By that point, we were already finished with our meal and turned it away. Kitchens get busy, and guests understand that. But setting expectations upfront ("Hey folks, the kitchen is backed up about 30 minutes today") or proactively offering a small courtesy early on would have changed everything. Leaving guests in the dark, ignoring a cancellation, and then offering an unwanted item at the very end isn't good service. I'm normally a generous tipper, and frankly, a tip wasn't deserved here at all. We barely sat down before it was brought out. We tried each of their 3 sauces - all were tasty but for an overall favorite, we both liked the green (medium heat) Huscatay sauce. Actually the rice was very tasty before adding a sauce. Just the chicken improved by adding the extra flavor of a sauce. As usual, a crowd follows us, so by the time we left, a crowd was rolling in.
