The service was excellent and our server was attentive, knowledgeable, and gave us wonderful recommendations. I came to Vianda after hearing the buzz from several friend in Puerto Rico. As we came in the service and greeting where on point. I highly recommend trying all of their small plates. They are phenomenal especially the almojábanas, swordfish serenata, agnolotti, and tagliatelle. Again, I have to say the service was phenomenal. Chef/owner Francis came to our table and greeted us personally. Although we stuck to wine, I could see the bar was legit and had an assortment of craft cocktail options including original and classic libations. Impressive/sophisticated mixof tastes and textures. Went with small plates. Had the yellow fin ceviche with breadfruit/pana tostones. Pumpkin ravioli. And avocado toast. Well thought out mix of tastes. Actually, genius. Nothing is obvious and everything is surprising. A selection of tastes we need more of on the island. Vianda has given us something we just don't get enough of - sophisticated taste without glitz. The restaurant is beautiful but under stated. The freshness of ingredients is very obvious. They are not shopping at Costco. The pre-dinner cocktails were almost as fantastic as the meal. Dessert of coconut ice cream with dark chocolate was light and perfect. Not a dessert which leaves you wishing you hadn't. The atmosphere lends itself to family dinners, groups of friends or romantic. Service was impeccable and professional. We visited Vianda on a night where there was a new curfew in place bc of the coronavirus. We were looking forward to dining in but bc of the new regulations, they were only doing take out which is something the restaurant normally doesn't do. We sat at the bar while we waited for our food and they offered wine or beer on the house. We had a great time sitting there just chatting with the owners and the other patrons. They were all very welcoming and treated us more like friends than customers. The menu was mainly in Spanish and they basically explained every dish to us in detail. Everything sounded so good, we definitely had a tough time picking what we wanted. The food was as excellent as I expected. My husband ordered the scallops with croquettes and chickpeas. I ordered the Tom Kha fried rice as my main and the French onion toast as the appetizer. The scallops were perfectly cooked and the croquettes were not the pureed meat and fried croquettes I'm used to in South Florida but nonetheless delicious. My husband couldn't stop raving about how good the chickpeas were. The French onion toast tasted just like the French onion soup but on a toast. The olive oil and balsamic vinegar that it came with just kicked it up a notch. My fried rice was not like any other fried rice. It was topped with a piece of fish which was cooked to perfection. The chili oil had crunchy pieces of peppers that gave the dish a welcomed delicious texture. All that was topped with a tom kha coconut sauce that was not too overbearing in taste. Yum! I can tell they put time into the construction of each dish to incorporate the perfect combination of taste, aroma and texture. I would love to come back to have a proper dine in experience. I can't imagine how much better everything would be with the proper plating and environment. read more

I'm a transplant to the island of Puerto Rico that has lived in San Fran and NYC both, so I can tell you there is a shortage of higher end dining on the island. Vianda is a refreshing surprise that delivers in most areas. The decor is neutral, the service staff are helpful, and the owners personally are there every night making sure all details are met. Vianda is run by a husband and wife team; the wife works front of house and husband chef, and she (the wife) spends time with us when we go, which is good - she recognizes returning clients. It's for these reasons, and the food, that we go back. The food is delicious but some dishes are better than others. The good dishes are outstanding and the bad ones are average. The pickled vegetable dish for example wasn't what I expected, but the Tom Kha' Bacalao is one of the best dishes I've had on the island (Puerto Rico). You get warm fresh bread, and for vegans, you get a vegan sourdough as opposed to the casave dinner roll. All in all a great experience, near five stars but I'm going to give 4 stars because there are a few areas for improvement. read more

I think the cooking here was more French/contemporary international made with local ingredients than typical Puerto Rican cuisine, but in any case, the best meal I had on my trip to PR. In fact, this is the only time in my life where I felt compelled to make a second reservation before my meal was over so I could come back the next day and try more items off the a la carte menu. Chef Guzman trained at Blue Hill at Stone Barns in New York and his pedigree is apparent in their emphasis on fresh local ingredients. The stuffed quail was one of the best (maybe THE best?) poultry dishes I've ever had. The wine list has a decent variety and includes some interesting choices (e.g., an orange wine by the glass). IMO, Vianda is on par with Michelin one-star restaurants and the four course tasting menu for $65 feels like a steal for the quality. Fantastic service as well. Now I have to return to plan my next trip to San Juan so I can eat here again! read more

I bookmarked Vianda ever since the Eater feature and the place exceeded all my expectations. I thoroughly enjoyed the steamed clams with sausage and the stew with braised pork and garbanzo. My boyfriend raved about his steak and, having grown up in NYC, his jaded self was surprised that restaurants of this caliber could be found in San Juan. What appeared to be missteps for me may have been intentional or simply outside my limited comfort zone - The sweet potato bread I received was frozen in the center, and the meat tamal that came on top of my stew had quite a strange taste. To me, the mamposteao should have really been a side rather than the main component of the dish. But I will not forget how great other parts of the meal were. I hope this place succeeds on all fronts and I will patiently wait for the chef to come back to NYC. read more

I had a wonderful experience at Vianda. The interior had a really nice vibe and we were seated in a cute private room for our large group. The papaya starter is a must and they also had a great tuna tartare. The Tom Kha dish is a staple and didn't seem like something I would enjoy from the description but the waitress highly recommended it and I am very happy I listened to her! Adding the crispy rice to the broth was a move. Overall, the ambiance, service and food were all A+. Definitely deserves the high reviews it has. read more

I came here while visiting family in Puerto Rico and was seriously impressed by the celebration of local flavors and produce. We loved the raices locales (the day we came it was a beautiful beet salad that almost looked like tropical fruit), crepas de morcilla, tagliatelle, and the pork belly with crispy kimchi rice. Every dish contained an adaptation of a Puerto Rican flavor (think crispy pernil, escabeche, sofrito, pegao) but with a playful twist. The cocktails were similar, featuring local fruits and flavors. We were particularly impressed with the guava mule. The service was unpretentious and welcoming but extremely knowledgeable and was at the level of a Michelin-starred restaurant (attention Michelin folks--it's time to give PR its first star). Ambiance was spacious and sophisticated. There was so much attention to detail and we had such a memorable experience--the chefs clearly have a deep love for the flavors of Puerto Rico and do a great job of showcasing them with a twist. We would love to come back and try more of their seasonal fare next time we're back in town! read more

His place is insane! Insanely good! I would give it 10 stars if I could. We went in primarily for happy hour and stayed for dinner. First impression is the decor and it is beautifully designed space. I loved looking at all the different ways the place was decorated. It's a gorgeous place. As soon as we walked in the owner helped us find seats at the bar. It was busy, and rightfully so to come to find out. We started out with happy hour drinks and pork butt slider and fish tacos. Both of which were so yummy and we devoured quickly. Lol The bartenders were amazing and know their stuff! I forget his name because I am horrible with names but our bartender was super cool and you can tell he loved what he was doing and having a blast and also knew his craft. He made me a special strawberry margarita and it was perfect! We ordered 2 salad appetizers. Both stunning. The beet salad with the dill horseradish cream was beyond delicious. I could have ate a huge bowl of that! So good. We also ordered the mariscada! Must get! One of the best dishes I've had on the island. Salmon was cooked to perfection and the mofongo underneath with the sauce was stunning. My bf and are were so impressed. This is a restaurant run by husband and wife and they obviously know what they are doing! We had a great conversation with Amelia, the owner, and wish this restaurant was local to where we lived because I would be a regular! Keep up the greatness you two! I hope to be back! read more

My boyfriend and I dined here our last night in Puerto Rico. I decided to try the 4-course vegetarian tasting menu and he had the steak+avocado as an appetizer with the pollo al ajillo entree. Literally the best culinary experience we've had. The creativity and play on flavors within the tasting menu was exquisite, the service (our server was Angel!) was super attentive, and the drinks were very well made (I HIGHLY recommend the espresso martini). We will definitely be coming back the next time we visit the island. read more

The place seems to be trendy among the young professionals. The first impression was excellent, nicely decorated, good ambience, and inclusive (a pride flag at the host desk). Wow really think some of the reviews here are over the top, and highly misleading. 3.5 stars, at best? The food IS good, overall, and has some interesting takes. Appetizers were pretty mundane, but nicely shareable. Entrees themselves are pretty imaginative. But they're also small with no sides. For example, I had a filet of fish (forget what). Had a nice tasty sauce. But that was the only thing on the plate. No sides (and none available as extras). I do appreciate a lot of effort went in (for example, presentation) and the desserts are a pretty special highlight. Service is very friendly, although not what you get at restaurants that highlight their chefs; eg lacking any real guidance/excitement on food (or for sure, wine -- and list is wonderfully creative but with many unfamiliar producers and grapes). In no way as special as other reviews on this site describe. Drinks took twenty-five minutes (in fact didn't come out until appetizers were arriving -- that drives me nuts). Watch for silly extra charges: $1.50 pp water service fee, $1.50 extra for "skinny margarita" (yes, to subtract ingredients), 20% service charge built-in (not standard in SJ). read more

Vianda was our go to date and dinner nights. The menu is vegetable forward and changed every few weeks. I LOVE LOVE the batata bread, cocktails, vibe, and service. Every dish made a mark on your pallet. This place is very loud, so on a typical rush dinner night, you'll probably only be able to hear the people adjacent to you. When COVID hit, Vianda's out of the box thinking of serving set weekly menus to be warmed up at home was life changing. It helped us all cope with being on strict lock down for months. I felt so giddy every week finding out what meals Vianda would come up with next week. My favorite include: tom kha, burger, bbq, batata bread, ceviche, old fashions, the list goes on and one. Every time we're there we literally order from the entire menu. We're back in CONUS and we'll definitely miss Vianda. read more

Whoa! This place was OUTSTANDING. Everything was great, but nothing tasted quite like you were expecting it to taste. It was all marvelous. They are very big on farm-to-table here, so everything's local. The wait staff if very knowledgeable and there's a good chance one of the owners will come over to chat with you.
