We were in the area for a Formula One event this weekend and decided to try the happy hour at varsol! We were so happy that we did, the ambience is so nice in there they had a skylight in the roof in the dining room that gives you a lot of beautiful natural light and the decor is modern and chic. Not to mention the awesome selfie mirror in one of their bathrooms (photo below, hehe) I can't remember our server's name, he was a younger guy with shoulder length hair, he was so great, giving us all the time we needed to make a decision and then extra time at the end to chat and schmooze and finish our drinks, even when all of the food was gone without pressuring us to pay and leave and free up the table. The happy hour menu is from 4 to 7 and has a number of good options, we tried the spicy margarita and it was so good. Passionfruit flavor, not as spicy as I would have hoped. I think they mostly dropped a jalapeño slice in there in there and called it a day, but still really refreshing and nice. I also got the garden salad since I love the ginger dressing, and it was true to its form I got the Alex #2 roll and the South Miami roll off the happy hour menu, I believe these were the only two sushi rolls there, they each came with six or seven pieces and everything in total was a great size for me. Not to mention the prices were great, less than $10 for each of these rolls. We tried the gyoza for the table and it was also fresh perfectly crispy, but not too much so as well as the taras tuna and tuna tartare. The only dishes I don't think we'd order again where the chicken teriyaki and the chicken Katsu - the chicken itself was good, but the chicken teriyaki came as a kind of Mish mashed plate slapoed together, not enough for a variety and texture for my taste. The chicken Katsu was also missing the signature Japanese curry sauce that usually comes with it. They did give a sauce that we thought was the curry but when we actually tried it, it was more like a watery barbecue sauce and a little disappointing. But The fish was all very fresh and delicious. Everything we ordered was delicious - you can absolutely tell when sushi is fresh and high quality. The reason for the one-star deduction is service, specifically the bar and drink timing. We ordered our drinks immediately after being seated so they would be ready by the time we returned to the table. When we got back, no drinks. We then ordered appetizers - still no drinks. Our appetizers arrived, we finished them completely, the table was cleared for our entrées, and our drinks still hadn't come. By the time they finally arrived, we were already eating our entrées. If the restaurant had been slammed, I would understand. But this was an early Friday evening. The entire front section was open, with only a few tables seated in the back. There were five bartenders behind the bar, yet instead of working, they were huddled together watching the game, while others were chatting and giggling - not doing their jobs. Our server also wasn't very present, so there was little help resolving the issue despite us politely reminding staff multiple times. I'm generally very understanding when it comes to hospitality - I've worked in the industry myself and genuinely respect it. But basic service standards matter. If a table has been seated for 10 minutes without a greeting, water, or drink order, that's already a poor start. And when a guest calmly brings up an issue, it should actually be addressed - not acknowledged and then ignored. For the price point, this level of service makes the experience feel not worth the time or the money. With better service, this easily would've been a five-star experience, and I'd come back immediately. Instead, when I think about returning, I'm left wondering: the sushi is great - but is the inconsistent service and long wait really worth my time and money? I genuinely hope to see an improvement in service, because the food is excellent and this has the potential to be a great spot. read more

The service was good. The place was not very full and there was a pleasant ambiance. For starters we got Tara's Tuna and it was not my favorite spicy tuna, wouldn't order it again. The crab salad was good, it was nothing too special but it is not bad. As for the rolls, the Brie roll was amazing! I love the creative addition of Brie, it went really well with the torched salmon. The Holt roll was also amazing, it is really light and fresh and doesn't feel too heavy since it doesn't have rice. A nice sushi bar in the middle of coconut grove. It is beautifully decorated inside and you can tell that they put a lot of effort in making an aesthetic experience. The food is totally passable and they have a decent size happy hour menu. I actually came here for happy hour and had a pleasant time. I really appreciated the waiters who would refill the water in my glass the second it was running low. The food was fine, edamame needed more salt and the sushi was good. I was a little disappointed to see that there were no vegetarian options in the happy hour menu but that is somewhat the status quo for sushi bars. Overall, a nice place to have a meal. Varsol is the spinoff Coconut Grove version of the Miami Classic, Akashi. I highly recommend it, especially the Happy Hour specials. So many unique rolls and beautifully presented. The spot is nestled in the Grove, and it is so pretty and modern on the inside. Definitely underrated in my opinion. Of course, they also serve classic rolls like the Alex #2 for the loyal Akashi fans. read more

My husband and I walked a few doors down and both looked at each other and let's go back to Varsol! We opted to go inside thinking it was quite empty, however to our surprise the back area was a happening as the patio. Issac immediately to care of us albeit he had a party of 8, and several 4 tops and a few couples. He managed it like a boss! We got a French White wine, saki recommended by Issac "winter mist" both outstanding. Followed by a tuna tataki app ( highly recommend) and a Sexy mama roll and the spider roll! All superb and large orders. I'm certain the other raw rolls are good I just have to wait a bit to try those after I get the clear thumbs up . I've been to Varsol multiple times, mainly for their crispy rice (Tara's Tuna). It's amazing, one of the best in Miami. The servers are always friendly and the ambiance is relaxed, yet classy. I am always greeted by the server within a couple minutes of sitting down. I usually start with the Tara's Tuna and then try a new roll for my entree. Last time I tried the Brie Roll which was essentially a salmon avocado roll topped with smoked brie. Not sure I would order it again, but it wasn't terrible. Varsol also offers no hard liquor. All of the "cocktails" are made with their house sake blend. I wish they had a slightly better alcohol list for the elevated level of dining they offer. Overall, if you're going to visit Varsol for one thing, go for the crispy rice. It's no joke. read more

I was very disappointed with my experience. The service was extremely slow from start to finish. We waited nearly an hour just to place our order after being seated, and then another hour to receive our checks. The 20% gratuity that was included was not deserved. I had requested a birthday dessert in advance before being seated, but it was never brought to the table. It was meant to be a surprise and because of miscommunication between hostess and servers, it was brought up at the table. To make matters worse, I was only told after the kitchen had already closed that the dessert I ordered was no longer available, which meant I couldn't even choose an alternative. Several drink orders also came out incorrect. Overall, the lack of communication, professionalism, long delays, and missed details made what should have been a special occasion very frustrating. Tiny but mighty! This local spot in Coconut Grove looks small from the outside, but offers incredible sushi and A+ service. I sat outside at a table with a few others (some locals), and we were quickly greeted by our server who brought us fresh water, as well. One of the people in my party had been there before and had great recommendations, and the restaurant was kind enough to bring us out some appetizers on the house and they were INCREDIBLE. The plating/presentation alone was gorgeous, but the ingredients were so fresh in the tuna tartare and the Alex #2 was my favorite roll. The fried rice was also delicious and the perfect portion to share and pass around. First, the food was delicious. Can't take that away from them. My husband and I took our moms for lunch on Mother's Day and ordered a ton. We got the fish katsu, and then a bunch of rolls: sunset, mermaid, tuna steak, jalapeño, mango, and tempura. All delicious. My personal fave was the mango. But we left very few pieces at the end - so, safe to say it was enjoyed unanimously. Our server and the little flies constantly pestering the plates were the only downsides. We constantly had to repeat ourselves often about very simple things; she asked us 3 separate times if we wanted to-go boxes. Not sure what was confusing about "yes please, two boxes" that needed three separate visits. And simple things like having a towel for the bottle of wine - if she wasn't going to pour it for the table, there should at least be a towel so it doesn't drip ice water all over the table or our laps. I watched her watch us try to avoid getting water on the table or on ourselves, and she made no effort to *serve the table* as a *server* would. It should probably also be said that our reservation was shortly after they opened, so it was very empty when we got there. When it came time for the check, she brought over the little tap pay device, showed the whole table the check, asked if we wanted to split it - it's Mother's Day(?), I feel like it's an implied no on splitting it, and then had the audacity to say there's an automatic 20% tip lol 20% for subpar service. The runners at the restaurant were efficient, polite and very quick - but our actual server was high maybe? I don't know. Outside of the service, the restaurant is absolutely beautiful and the natural light and ambiance is what made us choose this spot for our mom's...I recommend it, but our server just didn't do it for us. read more

I'm not a big fan of sushi because I struggle with the raw aspect sometimes, but because of the beautiful plating and vast menu, I was willing to jump out of my comfort zone. I'm happy I did. I definitely recommend the Hamachi tiradito! The flavors blend together, so well, which I was a bit skeptical of at first, due to the citrus and truffle blend. So so so delicious! Our server was so friendly and accommodating. I am especially thankful that he brought out stand for my purse to give my shoulder a break. I had heard mixed reviews about VARSOL and last night I decided to order takeout to satisfy my sushi craving. I'm so happy I did because it was some of the most delicious takeout sushi I've had in a while! I opted for the Salmon dream salad which is served over Wakame and avocado as well as a yellowtail hand roll. The fish was super fresh and both were fabulous. The only good thing was the gyoza. The tuna Tara appetizer was off, the sauce on top tasted like expired spicy mayo it was inedible. The fried rice smelt like horse hay/guinea pig food. Terrible service - my daughter had a terrible experience. She has a gluten allergy and ordered Tara's tuna. She asked the waiter if it was gluten free and he assured her it was 100 percent gluten free. However it wasn't gluten free- she had an anaphylactic reaction and we had to take her to the ER. I called to speak to the manager next day to inform them of the gluten allergy and she had to be taken to the hospital. He was very rude and said the waiter told her it was not gluten free and she still chose to eat it. This is very unprofessional- no apologies Or empathy.
