Had a great meal at the Waffle Lab. It was our first visit and won't be our last. I like that the waffle is a bit crunchy on the outside yet soft and chewy on the inside. We tried the chicken and waffles and the raspberry, bacon waffle. They were both very good. The savory, sausage/rosemary gravy was very tasty. The portions are very generous ( hello leftover for tomorrow) and plated to look very appetizing. The staff were friendly snd helpful. Cute, cozy dining area as well as some outfit seats for warmer weather. They have the usual beverages as well as a few alcoholic choices. Great breakfast or lunch stop with friends or a lazy weekend morning.

Pretty awesome spot, we were staying near by and wanted to get some amazing chicken and waffles and it didn't disappoint! It's a smaller quick stop spot so seating can be interesting but the food was delicious!

This is probably the best bang for your buck breakfast/brunch place in Fort Collins. They are very generous- lots of fruit, hella Nutella, and whip cream sky high (on the European waffle). It's very filling, making it well worth the price! I'm a waffle over pancakes person so I'm biased, but I feel the waffle itself was really well done too. The side of eggs I got to go with it was just some protein - nothing special but did the job. The staff are super friendly and I felt well attended to. Glad I gave this place a try before leaving Fort Collins!

Such a fun treat! The hubbs and I went for brunch and it was a sweet little outing. There are quite a few drinks, alcoholic and non, and cold and warm, on the menu. My spouse had a Bloody Mary for the first time, using a pickle and habanero 50/50 mix - it was a hit! I enjoyed some mellow mint tea, perfect way to gradually get the appetite going. His burger waffle was astounding - somehow the sweet waffle 'buns' balanced well with the savory burger and toppings. Super filling though, could probably be split btw two people. I went in for the maple bacon ( had to get something sweet to balance the savory). Love me some traditional waffle with raspberries and bacon - sweet and salty. And mine came with half a waffle, which was a great portion size for me. Bonus: gluten free and vegan waffles are an option! I also saw they offer catering, which would be great for sleepovers Only catch, there is only one batter - and it is incredible. But a different batter would be interesting. ¯\_(ツ)_/¯

So glad I ended up trying this place! I had the European waffle (Nutella, whipped cream, strawberries, and banana) and it was perfect. Their waffles are crispy and have a buttery flakiness to them that I haven't ever seen before. They also made sure to load it up with the fresh fruits! I was also really impressed by the service. My boyfriend ordered the sweet potato hash, but they were out of it. I guess they really wanted to make it up though because they gave him some of their perfectly seasoned, crispy breakfast potatoes as well as a full-size waffle (cinnamon sugar with cream cheese glaze). The sweet potato hash was only seven dollars and they gave him an entire waffle and breakfast potatoes instead for free ($16 value)! My friend had the chicken tenders with gravy and said it was wonderful, there was so much food he ended up with a whole extra meal. We will definitely be back!

The Chicken & Waffles - I liked the waffle by itself but it was too sweet with the chicken. I took it home and ate them apart. Big portion! Grilled cheese waffle was also pretty big. Beautiful cheese crust on it, looked really good. I also had a beermosa with the Sour (not sure what brand, sorry!) and it was delicious. Very tart, but that's what I like! It was my first time here and I got a little confused about bussing the table myself, I wish there were more directions about which trash goes where. But once we got stuff over there it was easy enough to tidy up.

I want a Waffle Lab where I live! I thought they were only a food truck so I was excited to see a storefront when we arrived. They had both indoor and outdoor seating open, so we sat outside to enjoy the weather. The number of creative options they had was overwhelming. I absolutely love liege waffles, so adding two of my favorite foods (raspberries and bacon) on top was sure to be a hit with the Maple Bacon Bliss. Although I was full, I honestly could have eaten another waffle and considered it! This place has their waffle making down.

Waffle was very dry and flavorless. Food looks good, but is boring and uninspired. Nothing we got for lunch was worth the $$$. Got the Blue Sky Breakfast. Eggs were overdone, tomatoes sliced sloppily and nothing seasoned. Gordon Ramsey would roast this place. I spoke with some of the staff, apparently one of the Managers frequently gives the kitchen staff and front of house alcohol to keep them motivated. If I wanted a drunk person to cook me breakfast I would just cook it myself. Explains the sloppy food and lack of care. Whoever the owner is needs to wake up and see that this place is crumbling faster than the waffle I was served. Update: Not going to email anyone directly regarding this. I would recommend the owner watch the security cameras and validate the information presented in this review.

HORRIBLE. Minimum 45 minute wait. We ordered to go then went to the splash pad around the corner to wait for our order. EVENTUALLY, it was ready. Take it to-go and they included ZERO condiments (ketchup for the burger, syrup for the waffles). Had to go all the way back for it. Waffles were DOUGHY and underdone. What an embarrassment of an establishment! The staff was rude too, didn't even apologize to people who were waiting an hour+. Plus tomato on my no tomato burger waffle.

They have hands down the best waffles in town. There's something about that batter - pure magic! I got the chicken and waffles. The waffle was fresh, the chicken perfectly fried and piping hot, the gravy was light and refreshing. The maple syrup tasted very authentic. My wife got the CYO Scrambled Eggs with Caramelized Onions, Avocado and Jalapeños. She loved it too. The potatoes on the side were crisp and delicious. Add to this the friendly staff - our host was great, kind and courteous! Parking can be difficult but the place is well worth it! Thank you Yelp for the offer to check this out.

Food quality and portion was awesome. Good size especially for me, I love to eat. The European was exactly what I expected, something to satisfy the sweet tooth. Chocolate was not overwhelming, good ratio to fruit:waffle:whip cream:chocolate The Philly Waffle was underwhelming in my opinion. I expected a savory-sweet take, but I think the sweetness from the waffle was a little too over bearing. Additionally the fries were cut in a very peculiar way. Very fine and smaller then anything I've had. It was almost annoying trying to baby feed myself these fries. It felt like I needed a fork to eat them but then it was weird to shove horizontal fries in my mouth. Great idea for a meal but not the best execution. Overall they have a fantastic menu and offer a variety of other waffle renditions of common meals.

Everything we tried was super yummy. The sweet waffle was the perfect "dessert" with the cappuccino. The chicken and waffles were so delicious the chicken portions are big. The best part is the gravy very creamy and savory. A must try!!

Wow! Amazing customer service. Our server was one of the best we ever seen. All the staff were nice too. Update: they just opened a restaurant so I was super excited but left pretty frustrated: dry/burnt waffles, 20 min wait for "fast" food, empty taps, fake maple syrup, and snarky service. Never experienced so much confusion as a patron. Get it together WL! read more

Best waffle I have ever had in my life (including my mom's, but don't tell ;)). Seriously delicious delicious delicious. I had the spicy professor and hubby had the chicken and waffles, but I am sure the rest are amazing also. I can't wait to try them all. Also LOVE the fact that they are parked the Patero's Creek Brewing Company's parking lot! A beer and a waffle?? It doesn't get much better than that! Seriously whoever thought that up is a genius. My boyfriend and I went to their new restaraunt! It's pretty big and has outdoor seating. You order at the counter and then they deliver the food to your table. We got the chicken and waffles with sausage gravy which was amazing, and the waffle with a brat on it. The brat was sooo good and had a delicious honey mustard sauce on it. The service was super quick and we had our food about ten minutes after ordering on a Saturday night. We can't wait to come back! read more

I used to pass this place all the time but figured they were just waffles so they weren't worth stopping for. So wrong. So glad I finally tried them. Now I have to go for my chicken and waffle fix every weekend. All of the waffles I've tried here are amazing but I keep going back to the chicken and waffles (no gravy because of an allergy) and it's the perfect breakfast/brunch/lunch. Service has always been fast and friendly. Chicken understandably takes a little longer but not much longer and totally worth it. read more

This is more of a warning than a review. I had the breakfast sammie today and boy does it have A LOT of cheese. So much that I could only eat less than half because I got stomach ache (and normally I can finish almost a whole waffle meal from there). I would suggest asking for it with less cheese if you're not super cheese tolerant. Also, my brother had the sweet potato hash and absolutely loved it. Said he would go again for it alone. read more

I've been to The Waffle Lab twice. The first time I had the European, which was fantastic (5 stars for that one). The latest time, I had the breakfast special (I actually ordered the Northwest Special, but they must've misheard me). All the ingredients and flavors of the toppings were great (including a fried egg!), but I thought the waffle was too sweet for the savory toppings, hence the 4-star rating. Wife had the grilled cheese with ham, and I had the same sweet-vs.-salty issue with that one. When I go back, I will order from the sweet side of the menu. read more

I came here with my coworkers after one of our night shifts. The Blue Sky Waffle was incredibly savory - bacon, avocado and a cage free egg on a crisp and slightly sweetened waffle. They have a large range of waffles for every palate. It makes staying awake all night worth it, if we end our workday with a breakfast like this. read more

So totally worth the bike ride from Loveland!!!!!! I had the Braffle (beer brat and sauerkraut on waffle) and my husband had the Voodoo Monkey (waffle w/peanut butter, chocolate sauce and fresh raspberries). These were seriously over-the-top delicious. Sooooooo freaking delicious. read more

Easily the best waffles I've ever had, gluten free or not. We had the gluten free waffles and eggs. and it was sooo good! There was a dog in a hot car in the parking lot that we reported to the manager, who promptly found the owner, who took care of the situation. Perfect !!! read more

Salmon on a waffle. What!? Oh yes, and it's so much more amazing that you can imagine. Every flavor is in balance. They're creative with their combinations, but not overly so - they're not trying too hard to make the elements work together like so many places here are by using too many flavors so the whole dish ends up either conflicted or completely overwhelming. I finally feel like Fort Collins is just starting to creep toward my food expectations (I've been called a food snob), and Waffle Lab is a clear indication that we've taken a turn for the better in the level of high quality, sophisticated food they offer. This place gives waffles and food trucks an AMAZING name! I read about Waffle Lab on the food blog Feasting Fort Collins and knew I had to go. The truck has a great location, a two minute walk from the heart of Old Town Fort Collins and right outside a microbrewery where you can sit and eat if you so chose. My husband and I split Chicken and Waffles (there special that week) and the spicy professory- both were delicious. The waffles are a perfected version of a traditional waffle and the savory toppings brought out the waffle perfectly. The owner eagerly discussed with me other food trucks in the area and said that the food truck community plans to have food truck parties in their parking lot with music and all shortly. I was just there 2 days ago and have already told almost everyone I know in the area. read more

This place was good. Saw them outside of the New Belgium Brewery. I had the special of the day. It was a waffle topped with a brat and sautéed onions and peppers. The waffle was very flavorful. Only problem was the brat was super skinny and fell apart. All in all it was still tasty. read more

This was my second time here. The first time I had the grilled cheese waffle and it was superb. Great flavor, everything was cooked to perfection, and the service was quick. Today, I got the french toast waffle and it was OK at best. The service was still quick but the quality of the waffle leaved very little to be desired. I'll definitely go back there, but will go back to something I enjoyed on the menu. read more

Yum yum yum! I was so happy to see a food truck in Fort Collins, and the Waffle Lab certainly did not disappoint. Hands down the best waffle I've had in my life. I'm not usually a big waffle fan but this one will keep me coming back. The way the sugar caramelizes the outside of the waffle for a delectable crunch is wonderful. I went for the maple bacon waffle this time, but can't wait to try the savory versions like the grilled cheese waffle. Honestly I could devour this waffle plain. I'm amazed that this place wasn't busy on a Sunday morning, not even a line. Come on Fort Collins- delicious waffles strategically located next to a brewery?? Plus, the owner was super-friendly, coming by to chat with us and the other patrons. Highly recommend! read more

Just go here! The waffle alone is amazing, but the dishes they accompany are just as good. Now that they have a restaurant (in addition to the food truck), they have a liquor license, making this a good brunch spot. read more

Awesome experience. The staff was friendly, helpful, prompt, attentive and any other complementary word known. The Waffles were fun to choose. I had the Bananas Foster and it was sweet and delicious. Established in 2012.

The Waffle Lab is the brainchild of founder Bill Almquist, who desired to bring the magic of Liège waffles to Fort Collins, CO. Driven by an entrepreneurial spirit and recognizing the lack of anything similar in the area, Bill began experimenting with Liège waffle recipes and sweet and savory combinations until finding just the right ones. Though initially conceived as a storefront café and restaurant, Bill decided to first test the unique food concept in the form of a mobile food trailer--the name of which was inspired from the home kitchen where he first carried out his culinary experiments. The Waffle Lab was born. The Waffle Lab first opened its window in April 2012 in the parking lot of Pateros Creek Brewing Company in Fort Collins. The Waffle Lab quickly became a hit and continues to grow a very loyal following, and since then, has expanded its locations, events and offerings.

Meet the Business Owner: Bill A.

Bill Almquist arrived on the Front Range of Colorado in the summer of 2011, still a bit damp from the Oregon climes where he attended grad school and worked for several years as an urban planner for the city of Eugene. Prior to pursuing a Master's Degree in Planning from the University of Oregon, Bill had spent considerable time in the restaurant and hospitality field as a waiter, a cook, a bartender, a tour guide, and a manager, among other positions. Bill received his undergraduate degree at Pomona College in California, which set him off on a rich journey of personal and professional experiences around the country and around the world. He brings a vast array of skills to the dining table, including: top-notch customer service, a dogged work ethic, a creative eye, excellent attention to detail, a systems thinking approach honed through his planning background, and a deep personal commitment to sustainability practices.

My breakfast, which included a large pancake, an egg and a link of sausage was priced at $10 which was an amazing price. Both of us went home with leftovers. Our server was friendly and attentive. She may have had a bit too much energy if I'm being honest, but I'd rather that than someone who is lackluster and boring!

My friend started and ended with the same appetizer and dessert, but otherwise chose the dal makhani, chicken vindaloo, and garlic naan. We both had chai to drink. Everything was so good! I have to say that I was glad to have asked for mild/medium spice - it was right at the edge but not over my tolerance level. If there was a reason not to share combos it would be because we'd fight over the momos - it was a good thing we had 2 orders. Both dals were tasty, but I think I will stick with dal makhani in the future. I wish I could remember which curry I had because it was unlike anything I've tried before and delicious. I had a taste of the vindaloo, too - I enjoyed the bite I had, but with the spice level I couldn't have eaten a whole serving. The gulab jamun was the best I've ever had - completely soaked through with the syrup giving it the most delightful texture. My lunch buddy likened it to homemade. The service was helpful but not overbearing - offering opinions on the menu when asked, checking in to make sure we were happy, explaining a little bit about regional Indian food (eg the inclusion of Indo-Chinese on the menu), etc. It was nice that the owner stopped by to thank us for coming in, and that our server kept the chai flowing. I could have happily sat there drinking chai and enjoying the calming ambiance (on point with beautiful blue walls and light fixtures) all afternoon if there weren't the small matter of having to go back to work.

I wouldn't complain if I was at a park but I am at a BREWERY. Kids are screaming and running around, and that is not relaxing.
