Think back to before Panera sold out to Corporate cost-minimizing, it was even notably better than that. The spicy calabrian caesar is simply a perfect lunch. The lettuce was crisp, the chicken was fresh, the chilis were thin-sliced and pickled to add a more delicate heat and acidity, the parmesan is shaved reggiano to add a bold cheesy bite that can stand up to the spicy caesar dressing. And I had crispy shallots and quinoa on mine, which was excellent. Even the croutons were fresh. I read a little online and it's clear by the attention to the food and the community fundraising / philanthropy that these are owners that are looking to invest in the neighborhood and the community, not checking some excel spreadsheet on their phone from a resort in Italy (looking at you, Panera. Nobody made you sell out). What a fantastic experience.
