I was disappointed in the BBQ pork ribs at When Pigs Fly BBQ. I grew up in Wichita KS and the pork ribs from Rudy's Ribs were a regular Friday/Saturday treat for me and my best buddy -- who would become my husband. Unfortunately, Rudy's is long gone and the only ribs I could find were overly spicy and a mixture of several types of beans as a side. Won't be eating here again. I was surprised by all the positive reviews because hot and spicy is not generally not standard fare in this Midwest town. Sigh.... Guess I got spoiled. read more

I have a local BBQ catering business and have many years of pitmaster experience so I tend to think I have a more informed point of view than most on BBQ as a subject. It was a quiet, very clean restaurant with very friendly and attentive staff. Here's what I thought of the food: Ribs: There's no rack of ribs you'll get locally that will even come close to the quality of these ribs. They were not over-rubbed and the smoke flavor was clean and not overwhelming. They were cooked to the perfect temp as not only were they extremely tender but they still held together. Whoever made this rack knows exactly what they're doing. Truly a masterful rack of ribs. 9.5/10 Brisket: Had good flavor but the brisket was dry and pot-roasty. This was the only disappointing aspect of the meal. It was also a bit overcooked. I bet they have better days with brisket TBH 5/10 Slaw: Extremely flavorful, creamy and complemented the meal experience quite well. Green Beans: Any southern food restaurant would be proud of these. Gotta love garlic though. If it weren't for the brisket, this would be 5/5 stars. If I could do 4.5/5 stars, I would. The ribs are truly brilliant. read more

Fly In And Have Some BBQ I was traveling through Kansas and we stopped in Witchita for dinner on the way through. Because I am a huge fan of BBQ I looked for a good BBQ place and found When Pigs Fly as an option. The location is a strip mall style building and as you walk up you can peek through the windows and see the typical checkerboard style set up. As we walked in we were immediately hit with smoked meat scent which was wonderful. We walked up to the counter and chatted with the folks working. They were very friendly and helpful. We asked for recommendations and I ordered the chopped brisket, beans and coleslaw. The brisket was juicy and tender, the sauce was sweet but with a hint of spice. I enjoyed it very much. They prepared the brisket without any additional spices to take away from the meat itself. I typically like my brisket "Memphis" style, meaning it you top it with coleslaw. I added the slaw to my brisket and it added a nice touch to the meat. The beans good but not spectacular. As we were eating the staff was setting up the Christmas tree and seemed to be having quite a bit of fun. They also chatted with us and made us feel like we were not the out of towners that we were. I had dinner with my mom yesterday and it was delicious! I chose pulled pork, brisket, and Mac and cheese as a side. My brisket was cooked to perfection and didn't need sauce, but I loved the sauce (mild) and added it anyway, making it even better. The pulled pork was a bit salty for me, and a couple of bits had an off flavor (perhaps the meat had been frozen previously?). It was still good, but not quite as good as the brisket. I chose Mac and cheese for my sides, and they were pretty good- not the best I've ever had, but still very tasty. My mom had the ribs and brisket dinner, with baked beans and potato salad. She didn't care for the ribs (I ate one and thought it was fine, very meaty and tender) but agreed the brisket was divine. She loved the potato salad and said the baked beans were excellent. The employees were friendly, the restaurant had free WiFi, and the layout was spacious with cute decor. Parking was easy, especially for prime time on a Saturday (on Labor Day weekend). The price was a bit high but the food I think is worth it. I'm deducting one star because of the off flavor of the pulled pork. The meat was not spoiled, but it had a freezer-burnt taste in a few spots. The rest of it was quite good, and the brisket is definitely worth trying. Only briefly in Kansas and we had to have Kansas BBQ. Found this place online and we were sold with the name "When Pigs Fly" due to our family connection to flying pigs. Glad we stopped. Got the family meal with 1.5 lbs of brisket and pulled pork. All just right. Baked beans were wonderful. Coleslaw was uniquely delicious. Great portions. Got a loaded baked potato with brisket too. MASSIVE! Wonderful flavors. All of us, including the kids, preferred the "hot" bbq sauce. It wasn't as spicy as our Rudy's bbq sauce in Houston. It was just right. Has some sweetness to it. Kids were practically licking the bbq sauce bowl! Was talking so much with one of the owners that we forgot our meat and were a little ways down the road before noticing. I called to find out that one of the owners was already driving to meet us knowing we were eating nearby as a picnic. Outstanding service from everyone. As I braved the dark, dangerous, and unfamiliar streets that were West Wichita during rush hour, I was hitting myself for embarking on such a foolish venture. The West side? Really? It's a completely different world over there. No one knows what these people are capable of. I was out of my element. I was scared, alone, and didn't know where I was. I was spotting Le Monde Cafes and Taco Shops left and right, like ghosts from my East side's past. I wanted to go home. But then, from the middle the Crossroads mall, shined a light like a beacon into my soul. Or my stomach - they're located in roughly the same place. I saw a figure, like an angel, majestic wings beckoning me to it. Turns out, the angel was actually a pig with aviator's goggles, and the restaurant was When Pigs Fly. It should be no surprise that the Choys spent six years at Pig In, Pig Out, because the quality of the food and much of the same techniques are employed here in their own place: roughly the same sweet sauce, the same trio of baked beans, and the potato salad. They also share a similarity in cooking their meats, which is to say they both taste excellent, with a masterful employment of the smoker to create many meat masterpieces. One thing PIPO doesn't have is the Bulldozer, an excellent sandwich of 1/4 brisket, a big slice of turkey, and a split sausage. You would think that trying to contain such a sandwich between two halves of a bun would be unruly, but it held together surprisingly well, the flavors of all three animals converging into a tasty meatgasm in my mouth. My only complaints about the sandwich are the lack of pulled pork - simply because I like the stuff - and the brisket itself wasn't as warm as it probably should have been. Despite my well-noted dislike for the sweet KC-style barbecue sauces, I was surprised to find me using more of it than I thought I would on my sandwich, the sweetness not nearly as overpowering when it has to fight all that meat for my tastebuds. Like many sauces I've tried, there's virtually no difference in spiciness between the hot and the mild. I like barbecue places experimenting with their meat, and the pulled pork tacos I saw on special during my visit, combined with the Brunswick stew I read in another review, lead me to believe this is very much the case. Combine this with the friendly atmosphere (the staff seemed to know everyone on a first-name basis), and the killer 'cue, and you're good to go. When interviewed by the paper, Brian Choy, in talking about his new restaurant, mentions that he feels there's not a lot of good barbecue in Wichita, and I would agree, though with the opening of When Pigs Fly, we can chalk up one more for the good guys. (As an aside, the design and flow of this restaurant and its website is very well done for a new business. It should be no surprise that the elder Choy is in the marketing/advertising business.) (As another aside, note that the address is 7011 W Central *Ave*. Omitting that suffix leads Google Maps to believe that the place is located on the very edge of town, as I discovered the first time I attempted to find this place. On a Friday night with a waiting line nearly to the door, I was hesitant to enter my new favorite bbq place for a second go around. Surprisingly my wait was only a few minutes as one man handled the register and knocked out the front pass like a pro. Of course the front pass wouldn't of been busy if it hadn't been for the kitchen crew keeping up with the customer rush. Brunswick Stew was on the specials menu and boy it was. Basically think of vegetable stew, with a base of their sweet and tangy bbq sauce, now add pulled pork. Lots of pulled pork. Most Impressive. And ya know what else? Their ribssss. I love em, I love em. Dry rubbed with a salty something, it provides a crispness that is skin deep, leaving my teeth to slide into the moist, fall of the bone meat. Ooohhhh baabyyyy. All this aside, I will testify to two very mild failures. With a to-go order of stew, one would expect a plastic spoon to be provided... didn't happen. I'm not BBQ aficionado, so take it for what it's worth, but i wasn't impressed with a 4.5 star rated BBQ joint on Yelp. I got a take out order of ribs and hot links with sides of cole slaw and baked beans. I actually liked the sides more than the protein. Most of the orders come with a side of bread and sauce.. the bread is just your normal loaf of bread and the hot BBQ sauce didn't have any heat to it. The hot ilnks were good, but I didn't get any kick like I was hoping for, but it was moist and had a crisp casing. The ribs were cooked where the meat comes easily off the phone while still having some bite and that's how I think it should be. It was lacking in some salt for me (can't believe i'm saying that because I usually have a low salt tolerance). The close slaw was crisp and not too much mayo. Baked beans were really good, if it was cooked with some bacon, it would probably be even better. Service was really good though and while I was placing my order, it seemed like there were a lot of regulars. The person taking the order (Brian I think) was really nice. There's plenty of room to eat and it would be good for large groups. I would come back, but not like I'm dying to go back either.
