The pandemic has produced a lot of home bread-bakers. It has not, I'd guess, produced as many home biscuit-makers. Why? Biscuits are shockingly hard -- the temperature of the ingre, the proper way to cut it into the flour, the proper amount of rising agent and time (and honestly luck) and all the other tricks that separate a perfectly crisp, fluffy, tall biscuit from a hockey puck are secrets you have to earn. Many restaurants don't have it totally down. Which is what makes Wise County Biscuits so special. It's not just an amazing biscuit (look at that height!): It's an amazing biscuit with a habit of showing up where it's needed most, whether that's outside of Adda Bazaar or in the Bloomfield Saturday market. We "made our own," combining that awesome biscuit base with sausage, pimento, and a dippy egg. I practically had to unhinge my jaw to get it all in one bite, but it was worth the effort. It was soft, warm, comforting, and bursting with flavor; in other words, the perfect way to send off one of the last cold mornings of a Pittsburgh spring. I hope Wise County opens up a brick-and-mortar shop some day. It would be a gift to whatever neighborhood it settles down in. But as it stands, this pop-up is a gift wherever it goes. For now, I'll keep following Wise County Biscuits around like I'm following a Grateful Dead tour, and count myself lucky: It's a lot easier, and just as rewarding, as trying to bake one myself. read more

Delicious! Well worth the wait this morning at the Bloomfield Farmers Market. I got a biscuit with a fried egg, cheddar cheese, and sausage. Normally I prefer over-easy eggs, but I asked for an over-medium fried egg so that the yolk wasn't as messy, and it was perfect! The sausage added a really nice level of salt and flavor to the breakfast sandwich. I'm curious to try pimento cheese in the future. We'll definitely be back. read more

Today, Wise County Biscuits set up shop inside of Leaning Cask. I was expecting to see a food truck, but they were able to do their thing inside. We stopped in here on a Wednesday morning around 10:30. It was busy but we were able to find a table and get served our meal quickly. I enjoyed my 2 egg breakfast. The biscuit was perfectly fluffy and buttery. The bacon and potatoes were so crispy! They also had lots of items like books and coloring books to keep kids busy which was a sweet touch. The gluten free biscuits are quite amazing. Almost as if they aren't gluten free but I believe them. Top shelf ingredients and that counts for a lot. Love the order at counter setup. They are large, fluffy, yet firm! I had a pimento cheese, sausage, egg biscuit. The sandwich was very filling and satisfying. Was about $7. I stopped by here earlier today with my wife. Wise County Biscuits was set up at Coffee Buddha as it often is on weekends. Since my wife loves biscuits we decided to stop on this day. Wise County is a mobile food stand, so there's not too much to say about the place. They cook the biscuits and toppings on a flat top underneath a pop up shelter. The tables which form the perimeter of the tent are covered in a yellow gingham tablecloth. For my food on this day I decided to go with the your way and so did my wife. It is a biscuit with a fried egg and then you can choose two more toppings to put on it. I went with the pimento cheese and bacon jam while my wife went with the sausage and pimento cheese. After placing our order we stood around for about 7 minutes waiting for our food to be ready. While we were waiting we heard that the food stand is called Wise County because that's where the chefs dad grew up in VA. Since it's his recipe for the biscuits, this makes a ton of sense. In any case, once our food was ready we hopped in our car and headed home to eat it. The biscuit here ended up being quite good as it was flaky and buttery and held together even with the ingredients on it. All of the other ingredients were quite good as well with the fried egg having a somewhat runny yolk, the pimento cheese tasting great and the bacon jam providing a salty and sweet taste to the sandwich. My wife also really enjoyed her sandwich and the piece of sausage that I tried from it had a great rosemary flavor. The bottom line for me is that I would head back here again in the future. All of the food that we had here was really good and both my wife and I loved it. read more

Have to give all the credit on finding this place to the boyfriend. He found these guys (not sure how) and figured out that they'd be at the Bloomfield Farmer's Market on Saturday. So we geared up and went... He ordered the Sally's Snack breakfast sandwich + a biscuit with Tennessee Sorghum & Butter, and I ordered a simple make-your-own one. We were shocked and amazed at HOW GOOD these made-to-order sandwiches were. This place (and biscuits in general) are severely underrated. We currently have plans to see these guys again this weekend at the Bloomfield market--but I couldn't wait that long so I went and had a Sally's Snack at their booth in Market Square's Thursday farmer's market. Gluten free biscuits!!! And here I thought I'd never have a good biscuit again. These guys kill it. Seriously, they are just like a regular biscuit (don't worry, I remember the glutenous ones). I had the chicken salad biscuit and every bite was phenomenal. You can totally tell all ingrediants are freshly made. Right now you can find them at farmers markets and a slew of other events around town. Definitely make sure to follow them on social for their schedule. I think they're slowing down into the colder months, but I'm for sure placing my holiday biscuit order with them! They offer a handful of sandwiches and spreads, like fresh strawberry jam and breakfast sammies. They even have a pimento cheese biscuit! You can also grab frozen biscuits to take home with you. Our favorite breakfast sandwich in the Burgh! During less busy weekends my husband and I love to visit the truck at Coffee Buddha and grab a biscuit and coffee before starting Sunday errands. I typically get the build your own with the cheddar, bacon, and fried egg. The pimento cheese and sausage gravy are also too options we have enjoyed. For mothers day I ordered the special package with 6 biscuits, sausage gravy, and berry compote with cream cheese and it was a hit!
