The ingredients seemed fresh and the soup well prepared, but the flavor wasn't what I expected and didn't quite suit my taste. It wasn't bad--just different from what I anticipated. The cashier was friendly and patient, the service was quick, and the serving area was clean. First time ever seeing this restaurant, and I'm so happy I ate there. The shredded bison bowl was delicious, the server was friendly and helpful. She worked with me as I asked what was gluten free. First time at Tocabe. I have been intending to visit their Denver location. Good comfort food. I wanted a high protein meal before sleeping on my night flight to Iceland. For $22.15, I chose quinoa & wheatberry for the base. I added black beans and shredded bison for proteins and topped the bowl with their green chile and hot tomato salsa. Perfect amounts, not too filling. The shredded bison was great. All the food items are simmering in Dutch oven pots. All clean. No tables nearby. I sat nearby facing the restaurant. I added the yogurt parfait for dessert. It was made with Wojapi, a mix of strawberry, blueberry and raspberry. Good crunchy granola. Yummy. read more

Walked by and did a double take- definitely not something you see at every airport! I got a bowl with ground beef (I would've strayed but didn't want to risk my stomach on the plane) and lots of veggies, and a fry bread on the side. Service was efficient. While I'm sure a non-airport option would be preferable, I was at the Denver International Airport for a long layover, so I decided to give Tocabe a try. During my layover from Rhode Island, I was trying to decide what to eat, and I saw Native American cuisine was offered here. I was so excited! Step 1: Choose a Base Experience For my first time, I chose nachos Step 2: Choose a Protein Ground Bison, since I've never had bison before. Step 3: Top with organic lettuce blend, mild cheddar cheese, sour cream, ancho chipotle, and housemade salsas Got a Fry Bread on the side. I never had fry bread, and while I'm aware of its controversial history, I enjoyed it immensely. A harmonious texture of hot crunchiness on the outside, and warm fluffiness on the inside! I'm now a convert to Native American food! For my second trip, I came back in Jan 2026 on a layover from New York. This time I got: -Ground bison on frybread base -Green chili stew with another fry bread on the side. -Wojabi cup for dessert Went from concourse A and ate it at my gate in concourse C. The stew hit the spot for my soup craving, the frybreads were heavenly, and the wojabi cup was a sweet yet healthy-ish berry dessert! An absolute must if you're hungry at DEN airport! Honestly wish I was hungrier so that I could try an actual plate but I was not that hungry - I just wanted to try it because I didn't get to go to the original location during my trip lol. I ordered the bison chipotle chili and the fry bread - if you get a bowl, it comes with the fry bread! Chili was hearty and the fry bread was the perfect complement to it. It was also good on its own. The Denver International Airport lacks a good selection of food. That is just a known thing and it is not limited to Denver's airport. I was super excited to see that Tocabe opened up a location here because the one in Denver is one of my favorite fast-ish food places to go to. Unfortunately, I did not find this location to be at the same 5 star quality like the original location. The ground bison was flavorless and extremely dry. It was not quite like chewing on sand but close. Not even the sauces could cover the lack of flavor. The other ingredients like beans, hominy, etc were all lacking flavor too. I have quite an appetite and found it difficult to finish the bowl. It does seem like fried bread is good according to other reviews but I did not try it. Add in the inflated airport pricing and it is hard to recommend this place unfortunately. read more

You can also get bowls with bison beef, corn, rice or quinoa and beans - and the bowls with bison beef are great. You can't beat this spot for quick grab n go at the airport. The food is nutrient dense and delicious! The dishes were very customizable as it is a Build Your Own Bowl or Burrito place. Tocabe can be tailored for everyone! I've never had NATAM food before. The shredded bison paired with the berries and wild rice with ancho sauce was a perfect mixture of flavors. Note if you order frybread, it is quite large and may take additional time. The Wojabi sauce is not too sweet and very berry tasty. Prices are little bit on the higher end but hey I'm sure the taxes of The staff could use a little bit of training on customer service and friendliness. I was stoked to see that frybread is at the heart of Tocabe's menu, which features many options to make frybread tacos topped with veg or proteins such as bison and beef. But I wanted chili, and the server kindly let me sample both the chipotle bison and green chili beef options--both were hearty and yummy, but green chiles always win with me so I got a cup of that plus an a la carte piece of fry bread. Both tasted great, and I was happy to get the chance to try these regional specialties right at the airport. Only improvements are that the chili could have been served warmer and spicier, but I know that the latter is not widely tolerated. I am left with not thinking that this is an American Indian restaurant but an American-American Indian restaurant, which is a concept I would not have thought I would have thought of. Hear me out. There are some extremely native American Indian (indigenous peoples') food here. There are also some very much American food, and food from Indigenous peoples translated or modified. For example, they serve nachos as a base for their bowl and I'm going to suggest that nachos where not around before 1940 and not really a traditional American Indian food having been invited in a restaurant. They let me try ground bison, which was heavily and nicely seasoned. It either takes like beef or close enough. The pulled bison in my bowl was nice, and tasted like beef. the fry bread was rather good, perhaps better than it should taste given its history. the chilli beans were not bad tasting, but boy, did they look good! The shredded cheddar cheese, I'm just guessing here, it not traditional American Indian but might be American-American Indian style. The bowl also leaked into my bag. So the food was too moist. I would be happy to go back. be careful as you carry the bowl, and eat as soon as possible rather than 2 hours into my flight. Not cheap though. read more

We decided to have lunch here to try the new place. We chose to build our meals. She went with salad and I decided on an Indian taco. Selected the shredded bison as the meat of choice on a bed of salad, chick peas, medium salsa, cheese, sour cream, beans. I believe I had ancho chipotle too. I left it up to the expertise of the servers who were helpful and recommended best choices. Clean and neat serving station. Picked water to drink. Only bottled choices. It was tasty. One of the better airport restaurants I've eaten at. Verye respectable food. Fast. Polite. A bit expensive for what you get, but not sure what isn't at the airport. I'd say from a price perspective, it's in line with everything else. I was on the fence between 4 and 5 stars here (would really like to give 4.5) but gave them the nod for 5 stars because the food was really quite better than I expected for airport fast food. Defintely worth a try if you're waiting in Denver for your connection and stuck in terminal 1. read more

Inside terminal A this spot sports American Indian cuisine. We grabbed the green chili, fry bread, and bowl, and these came out quickly. All of the options were really flavorful, the chili especially, being well seasoned and spicy. The frybread was rather bland, but it served to pick up/complement the flavors of the other dishes. if you have an hour in denver airport, you should definitely come over to terminal A and try this amazing indigenous food. i stopped into denver with a 3 hour layover at the end of my holiday trip and was in the domestic terminal C. i looked around at the mcdonald's, starbucks, and chic fil a and was like please does this airport have more options. i looked at the map and saw that terminal A has international flights so i was like there's gotta be something better. so im wandering through terminal C and saw bison on the menu and was like omg in an airport yes!!! it was gloomy that day and i was cold so i went with the bison chipotle chili with fry bread. the service was kind and swift, they offer cheese and sour cream on the soup, the sour cream i took. the fry bread was amazing, reminds me of a palestinian bread called taboon if it were fried instead of on a clay oven. the chipotle was there but not overpowering. the ground bison meat was delicious, tastes like a leaner beef and absorbed seasoning well. i went to the second level of the airport and found a bunch of staff sitting on the carpeted floor taking their breaks and sat there so i could eat it without making a mess. and soaked up all the bottom with the fry bread. would so try the bowls next time and get the chili again. i was not hungry until i got home hours later. if you get a cup of the soup its half the size and it's half the price of the bowl so they price it accurately no psychological markups. but the bowl and bread was worth the $16. read more

Today we enjoyed a short trip down to Denver. On the way back, we stopped at Tocabe. The food is American Indian and we've eaten here several times over the last many years. Parking is limited in the lot; there is street parking. The restaurant has tables and it looks like during nice weather you can eat outside. The selection is either a plate meal or Posu bowl where you can select a protein and then sides and sauces. Every time we have gone the food has been really delicious, freshly made. The fry bread nuggets are fun. They also have a location at the airport. One time when we landed and were lucky to be in the right concourse, we purchased some fry bread to go. read more

Unfortunately, the service was pretty disappointing -- slow and not very attentive. The food itself was decent, but the bottled soft drinks were room temperature, which didn't help. I was excited to see Indian fry bread while at the airport. Too bad that was the extent of it. I lived in NM for several years and I know good fry bread when I have it. This is not it. Too thick and not the right consistency. This seems to be just a hastily fried piece of dough. Also I got the shredded bison for my protein and it was seriously underflavored.
