When it is done perfectly the bagel, cheese and eggs become one making a cohesive sandwich with the bacon firmly ensconced in that delicious creaminess where everything is just working magically together. The trick here is getting soft folded layers of eggs that are not over cooked. To me Sal's makes the quintessential version. On top of this great New York breakfast classic sandwich, the iced coffee is money as well. Although off the beaten subway path it is worth the bus ride, or more conveniently, car or even still you can risk a criminal summons hopping on a bike. I got a classic BEC (ordered a 2 egg sandwich + bacon + american cheese, salt, pepper and ketchup) on a roll. I got lucky with a fresh batch of bacon, though it doesn't seem like ingredients sit for long as there's constantly people coming in and out or ordering on the phone. Fresh, hot and decently sized sandwich is all I need! Definitely coming back when I'm craving an egg sandwich!
