I liked this place!! It's a tiny shop, but there was no waiting at 2:30pm on Thursday. However, judging from the sign on the door that says "you'll have to wait outside because there is no space inside to wait", I'm guessing waiting to be let in is a real possibility at a more popular time. I got the black garlic tonkotsu ramen ($18). The chashu was perfect, soft and tender thick slices of pork with the fat rendered flawlessly to melt in your mouth. The broth was flavorful, no complaints. The noodles were great. The ajitama egg was perfectly hanjuku and not overcooked at all. My one complaint is that they should really toast the garlic before they put it in the ramen. The garlic seemed to be just minced raw garlic. Toasting the garlic until it's browned is what gives it the extra flavor. Please keep in mind that this is a cash only establishment. It's very small with a few tables and counter seating by the kitchen. The wait varied depending on time of day, but the service was always quick and the staff were very attentive. For starters, I tried their kuro karaage, but it was not crispy at all and quite underwhelming. I ordered it the first time and never again so I can't comment on whether they've improved over the years. I've tried the Karashiro (Spicy Original Tonkotsu) and Kuro (Black Garlic Tonkotsu) and both were very good. I preferred the Karashiro and their torched pork belly over the thin slices of chashu. I generally prefer to be able to customize the ramen in terms of fat, noodle thickness/firmness, and level of spice, but this place doesn't do that. Although they don't offer that here, their ramen is very rich and flavorful as is by their standards without being too heavy. The egg was a perfect soft boil and the noodles were cooked just enough for my liking. This place is cash only, but they have an ATM at the doorway you can use. My boyfriend and I were trying different ramen shops in the area since we have never been, but we've had a lot of ramen to be able to make solid reviews! Food - we shared a tonkotsu ramen together and we both were not impressed with the broth. We agreed it tasted more like chicken noodle soup, even though it should be a pork base. There's images on the walls that boast about their broth being made from boiling pig bones to allow for the fatty flavor to come out, and using a hybrid pig for the perfect slices of pork in the ramen. However, we were not impressed, it was very fatty, no real tonkotsu flavor. The egg was okay, and the noodles seemed like not ramen noodles (didn't seem to fit with this dish at all). The hybrid pork they used was a very interesting texture and different from the usual pork you see in ramen dishes. It was a bit fatty, but tender so it wasn't too much of an upset to my mouth lol. Service - quick but no real interaction besides getting our water and check. Ambiance - pretty small joint we sat at the stools facing the window, it was an okay space but lots of workers standing around not doing much. Overall we rated this place as a 2.5/5 because the broth and noodles just weren't it for other tonkotsu's we have had. There was another guest right before us. The place is small, cute and does remind you of a Japanese Izakaya. Our Orders: Miso Ramen Black Truffle Ramen Yuzu Ramen Pros: service was attentive, the broth was rich and pact full of umami and its' individual flavor, the Char Sui actually had char that they torched each slice to have that Smokey flavor, ramen orders came in 15 minutes. Prices are on point with other Ramen joints. Cons: service said they ran out of the regular Curly ramen noodle (which is what we look forward to in Ramen) and only had the thin ramen but when another table wanted to change their order to something other than ramen, the waitress gave them the Curly regular one (WTF?!). The Dry mouth that came after eating and drinking the Ramen was obvious, we were very thirsty which tells you how much MSG/Sodium is in their broth. Would we return anytime soon?
