato itself. If you're not gonna be in Medellin anytime soon, these are the closest you'll get to papas criollas this side of the Andes. The smoked beef sandwich was also damn good- perfect seasoning just like everything we tasted. Just enough fat to be rich and decadent, not so much it got to be too much. We got a bunch of tasty tidbits to go also. Mortadella (10/10, that pistachio is the bomb), pate, etc. Everyone working there was fantastic too. Great service, everyone was friendly and enthused about the food they were giving us. It was absolutely worth the drive and the prices are really, really fair for what you get. My hubby and chose The Shambles for our anniversary dinner last week after I checked the menu online--it had "fancy" selections that I knew would appease the foodie in him but simple enough selections that would satisfy me, the picky eater with the food palate of a 7-year-old. And we were not disappointed. The restaurant is small, yet has a comfortable and welcoming atmosphere. I loved that it's 21-and-over. We sat at the bar and enjoyed top-notch service from one of the two owners. He made excellent recommendations and answered our endless questions with a genuine smile. And the food, oh my god, the food! It was heaven. My husband used to be a chef and he cooks delicious meals for me regularly, but this was hands down the best meal I have had in a long time. In addition to the tastiness of all the dishes we ordered, the courses were also timed perfectly. We finished our pork belly and bread appetizers before the asparagus special came out, and then a few minutes after we finished that the heavenly porchetta roast came out with the potato side. Other reviewers have commented on this place being pricey. I haven't been here for lunch but for dinner it is not overly pricey. It's definitely worth what we paid and then some. The Shambles is a brand new place in Seattle and we attended a soft opening. It is a warm and inviting space with a beautiful bar, wood overtones, and a long bar top crafted from a thousand-year-old tree. They specialize in butchery, charcuterie, smoked meats, sandwiches, sausages, and beer. The selection of each is exceptional. They have a bone broth soup that is soulful and flavorful, house-made sausage with IPA mustard, impressive meat and cheese boards, and wonderful playful seafood. Now if you are a vegetarian you are reading this without excitement, but fear not for the fennel, egg, fig and goat cheese sandwich is outstanding. It is hard for vegetarian sandwiches to be moist and rich, but this pulls it off. Vegans - the chickpea stew with Romanesco is for you. Add to all of this you have 32 craft taps and specialty cocktails. The beer ranges from incredible IPAs to sours to barrel aged stouts. I've been waiting for the Shambles to open for what seems forever. The man and I are huge fans of quality smoked and cured meats, and craft beer so the idea behind The Shambles is a dream come true. They've just opened, the Tuesday we went they had only been open three days and were crushin it, the place was full. By chance we ran into a old friend of ours sitting at the bar, so we snuggled up next to him and prepared to eat n drink. There was plenty on the food menu to choose from, sandwiches, steaks, charcuterie, and several interesting small plates. The beer list was phenom...the beer buyer obviously knows his stuff, as the menu was interesting and had plenty on it that we wanted to drink and had never had. Cocktail wise, Four Roses is in the well, very rad, nothing more to be said there. What did we order? Beer of course, the meat and cheese for two, bread n butter and beef jerky from the small plates menu, and the smoked chicken sandwich to share.. you can choose one side for the sandwiches, so we chose the crushed potato side. What did we think? The meat on the charcuterie was awesome, so so good, I can't say enough good things about it. It was also plentiful. The cheese was skimpy, only two slivers, and both were hard cheeses, I would have loved to see one creamy cheese. It would also be nice to know exactly what's on the plate... what type of meats are these, what type of cheeses? It advertised as coming with crackers, there weren't any, just some bread slices. We had ordered bread for $4 which we wouldn't have done if we knew bread was on the meat and cheese plate. There also weren't any pickles as advertised, but there were some really interesting pickled beets and mushrooms... maybe that's what they meant by pickles? This was $24 four two people, which is a pretty good value based on the meat alone, it just needs a little tweak here and there. Ok next item, the jerky. RAD! So so good, and a steal at $8. It was a fat plate of beef jerky goodness, it had what looked to be some grey or smoked sea salt on top which pushed it over the edge of deliciousness. I'd come back just for the jerky. Onto the sammich. The smoked chicken sandwich at $14 is what we chose to share, it sounded really good... not much is better than some smokey chicken topped with slaw. The chicken itself is very tasty, nicely smoked but not too smokey, but it was in short supply, definitely skimpy. I lifted my bread to inspect when my bite seemed lacking. Same goes for the slaw, there wasn't much, and it was missing acid imo. The bread they chose was good, not too bready, soft enough, and very yummy. When my half was done, let's just say my hands were clean, no napkin needed, which is kind of sad. It wasn't anything to wow about, but I'd try it again once they are open longer and get things down. The crushed potato side was tasty but not crushed, they were just whole potatoes. They were nicely seasoned and roasted, but the horseradish aioli was not horseradishy at all... I mentioned it to the server, and he realized we had the mushroom aioli, oopsie. That explains the greyish purple color I was wondering about! Our total bill was a respectable $91, that included the food and 4 beers and a $10 service charge (supposedly that's the tip). Minor gripes aside, The Shambles is a sweet spot, cozy atmosphere, friendly staff, amazing beer, and delicious meats. At this point it isn't wow enough that I want to drag a bunch of friends with me to show it off, but I'd stop in again for a drink and jerky at the minimum! Sweet little spot we luckily came across one weekend day. A really fantastic beer list with a nice diversity of styles. The menu is loaded with all sorts of goodness and the 2 sandwiches we had were no exception. The sides list to choose from were also high quality. We had interactions with almost the entire front of house staff and everyone was friendly and knowledgeable and truly seemed to be excited about what they were doing there. Even without a full house, we waited almost a solid 30-40 minutes between getting our drinks to be able to put in a food order-- And there were only two front-end people working. A third showed up by the time we were almost done, and even then they seemed to be stretched pretty thin. This place definitely needs a dedicated waitstaff on top of the bartenders, even during lunch hour. The other minor problem was the seating arrangement where we were. My partner and I were seated to the right of the front door, at the end of the bar. When the table behind us filled up, we were pretty much back to back with our chairs. I literally could not get around them without doing some contortion and asking them to move. This was not only a bit annoying, it could potentially be hazardous for service staff and patrons. Granted, the place is spanking new I'll be happy to update my review later, cause I'm sure we'll be back often. It's walking distance from my house. I did not realize that this restaurant has been on best new restaurants in Seattle for this past year and it sure did not disappoint. And the cheese combinations were thoughtful and well to bring out the flavors of each meat. The service was a tad slow despite having one bartender and two servers on with kitchen staff in the bach however I would certainly revisit this restaurant and I do think earned its place as one of the best new restaurants in Seattle. This is a serious meat place! Unexpected at this unassuming, super friendly, homey joint. I love the casual but knowledgeable service. Food can take a while to come out but I guess that's expected with steak. And it's so worth it. They have a board with all the available cuts that get checked off as they are sold. I can't remember the exact cuts we've had on our few visits but it was a variety and all were good - and at a variety of price points. You can spend a lot or a reasonable amount and it's all good. The meat here has a more intense meat flavor than other steakhouses - if that makes any sense. For me, a little goes a long way and I like to pair that with vegetables. The summer menu had some great salads. Would love to see more freshness on the fall menu. They have good bread too. There is usually just one dessert which tends to run out and it's a bummer! This used to be our favorite restaurant in our neighborhood until tonight. We took some friends to The Shambles for dinner and were a party of 4. It was really busy, so we waited for about 15 minutes. We were finally seated and shortly after, three other tables on either side of us were also seated. We were busy talking, but started to notice that those three other tables were all getting (and one was FINISHING) their food. We asked the waiter where our food was, and he said he'd check on it. We ordered two sandwiches, chicken wings and three sides, nothing complicated. He disappeared, but came back a few minutes later with a lame explanation and no apology. We had been noticing a plate of food sitting on the counter under what looked like a heat lamp. We kept wondering if they were the wings, but decided they must not have been because they just kept sitting there. A few minutes later, a different waitress came over to our table carrying those wings!! When we told her that they'd been sitting on the counter for at least 20 to 25 minutes, she argued with us and said, "No, they haven't. They've only been sitting there for about 15 minutes, " as if that would have been acceptable!! She was so rude!! We waited longer and finally three of our meals were brought out, but our friend's wings were taken back to the kitchen (who knows what for--to nuke them for a bit?) In the end we waited for at least 50 minutes for our food. We understand that waiters can sometimes forget to put orders in, places get busy, orders get out of order, etc., but their lack of customer service, apology and humility were so disappointing. None of the waitstaff deserved a tip, but unfortunately, they automatically include a 15% tip. This is so maddening!! Unfortunately, since the tip is already included, the waiters don't have to provide good service anymore and can treat customers the way they treated us tonight with no consequences. Wow! What a meal we had! Shambles is in our neighborhood but we never went as I assumed it was solely a steak house. So glad we went! We had the pickled veggies and fruit. Who knew you can pickle strawberries! They were delicious. The brussel sprouts were amazing as were the mushrooms. We also had the beef croquettes which were delicious. Only wish there was a bit more sauce for those. We also ordered the bread which was warm but not toasted. My friend and I had a fabulous Thursday night at the Shambles. It has an awesome vibe with lots of barstool/counter space, some small tables and a few longer tables that were shared by pairs that had a very European-community-table sharing-vibe. We were greeted and seated quickly, but we did get the last spot in the house. The Shambles' popularity will definitely saddle you with a wait anytime busier than a Thursday night, but I think it is worth the wait. The beer list was long and reasonably priced. They also have cocktails and wine. My friend and I shared a cheese plate and we were both happy with it. Our server was friendly, knowledgeable and attentive. Service was a little slow, and might merit 4 stars today, but the restaurant is new and still ironing out some kinks. I think before long alacrity will improve to a solid 5 star rating. I understand covid times, but I was next to the POS and my "server" wasn't even the one to close me out. My food came quickly, but that was the last interaction with anyone for 35 minutes. I was told the bar was open seating, so I split the difference with the 3 seats left, I was moved against a pillar to accommodate a theoretical larger group that may come. This place was legit! Had a couple cocktails while waiting for a table, place was crazy busy but pretty organized. Food took a while, but it was worth the wait. They describe each dish and how it's made pretty thoroughly. I tried the pasta, oysters, duck sandwich, chickpea stew, crispy pork belly, foie gras butter, and panna cotta desert. We've been here twice now, and have loved it both times. Great atmosphere. 21+ only which is a wonderful treat for us when we have a rare date night without the kids. The service is great - sort of a team effort, their knowledgeable and friendly! Great draft beer selection and cocktails and wine selection. And the food. Yum! The daily cuts of steak are up on the chalkboard with availability of each for the night. By 7:30, about half of the cuts were gone but still plenty of good ones to choose from. And our friends were late but they let us claim our steaks to fire up after they joined so we didn't miss out on the ones we wanted. The sides we shared were delicious - especially the crushed potatoes and mushrooms. We also got the charcuterie board for 1-2 people to start with while we waited for friends which was delicious. Came here early enough on a Friday night that we were able to grab a good seat at the bar. If we arrived much later than 6 we would have been like those poor people standing and sitting in the entry way drooling over delicious food and drinks and hoping for someone to leave to snag a seat. The staff was friendly when we sat down bringing over menus and a drink/beer list. The beer list was pretty impressive, it was broken down by type, so if you know you do or don't like certain brews you'll have no problem finding what you're looking for. We started with their beef tartare, it was excellent, very freshly chopped, flavorful meat, on an arugula pesto that gave it a bitterness that was a terrific contrast. Unlike so many places that serve a dish like this, the amount of bread was perfectly suited so you could have a nice full bite, but not run out of bread. That's always a pain to ask for more and wait for it to arrive. We followed this up with the tri-tip sandwich. So much flavor! It came with a smoky gouda that paired perfectly with the steak and came on a nice chewy roll. You get to select one side and I picked the brussel sprouts. They were crispy and crunchy and still had the filling bite of a brussel sprout, but so much better than most that you have in restaurants. Next up was the charchuterie plate. This was the one week link in the meal in our opinion. The mix of meats was a little odd, including a jerky pork spare rib that was hard to cut off the bone and thinly sliced guanciale that was purely fat. The cheese were better, but I'm not sure about parmesean on a charchuterie plate, at least use pecorino. We couldn't eat all of the meats since they were so fatty. And we were a little disappointed they didn't ask about it when there was a coagulated ball of pork fat on the plate that we didn't touch. Small thing, and overall this was really good. A bit nondescript in the space, but the bar and the taps were really stunning. It feels like a neighborhood place and it definitely was hopping.
