MAN OH MAN, let me tell you all something, GO TO THEORY. That should be enough but this is yelp and you probably are looking for some reason to choose this place over the many other coffee shops in Redding so here ya go. I don't even drink coffee but I'll usually be sitting there with my wife as she enjoys her MUST HAVE morning coffee. while I figure out the rest of our days plans. BUT, not here! I decided to try their breakfast sandwich and a bottle of some kombucha. My wife got here usual Americano and immediately said how smooth and fresh this one tasted compared to other spots. The cashier did accidentally ring me up for two sandwiches but my wife decided to just go ahead and try it with me as well and we both LOVED it! The light, flaky croissants and the delicious sauce the use blew us away. Not many coffee shops really put much effort into the food, usually just offer it with the coffee but you can tell from the first bite that THEORY does not fall victim to this normal trend. If we lived locally we would absolutely be back to try some more of their pastries that we didn't t get around to but looked amazing as well. Both of our servers were extremely friendly and helpful as well, so all around A+ effort from this place! Wow! All hope for good espresso on our travels thru CA was not lost. Simply some of the best espresso I have ever had hands down. Husband concurs so I purchased a bag of fresh roasted beans (the blend escapes me). Look forward to pulling some shots at home and see if I can do it justice. Excellent place to stop for coffee! They always have a single origin as well as a blend on for espresso which I love. We usually go for the single origin (especially if it's an Ethiopia) but their blend is equally good. They have a nice variety of flavored drinks which are made with all housemade syrups instead of just Torani's. One of my favs right now is the bourbon mint latte. So good! They also feature two excellent local bakeries (Tin Roof from Chico and Eden from Redding) So there's a lot to choose from for good eats. The seating is ample and comfortable. The ambiance is bright and inviting. All in all a very nice shop to either hang out in or take your stuff to go. read more

As a purely drip coffee/pour over/etc guy I've had coffee all over this country in my travels. Theory is a really nice vibe, especially the downtown location on California Ave. aside from higher priced items, the other complaint I consistently have with theory coffee is no matter what type of roast is on drip, it all tastes the same.. pretty bland and light. I do understand that mass drip batches get a bit diluted. The hilltop location's drip is even worse; and always luke warm. That could be do to it being an icebox in the hilltop location year round which that reason alone sends me to the California st location despite living close to the hilltop. So I really like this place. The staff is great and the coffee is good. It is nice to see Redding get some decent coffee shops. The problem I am having is that they raised their food prices 32%. I used to get the breakfast sandwich for $6 and now it is $8. They did the same thing across the board. I know it thinks that it has a built in clientele, but if I raised my prices I doubt my clients would still do business with me. I used to go with friends and now they tell me, let's go somewhere else that place is too expensive. So instead of going everyday I only go there about twice a week. The simple math $6 (meal) $5 (coffee) = $11x 5 $55 (simple math brtw) $8 + $5 = $13 x 2 $26 So you have a client who now comes less and spends over 50% less and tells everyone you are too expensive rather than tells everyone that you are awesome. I came here cause I was attracted by the atmosphere and the aesthetic of the place. I had mentioned to the barista that it was my first time and she didn't even really acknowledged that or offer me any tips on what to order, I didn't want your typical cup of Joe's, I was ready to try something "fancy" and she failed to help me and wasn't the nicest so I felt hurried and ordered something. I won't go back again, it wasn't worth the $6 cup of coffee. We decided to check this place out because everyone is always talking about it and one of us had a free drink. Walking in we were greeted with immediate confusion with the layout, then as well will the ordering/pay process. After waiting about 10 mins as next in line, we finally placed our orders. Elizabeth got a mocha and I got an iced latte with oat milk. Elizabeth's mocha tasted like they forgot to put any chocolate in it, and my latte simply tasted not good (and I am no stranger to my iced lattes). The coffee was indeed LIGHT roast. Furthermore, for the amount of drink you get vs. the price, and taking into consideration quality.... we would not recommend. read more

i'm gonna need for the citizens of redding, california to get their act together and start PROPERLY freaking out on yelp over HOW good theory coffee is?! i just made a pitstop in redding on a drive back to portland, whose over-the-top hipster coffee culture has forever ruined my coffee experiences in MOST other cities. so, you'd better believe i was in my I-5 hotel room OFFENDED by their in-room kuereg (so bad i never even learned how to spell the word kuerireg) and frantically yelping for nearby coffee shops open at 7am. the friendly barista who made my almond milk latte could WIN AWARDS. i overheard him telling another customer ordering a second espresso shot to wash his palette at the water station-- do you even need to finish reading this yelp review?! the customer service, expert multitasking, detailed latte art, coffee flavor, the music, art, cleanliness, atmosphere, all of it. five stars. to the yelper who complained her latte "wasn't hot enough": oh, honey. that's the equivalent of drinking a fresh hop IPA and complaining it didn't taste like busch lite.
