Yummy! My friend who lives in Willimantic said this was one of her favorite eateries so we had to stop by! Coming from New York, I eat a lot of good pizza and am sometimes disappointed in other states. However, I've had good pizza in parts of CT and Trigo was no exception! We started out with the salad which was absolutely delicious and perfect on a hot day. The lemon vinaigrette kept everything light and fresh and the addition of feta was fantastic. I kept going back for more! We were a party of four and opted for two white pizzas: mushroom bacon and shrimp pesto. I preferred the mushroom bacon of the two. The toppings were very generous and the bacon had a nice sweet flavor to it. The crust was crispy and delicious. Shrimp is one of my favorite foods but something was missing for me in this pizza; I couldn't put my finger on it. It still tasted good, just wouldn't be my go to. These pizzas + salad was plenty and we had a few leftover slices. We capped off the meal with a brownie to share with ice cream drizzled in olive oil. I love this combo and the cold hot effect. All in all, this was a great meal in Willimantic! Prices were great and staff were accomodating and nice. I liked the aesthetics at Trigo and the fresh flowers were a nice touch. Parking: street spots and also spots behind building as well Decor: was suspect from the outside with a dark older brick facade but inside was done up right with a great paint color combo and open pizza area. Maybe some better lighting but a very nice interior with vintage grade school chairs!! Food: presented well and very tasty, pizza was good but had to ask for some crushed red pepper and seasonings. The beet gnocchi was excellent and the hummus was great too. We have to talk about Trigo. This place is worth a detour, a road trip, or heck--even a walk if you're close enough. If you're on a pizza tour or just have a hankering for great pizza and good beer, Trigo needs to be your destination. This was my second visit in the last 12 months, and both times they delivered consistently delicious food and excellent service. You're greeted warmly with a smile, and the staff are friendly, knowledgeable, and professional. The pizza here is wood fired with a thin, crispy crust with just a bit of char. Don't be surprised if you see a small burnt spot or two--that's intentional and part of the style. If you enjoy the artisan-style pizzas from places like Pepe's, Sally's, Krust, or Otto, you'll feel right at home here. Located in the somewhat unassuming (and occasionally gritty) downtown Willimantic area, Trigo is truly a hidden gem. Street parking is available, or you can park in the rear lots and walk up the alley to the front entrance. We ordered the classic red cheese pizza, which was savory, crispy, and exactly what you want from a great pie. The real standout, though, was the Lemon White pizza. It was fantastic--unique, bright, and seriously delicious. Thin slices of whole lemon are baked right into it, and they're completely edible. A drizzle of honey and a touch of chili pepper bring everything together in a really memorable way. The beer selection is solid as well. We enjoyed the Keeper's Irish Red and the Mountain Magic cider. Honestly, give Trigo a shot--you won't regret it. My only complaint? Super bougie wood fired pizza place on Main Street in Willimantic. Never been to area before, so when we found street parking right in front of restaurant, had my daughter run in to ask if we can park there. The man who answered her gave major attitude. But hey, we could park there so we stayed. Excellent reviews and craving pizza..looked like good choice. Many open tables in front, but was told we could eat at pizza bar or back room. Maybe reservations? I don't know. Those tables were vacant entire time we were there. We chose pizza bar. Watch them make it. Ovens right in front of us. It was a cold snowy day, so the heat was nice. Ordered couple pies and 2 diet sodas. Apparently, a local soda company (not Coke or Pepsi we were told) as such, served in tiny glass like we ordered rum & diet coke. I think a tall glass for the price would be better to wash down pizza. Pizza was excellent! And i am from NY, so i am pizza snob. Best flavored wood fired pizza have ever had! Got a white roasted garlic pie and a red meatball pie which also had basil and ricotta. They were both FANTASTIC. Its a nice place inside, dimly lit, nice decor. Wait staff were very attentive. College visit to U Conn had us in area. These are the meatball and pepperoni pizzas from Trigo. These pizzas were very very well made with good quality ingredients. Toppings all meshed together and the crust was the perfect thickness where it's still crunchy but not overpowering. Seasoning on the pizza add a good kick. Atmosphere was lovely, not too overly decorated and had a simple look. The bar at the entrance is also super cute. Fantastic food should be enough said but living in this area of Connecticut it's hard to find. Lettuce is clearly not from a bag and all their ingredients are homemade. My Italian husband ate at Trigo with some friends and told us he enjoyed his pizza and we should bring our kids there next time. We finally got to check this place out. We ordered the meat pizza with hot honey, roasted garlic pizza, and korean bbq wings. The meat pizza was instantly devoured by our kids. We also liked the wings a lot. My husband and I like the roasted garlic pizza with miso crumbs. However, we find it a bit too salty. I worried about seating; the culinary event Taste 2 Towns was happening and Trigo was running a special. They do not take same day reservations and ask that you email them to reserve. Steamy windows obscured a good, but not capacity crowd. The bar looked very impressive. The decor was rustic romantic. We ordered three pizzas, one each - half of which became a lovely breakfast the next morning. Meat, Meatball, and Pepperoni all tasted superb, with just the right amount of char. I went on a weekday evening without reservation. I didn't get a seat. Or rather there was more than an hour of wait. I decided to take out pizza. The pizzas were very innovative. Lemon pizza had real slices of lemon in it. Lemon slices were bitter tangy, but still edible. The cheese topping with pizza makes lemon tanginess a delight. Nightshade was my other pizza. It was mostly eggplant and pesto sauce. Its aroma was so strong, even before you open the box, that is the pizza you feel like having first. If you're looking for a trendy atmosphere in Willimantic. This is one of the only 3 trendy restaurants in Willimantic. (See Stone Row and Tacos a Mano). This one has me excited for months. Wood fired pizza?! Finally. To get good pizza I have to drive out to Brick and Basil in Yantic or get Big Y pizza which is surprisingly good but missing that char that can only come from being truly wood fired). Anyway, I digress. So let's start with the positives. Cool ambiance. Glad to have a new, clean restaurant on Main Street. Good table decor and overall very picture worthy. The menu is on the small side, thank goodness. None of us are missing pizza shops with 6 pages of mediocre attempts at Italian food. Now... we decided to start small. The meatballs to start and the signature lemon pizza. I'll come back to these. We usually like to try a new gin or whiskey cocktail from the menu. But we glanced over at tables around us and saw ridiculously tiny cocktails. I'm talking what i suspect to be a 3 oz pour in a 4 oz coupe. The big guy next to us looked like a giant holding his martini which I'm pretty sure he drank in 2 sips. His wife slowly sipped her $9-12 martini to make it last. To me, a former bartender, this is inexcusable. But instead of venting further I'll say, my husband thought their selection of local beer was quite satisfactory. And it came in an actual pint glass. Hooray! Our waters were also miniature and the server needed to revisit us many times to refill. But that's neither here nor there. Back to the meatballs. Decent presentation. 3 meatballs in a small crock. The marinara was good. The cheese was good. The meatballs were grey and tasted, well, grey. They're the meatballs you get at a bridal shower and don't complain about but you certainly aren't asking for the recipe. The pizza came. Okay guys. This part is truly mixed. I had to talk my husband into trying this pizza. And he was on the fence and asked the server, "are you sure the lemon isn't bitter? Even the rind?" After assurances we ordered it and I was ready for his mind to be changed by this innovative menu item. It came, nicely charred, and we took our bites. Don't let the lemon artwork on the wall sway you, the lemon rind is still bitter and unsettling on pizza. I was wrong, we didn't stumble on the next big thing. But, the crust was perfect. Whatever lemon juice, honey, chili pepper combo was on it was really, really good and carmelized perfectly. But every bite of lemon was, well, like eating a lemon. We had the house made apple upside down cake which was very okay. It was underdone and doughy. But kinda worked. Tasted like a spiced apple cookie dough. Excited to try this new location in Willimantic just a few weeks (correction: possibly days?!) after opening! I am pretty sure at this point they still haven't had their "grand opening" (at least based on their website/Insta). THE FOOD -obviously the big focus here is pizza! We were with a party of 7 so got to see a lot of different pizzas they currently offer! Here's my reviews: -Lemon: this pizza was unique and tasty! Personally we didn't like eating the lemons on it because it was overpowering but the flavor left after removing them was good! I also spread the cheese around to have it more evenly distributed -Pepperoni: I ordered this without the onion and asked for it to be topped with arugula. I really enjoyed it! It came with my modification requests correct. The pepperoni comes in large slices. Very nice. -Margherita + cheese pizzas: others at our table ordered these and they looked good! Can't really mess up either one. Though I will say the margherita appeared to have the basil burnt in the oven rather than placed on top close to end of cooking time. -Overall pizza: I look forward to coming back and trying more pizza flavors. I will say the crust was a tiny bit tough, in the sense that I realized I had been putting in some effort for chewing after a few slices. But still very very good. -other food at our table included salads and 2 apps. Folks appeared to like the salads. Someone also got the "mixed nuts" but mentioned what was delivered was mostly seeds. They also tried the warm olives and said they were fine too. One of our party was vegan and was able to have a good meal. THE DRINKS -there are quite a bit of cocktails to choose from! -I got a margarita with the option to make it spicy. Honestly the spicy factor really wasn't there. Not worth the $1 up charge for me but still a delicious marg. -other cocktails at the table looked good as well. I definitely plan to try different things next time. THE SERVICE -our server was very friendly and attentive! Definitely wanted to make sure they were accommodating us and checked in with appropriate frequency. -they were absolutely slammed and for a new restaurant I was honestly surprised how good the service was. Keep it up! THE ATMOSPHERE -really loved the vibes of Trigo! -lovely ceiling, beautiful paint choice and sconces, cute candles and minimalistic florals on the tables, etc. -I will say I found the seats to be a little chilly/uncomfortable. We were in the very back corner of the restaurant so I think maybe the heat circulation wasn't the best back there. No one else at my table seemed to mind so maybe just a one off. (I also happened to be seated closest to the corner) Overall, I was really impressed with our meal, drinks, service, and the atmosphere. Let me start by saying Trigo Wood Fired Pizza opened yesterday, 1/31/23, to the public. That said, the restaurant was packed by 6:00 pm with guests waiting to be seated and guests coming in for takeout. It seems Willi has been waiting for Trigo to open. Here are a few basics: Hours: 4:00 pm to 9:00 pm Tues, Wed, Thur 4:00 pm to 10:00 pm Fri, Sat The lighting is quite low. Thus, the pictures are not the best. For those who have issues seeing in dim lighting, this may not become your favorite restaurant. The menu states: "proudly serving local produce, meat and dairy from Seacoast Mushroom, Lluizzi Cheese, Kindred Crossings, Mountain Dairy, and Apis Verdi Farm". It truly is nice to see another restaurant using locally sourced ingredients and produce. My dinner partner and I enjoyed the ambience of the old downtown Willimantic building that Trigo is located in. Brick walls and classic pressed tin ceiling. The tables are basic. The chairs reminded us of those we sat on in high school. The bar seats 15 and is the statement of the main dining room. We ordered drinks from the cocktail menu. I had the WALL OF SOUND for $12 (gin + lillet blanc + spiced pear simple + lemon + orange blossom + aquafaba served up). My dining partner had JAM JAR $10 (bourbon + fig jam + lemon + orange bitters on the rocks). The drinks were good. We selected one pizza from the reds list and one from the whites. The pizzas are all about 14 inches or what would be equivalent to most medium pies. Our red pizza was the Meats $22 (house-made sweet sausage, pepperoni, bacon, fresh mozz + oregano). This pizza was delicious, but seemed a bit short on toppings. Our white pizza was the Sweet Potato $22 (scamorza, scallions, garlic, grana + balsamic glaze). This pizza was a combination of unique flavors that were well balanced together. For the price point, quantity, and quality we enjoyed our experience at Trigo and will visit again. read more

Quality of food here is great! Pork belly was perfectly crispy, and the potatoes with bone marrow butter were delicious. The mushroom pizza is an amazing combination of flavors and textures. Service was a little slow, took a while to get the server's attention when we wanted the bill. read more

As someone who considers pizza it's own food group my excitement for a wood fired pizza spot that had a good vibe was high. The food did not disappoint. We ordered the Margherita and the mushroom (sans bacon) and both were exceptional. We also got the greens salad and some olives to start. The salad was very fresh and light. We both ordered wine this time so can't speak to the cocktails but they looked great. Our waitress was very attentive and helpful and overall service was A+. We got seats at the bar that faces into the kitchen which was cozy and fun. My only complaint...the bar seats. Very uncomfortable and on the pretty small side. I ended up part standing and part sitting. My friend kept sliding off the seat too and we both agreed it didn't lend to the overall experience. Not just pizza! (Though all of the pizzas I have had are delicious and unique.) They often have specialty seasonal dishes made with locally sourced ingredients. I had the scallops over risotto last week and it was SO good. Trigo is one of my favorite places to either meet friends for happy hour/dinner or just go by myself and read a book while I have a slice. Hands down one of the best place of pizza places in the area, maybe even in all of Northeastern CT!! Not only do they make really great wood fired pizza, but they also have a menu that regularly changes with seasonal items. The vibe inside is spot on always great music playing and everyone that works there is a pleasure to talk to, and their service is always spot on. While they don't technically have a full bar assortment, the spirits that they carry are high-quality and they have a wide selection depending on your drink needs. They also have the best soda, Hosmer mountain soda on tap! My favorite red pizza is the "Pepperoni" and my favorite white is the "Nightshade". Take a nice Wednesday trip for their margaritas and margarita pizza deal!! You won't regret it read more

Absolutely love this place, every time we have been it has been amazing! I am a huge self proclaimed pizza connoisseur, I love making pizza both in my profession as a Pastry Chef as well as at home, eating pizza is one of my favorite things. The service is great, me and my husband both have a tendency to watch how the front of house staff works whenever we go out to eat, we watch how they interact with each other and with guests, these people just have a total natural flow and work like everything is easy even when it's super busy. They are friendly, attentive and efficient. The atmosphere is great too, makes you feel like you can just hang out there all night. The lighting is perfectly done, a little darker for those eating and I love that the open kitchen is more lit up almost like a stage but I'm sure it's also for safety purposes. Tonight we had roasted oysters which I have to say was the best oysters I have ever had either raw or cooked. We also had the meatball ricotta pizza and the quatro famagio pizzas honestly I couldn't tell which I liked better because both were so delicious! Omg! Love, love, love this place! Such a beautiful atmosphere inside. You can see the entire length of the restaurant when you walk in as well as the wood fired pizza oven. We ordered a delicious giradiniera salad, a few cocktails, and three pizzas. All I can say is every single item that we ordered was not only delicious, well prepared, and perfect, but the ingredients are clean and unique making the quality of their food outstanding. I loved their table decor, dishes, and delicate glass ware. Everything was done so nicely! We brought three teenagers with us who usually don't care what's on their pizza and typically aren't impressed with such unique and quality ingredients. Well, this was not the case at Trigo!
