This updated post is overdue. Valparaiso is now only operating from their food truck. They are still brewing coffee beans so I still only get my coffee from here. They always have a few varieties of roasts and blends. My current favorite is Valle, a wonderful light roast. Since they now have a food truck, you can find them at various locations around town, including Vineyard farmers market and river park farmers market. They expanded their food options to include quesadillas, loaded fries, sandwiches and other specials. They also offer alllll of their coffee drinks on the truck. Their chai latte is so popular, they sometimes run out. I highly recommend following them on social media to know where they'll be, and also because twice a year they do a huge sale on coffee beans. I also love that they have big bags of beans for coffee lovers. Other specialty shops that carry those little 12 ounce bags of coffee are so cute but only last me a week or so. Was in the downtown area and wanted to try a coffee place other than Starbucks. Checked yelp, and found this place. Based on the reviews I definitely wanted to try it. Wow! The quality of the coffee is amazing! It's super smooth and not acidic at all. The taste is wonderful and creamy, not too sweet at all. I love me some Starbucks, but it's great to try these smaller places to support them. This place definitely does not disappoint! It's located right in downtown. Spoke to a gentleman who I assume is the owner, and they are unfortunately thinking of leaving. Such a shame since places like these is what Fresno needs right now. Oh my! As I'm sipping the last bit of my coffee today from this amazing place, I have the happiest expression on my face that you could imagine. I was at the Farmer's Market at the vineyard. Valparaiso's mobile truck was there, so I thought I'd give them a try. They have so many interesting drinks to choose from, but I wanted just the regular cup o Joe this morning. Found them at the Vineyard farmers market on Wednesday selling beans. I'd been looking for a local roaster to buy beans from, so I figured I'd give them a shot. I purchased a pound of 559, which was recommended for me as their usual roast for espressos. The price was $19 which is reasonable for a larger bag than what most other roasters charge. I must say, the beans are wonderful with my espresso maker, making balanced and smooth cappucinos. They sell at Vineyard on Wednesdays (beans only) and Saturday (coffee and beans). I've seen that they also sell food, and I can't wait to give that a try sometime! Today, at the Saturday market, they were selling beans on sale for $14, which to me is a steal! I purchased the Casa medium roast and will be sure to update my review once I give that a try! read more

Very hip coffee shop and use of space. If you walk into Mabel's Kitchen, then you are also walking into Valparaiso. There is a menu full of coffee, but I'm more of a tea drinker. I was excited to see Thai Tea at this location, so I ordered a large, to get a full sample of this refreshment. It was around 9:00 am, but there were not many people sitting or ordering coffee. Yay! As I was waiting for the tea I noticed the customers here seem to be regulars because the baristas are extra friendly and talkative about what that person is doing for vacation and they know exactly how to make their drink. It was nice to see this type of interaction. When my tea was ready, it looked a bit peachier in color than I'm used to. Thai tea seems to be a bit of a burnt orange color. I tasted the tea and it was probably the smoothest Thai Tea I've ever tasted. It is not overpowering, but it is not too creamy. I will definitely be adding this location in my tea rotation! read more

It feels like this place does not belong in Fresno, and this is a compliment. Hidden in Bitwise building, it is quite spacious with a decent number of seating spots. It certainly has a personality, like most coffee shops in SF do, but also offers really nice customer service that is not hurried unlike in the big city - a perfect combination. I ordered a cappuccino and was asked if I wanted it "wet" or "dry". I must say, I had to ask what that meant. Apparently "wet" cappuccino does not have as much foam as "dry" does, which surprisingly (and ashamedly) I did not know. My cappuccino was great, the only negative is that they don't offer organic milk, which would bring this shop to 5 stars, in my opinion. My friend ordered a dirty chai. It was a bit too sweet for my liking, but had excellent flavor otherwise. She liked it. There is a parking garage a block away that offers first hour of parking for free and second hour at $4, if you need to stay longer. Found this cute little place during the Veterans Day parade. This coffee shop is in the Bitwise Building, 1st Floor. It is located on Van Ness Ave and Mono St., across from the DAV thrift stores. There is metered street parking, but keep in mind I came by on a Saturday, not sure what it's like during week. Customer service was great. The girl that took my order (I didn't catch her name) was friendly. I had a dirty chai latte which was really yummy, and my son had chocolate milk. Must have been great because he drank the whole cup. Normally, he doesn't care for chocolate milk. Since I was visiting from out-of-State, I wasn't able to try other items on the menu. However, when I do return to Fresno, I'll make sure to come by this place again. I'm from Fresno, so of course I have to make a trip to downtown. We first heard about this place through a waitress at a restaurant in King's Canyon National Park. Otherwise, we really would have never known about it. It's a little place set back from the street in downtown Fresno, right next to US Immigrations/Customs Office. It's only open Monday to Friday until 3pm so it's for the people who work downtown and also, for those who visit the US Immigration Office. Because we work out of the area Monday-Friday, we would not be the type of clientele that this place targets. Nonetheless, it was a nice coffee break on vacation time. Because the owner is from Valparaiso, Chile, my Chilean Mother-in-Law was very pleased to finally have hot coffee that reminded her of Chile. They drink their coffee very hot but not as strong we do in the US. The latte I had was very good and the coffee is strong enough to compete with an energy drink (I mean my mother-in-law was racing the countdown hand in the crosswalk after). But the flavor was soft enough to enjoy. The prices are very reasonable and the sandwich, the coffee cake (which was huge), & the chocolate muffin (which was very moist) were all great. Once in awhile, we get lucky enough to meet another Chilean in Fresno & this place is one opportunity to do so+enjoy good coffee. If you're downtown during the work week, be sure to check them out. read more

Valparaiso has been open nearly a year, and I've had the chance to go back many times, so I wanted to update my last review. During that time, many of the "bugs" that I reported last time have been fixed, and I now consider Valparaiso one of the best coffee shops in the Valley. If you are downtown on a weekday or Saturday, you owe it to yourself to check them out! Here's what's great about them: 1) The coffee! There are around 10 different types of beans (all roasted in-house) that you can have made into a pour-over. The Colombia is my favorite, but I like all of them. The espresso is also really good now (a big improvement over when they first opened): the iced almond milk latte is right up there with Insight in Sac and Cognoscenti in LA for the best of its kind in the state. Regardless of whether you prefer regular coffee or espresso drinks, Valparaiso probably has something you'll like! 2) The service: really great baristas (they work too hard, the same two guys and one girl are always there every time I go!) that are both friendly and great at their craft. 3) The cafe: located in Bitwise downtown, there is lots of space to work or sit at a table and chat with friends. Almost all seating areas have power outlets, and the wifi is fast and free. There is a small sandwich shop (only open M-F) in the same area that offers killer breakfast sandwiches to have with your coffee. 4) Prices: super reasonable! 5) Parking: While not free, there is tons of metered parking nearby at $1 per hour. I can almost always get a spot out front. It's also a quick hop from both the 41 or 99, incase you are just passing thorough and want some caffeine. Bottom line: Valparaiso competes with Cuppa Joy for being the very best cafe/roastery in Fresno and the Valley (once Lanna opens their cafe in the Tower, they will surely join these two on that list). There are now a lot of choices for coffee in Downtown Fresno, but this place should be your top choice! read more

I have heard great things about this coffee, so I don't know if they were having an off day but the iced mocha I got from their food truck was so awful I had to toss it. There was a weird after taste, it was like a rotten fruit flavor. Though I am not sure how or why that would happen. However, my friend also got a beverage, I can't remember what she got and she had to toss hers too. Either the equipment was dirty, or there was cross contamination or the coffee was spoiled. Something was very wrong with our coffees and I feel pretty let down cause all the reviews have wonderful things to say. I don't think I'd try their coffee again, sorry guys. read more

During the pandemic, the cafe mostly hasn't been open to the public, and I mostly haven't been downtown. But I am still drinking Valparaiso coffee every day! If you visit their Facebook page, you can contact them and order coffee beans for delivery. And I understand there will be a subscription service rolling out soon. Which is great, because this is consistently the best coffee I've ever had, no matter where in the world the beans have come from--Ethiopia, Guatemala, Uganda, Papua New Guinea, Brazil, Colombia, Peru, you name it. Nestled in the Southwest corner of the Bitwise building on Van Ness... this is a neat and trendy cafe. I'd usually scoff at such a place as trying too hard to be trendy..but really they aren't. And after a short conversation with the barista, and a sip of my cafe au lait, I was impressed. At the register, I asked for my cafe au lait (my go-to drink when testing out a new coffee shop), and he asked if I wanted regular or dark roast. I told him I prefer dark roast at Starbucks, but hate Peet's. He said I'd love their dark roast, and he was right. This drink, which was made as a pour over, had the perfect amount of frothy foam on top, was smooth and strong, and had the best sweet finishing notes... It was a perfect cup of coffee. Drinks are smaller than at the chain stores..and you will end up spending more. BUT you get what you pay for here. I'll have to try out a few other foundational drinks to be sure..but I have a very strong feeling that this place is a winner. I just hope it can survive the hostile environment of Downtown Fresno long enough to establish deep roots. I'll definitely be back! read more

This hip little third-wave coffee shop is in an unassuming location (within a ghetto area of DT Fresno), but it served up one of the best cups of coffee I've ever tasted. Kenyan FTO, pour over, was like a symphony in my mouth. No sugar or cream required. After a week on the road, being subjected to the horrible mud that is gas station and hotel room coffee, this place was a breath of fresh air. Thanks for the great coffee. I really enjoyed this place! I was up in Fresno for a work trip and I like trying new cafes and coffee places, but usually come out disappointed. This one was a top one that popped up. It was in a somewhat hidden location, but parking was not a problem at all at 9pm. They had meter parking in front. I ordered a matcha latte and a breakfast sandwich. I was pleasantly surprised how yummy a basic sandwich could be. I think it was the way they made it. I usually don't like tomatoes, but they made it in a way where all the flavors combine together really well. I didn't even notice! I would also like to add that the bread was so soft. Like I said, I was surprised how delicious it was. The matcha latte was good too. Nothing special, personally, but it was still good. I enjoyed it. There's only a handful of coffee shops in Fresno County that are worth driving out of your way to check out, and this is one of them. They roast their own beans which separates them immediately from 90% of their competition. But where they've won me over is that they don't over-roast their beans, allowing all those berry and citrus-ry flavors to come out. They also have a ton of other drinks and they now serve lunch. Valparaiso brews the best cup of coffee in Fresno. Ever since the great Christian Mental Health Debacle of Kuppa Joy, they have been my most consistent stop for coffee in the downtown area, and I have no regrets. First, the beans are always fresh roasted in house with expertise derived from the owner's previous Tower spot (RIP, Corazón). Every time I ask about a particular roast I get great advice and flavor profiles. The pour overs are consistently the best I've had...perhaps even the best I've ever tasted. This comes from somebody familiar with California's most prominent hipster spots: Blue Bottle, Stumptown, etc... Valparaiso raises the bar without drawing attention to itself. It is, after all, located on the ground floor of Bitwise! Other than a lack of seating, the space is fine, and they recently improved outlet access for those of us who want to get some work done. Do yourself a favor and pay them a visit. You will not be disappointed. read more

This is such a delightful little spot - and a perfect fit for the Bitwise building. The café is located just inside Bitwise, to the right, and has a gorgeous corner bar with plenty of seating, including low chairs for meeting with friends or business contacts, and a longer bank of seats which you can work or meet at. At the bar, the menu is substantial but not overwhelming, and the staff are such friendly guys. They'll be happy to chat about coffee, tea, or just about anything else you can think of! They're really passionate and knowledgeable about the craft of coffee-making, and put a ton of care and attention into everything they offer. Coffee-wise, I'm hardly a seer, but I know trash from treasure and tried their latte which was delicious. No sugary syrups for sugary syrup's sake here! I've also heard nothing but great things from the coffee aficionados I know, as other reviews here will attest! As a tea girl, though, I usually go for my usual iced English Breakfast. They use a local supplier, Raizana teas, and their iced black tea is one of the best I've had in town. Freshly brewed (and not stewed!) in front of you, with a side of conversation, it's a strong little number. Just how I like it. It's rare to find a tiny local business that knocks it out the park like this from the get-go, and one I really enjoy visiting and love to support. read more

I admit that I do enjoy a serving of Starbucks (I usually order straight lattes or simple mocha drinks from Starbucks, nothing too sugary or complicated) and most of the time I am disappointed with equivalent offerings from mom n' pops (which sucks because I always strive to support mom n' pops). Valparaiso isn't like Starbucks. It's different. But damn GOOD. I have the good fortune of working at BitWise and Valparaiso Cafe & Roastery are on the first floor of the building. I frequent them once or twice a day and the product is consistent as well. The owner, Mario, and the others who work at Valparaiso always provide friendly service too. This business is a good addition to the BitWise ecosystem, caffeinating programmers and getting us through the day. :-) read more
