When two of Miami's best go head to head ....except this time they teamed up instead. Zitz Sum and Stubborn Seed, two Michelin starred favorites of mine, did a one-night collab and it did not disappoint. Standout of the nigh for me was the Koshihikari rice with black garlic butter, wagyu beef marmalade, gruyere, and egg yolk all mixed together ... texture and flavor were on another level. The Hokkaido scallop crudo was phenomenal too, bright and clean with that acevichado kick. And the prawn toast with shrimp sausage? Indescribable in the best way, one of the best bites of the night. Dessert had me skeptical going in, but the white chocolate parfait won me over completely .. strawberries, calpico, white chocolate, basically a grown up pavlova. Despite nice photos I shared to support this business and it's strong reputation, our experience unfortunately did not meet our expectations and I am really shocked this place has any kind of Michelin recognition. One thing that was particularly disappointing was what happened after our visit. I reached out to the restaurant through social media to share our concerns and was told that someone would be contacting me directly. After weeks passed without any response, I followed up multiple times myself, yet I still never heard from anyone. That lack of communication was just as disappointing as some of the issues we experienced during dinner. Our evening began with a poorly situated table. The restaurant's air conditioning was apparently not working, and a portable AC unit had been placed in the corridor, blowing directly onto our table throughout the meal. We politely requested another table, but our request was declined, despite several empty tables remaining available for the entirety of our 90-minute reservation. What made this even more frustrating was seeing another party of two, who were seated after us, moved to a quieter, more secluded table away from the draft. The appetizers were excellent and set a promising tone for the meal. Unfortunately, the timing of the main courses was a significant issue. My husband's fish arrived well before my steak, and despite intentionally waiting, his meal became cold. He ultimately finished his entire entrée before mine was ever served. We even asked our server if there had been any confusion with the courses, but the delay remained unexplained. The pacing of table service could also be improved. My husband and I both work in hospitality, so we may notice these details more than the average guest, but there were multiple occasions where empty plates remained on our table for an extended period. By the time guests feel the need to stack dishes themselves just to create space, it's usually a sign that clearing has been delayed too long. The table itself also felt quite cramped. There was no practical place to store personal belongings, so I ended up holding my purse on my lap for the entire dinner. As for the food, there were several highlights. The wontons were spectacular, and the broth was exceptional. The pasta was cooked perfectly al dente. The quality of the steak was excellent, although it felt like it could have benefited from an accompanying side. The portion of hollandaise (or mayonnaise-based sauce) was quite generous relative to the size of the steak. My husband's fish was light, fresh, and paired beautifully with the tender farro. The wine selection was decent and offered value compared with similarly priced wine lists elsewhere. The staff were friendly and pleasant throughout the evening, even though we were disappointed that our seating concerns could not be accommodated. One additional area for improvement: when we asked about purchasing a bottle of wine, our server initially assumed my husband wanted a single glass. While this was a minor misunderstanding, asking a brief clarifying question before placing the order would help avoid confusion. Overall, there is clearly talented people in both the kitchen and front-of-house team, and the quality of the food demonstrates that. However, inconsistent service, poor course timing, the lack of flexibility with seating, and the complete absence of follow-up after management indicated they would reach out ultimately left us disappointed. read more

Honestly had to review the menu for this review. We started with the bling bread, the honey butter was a nice touch but was a pretty small portion of flat bread for 16 dollars. We then shared the wonton in brodo, potato agnolottie and the black grouper. The potatoe agnolotti was my favorite dish, with good texture and savory flavors. Our server advised as that the wontons and potatoes were two dishes on the larger size and while the servings weren't miniscule, there were 6 chicken dumplings, I would not describe any of the portions as large. I'm struggling to remember the flavor of the black grouper. It came with tiny slivers of squash. The restaurant does not serve liquor, only wine, beer and wine cocktails. I was surprised not to see sake on the menu. I opted to skip a drink and my husband just had a beer. Our service was good, but overall this place is not somewhere I would go again, for a special occasion or with guests. It just wasn't memorable and for that price I'd expect dishes I'm dreaming about days later or to come hope with leftovers for lunch and dinner the next day. Talk about a superior and extraordinary dining experience. I can't believe how's just tucked away and you'd literally miss it. I guess it makes it a hidden gem and those never ever disappoint. Started with a white wine, these are the dishes I opted for...summer salad, scallop crudo, koshihikari rice, black grouper and parfait. Need I say, everything single dish was a 10/10. Summer salad was perfectly balanced between the plums, nectarines and avocado and a little spice from the agua diablo. An explosion of flavors in every bite. The scallop crudo was like nothing I've ever tasted...perfectly cooked scallop with a little kick. The grouper was the star of the show...just perfection. I've been to Zitz Sum twice, and both times have been amazing. I like that they're always changing their menu because each time felt like a different experience. We started off with the bing bread which comes with a delicious butter with furikake. We also ordered the steak tartare. It was topped with carrots and I believe had some type of oats/granola inside. It all meshed together so well. For our main we ordered both the wontons and dumplings. We also ordered the cod fish which was one of my favorite dishes of the night. I remember coming to Zitz Sum when it was a pop up in this Gables space, and having it be a permanent location is a joy. Would highly suggest going in as tapas style and sharing with the table. We started with a bread and fruitcake butter, and wow what a stunning combination to start the night. We also had a hibachi with some dragon, fruit, seeds, and citrus, and what a bright vibrant bite ( say that three times fast). The dumplings were tender and cooked well with a salty umami broth that just added an extra layer of complexity to the bite. After coming here a few times I have to say that this week was probably the most disappointing of all others. As soon as we walked in you could feel like the extraction system in the kitchen was not working properly. The restaurant had lots of smoke in the dining room area and at the end we left smelling like the kitchen. After seating, we were greeted nicely and our waiter was super friendly and attentive. They brought us our seasonal menu and July to me, has been the weakest of our visits here. We had wonton in brodo, scallops crudo, a rice dish and the snapper. The wonton was a bit tough, not very delicate, and the brodo... hardly any. The scallops crudo were very nice and super flavorful. (Probably the one good dish we had). The rice as it was called was more of a corn and bean dish than rice... also it had something that was rather sour to taste, that simply didn't work with that dish. The snapper was okay tasty dish but nothing memorable. My POV is, when I come to these restaurants that have may have a Michelin recommendation or have that hype ... my expectation is to leave with at least one or two dishes that I would say, "I would come back just to have that again". Zitz Sum is the sister restaurant to Dojo Izakaya. Having just tried Dojo, we wanted to try this spot immediately. The service makes you feel at home. Our server was great. The menu frequently changes, so the items we had will likely be gone soon, but definitely get the bing bread, which seems to be a permanent fixture on the menu. Came to Zitz Sum for the first time with friends two weeks ago. Their menu is currently focused on spring, and it was so good that I had to come back with my husband for date night. At this point, I've pretty much tried the whole menu--and I can confidently say there's nothing I didn't like. Of course, there are a few standouts you must try: the Bing Bread, Wonton in Brodo, Steak Tartare, the Bass, and that Carolina Gold Rice (it's unreal). Every dish is beautifully balanced--flavorful, creative, and just really well-executed. They also offer a tasting menu with a wine pairing option, which is such a nice touch if you want the full experience. We opted for à la carte this time, but I'm already planning to come back just to do the tasting menu. It's a great way to explore their seasonal concept and try dishes you might not have ordered otherwise--especially when paired with curated wines or sake. Speaking of drinks, their beverage program is super creative. They don't have a full bar (just wine and sake), but the cocktails they craft from that are really impressive. Thoughtful, fresh, and perfectly paired with the food. Service was outstanding. We ordered a bottle of wine, and I don't think our glasses went more than two minutes without being topped off. I am not really sure how this place got Michelin recommended. We had the tasting menu, which started off strong and progressively got worse until it fell completely flat. The bite size apps are pretty nice, I really enjoyed the caviar crisp. The chicken thigh dumpling and wontons were also very good. The watermelon bite palette cleanser was one of my favorites. Then the entrees came. I am always a tasting menu enjoyer, and I believe a good tasting menu saves its best tricks for the main show - that is not the case here. The entrees were all very average. The "wagyu" was fairly tough even when cooked med rare, the sauce did nothing for the flavor. Mind you, the "Wagyu" is a $45 add-on. I keep putting "Wagyu" in quotes because I've had plenty of Wagyu, both Japanese and non Japanese, and this was very clearly not Wagyu - or at BEST the bare minimum of what defines Wagyu. The cod was basically just a grilled cod with some champagne foam that added no taste, we ate less than half of it. The rice dish was the best of the three entree courses, but that isn't saying much. Then came dessert. The white chocolate parfait was legitimately disgusting. I've never had a dessert repulse me like this. The texture is not right, you're getting a crunch with a soft bite with a gelatin at the bottom. It's actually vile. I've never in my life had a dessert I hated this much. The wine pairing was awful as well and made zero sense alongside the dishes they were served with. Why are we drinking a herbal red wine with our apps? Why was the best wine of the night saved for the very end and paired with a strange chunky dessert? This place is an unfortunate example of a big problem with the Michelin recommended list; cramming too many ingredients on a small plate in an effort to appear "luxurious" does not always result in a good dish. At this restaurant, it often results in a bad dish. I understand the menu is seasonal, but this must be a brutal season. We will not be back. read more

I used to frequent No Name Chinese and since Zitz Sum opening, It's been on my list to check out. My friend loves it here so she took the liberty of ordering. It's a small menu so you're pretty much going to order about the whole menu. Everything is meant for sharing and tasting. Bites are like Flavor explosions in your mouth. my favorite dishes of the night were the steak tartar and potato dumplings with truffle. Packed with flavor. My friend mentioned that dishes change often and the menu did have the date for the current month. I saw some things posted in the pics that they no longer offer. I will warn that even in sharing dishes are small. I feel like this restaurant is really meant for a tasting experience. I knocked off a star because they don't really have cocktails only like sake tinis and wine. And they were served in small coupe glasses. Two gulps and it was finished pretty much. If you dine in Miami, you know the difficulties there are when deciding on a place to eat. The many (many) options to choose from. Is it actually good, or is it just overhyped? Are the plates Instagram worthy, but not tastebud worthy? However, once you sift through these questions and the array of restaurants you can reserve a table at, you'll start to find the gems. The places that do good food, good service, and good vibes. Zitz Sum is one of those places. Not surprising of course, given their bib gourmand status. But it's another thing to actually try the plates that earned this recognition, which you totally should. To start things off, the ambience in the place was great and our waiter was fantastic. He was super knowledgeable about the menu, filled us in on what dishes are new/seasonal (check out my pic of the menu) and which are mainstays, and gave us his recommendations. Lucky for us, nearly everything we were thinking about ordering was similar to the plates he was ready to suggest. We got the bing bread, steak tartar, wahoo crudo, wonton in brodo, and charred cabbage. The bing bread was served hot and soft and the sweet Florida honey butter it came with was divine. The steak tartar was my favorite dish of the night and I haven't stopped thinking about it since. The beef was tender and seasoned well, and the ramen egg it sat in was perfectly chewy and salty. This is a steak tartar like you've never had before. The wahoo crudo was unique and I was hesitant at first about the thin banana slice its topped with (I'm not a fan of bananas), but I trusted the process and chef and all the flavors really came together and paired well with each other. The wonton in brodo was my second favorite dish of the night. The broth was flavorful and cozy, I was literally sipping it after all the wontons were eaten. And the wontons itself? Soft and packed with tasty chicken. Finally, the charred cabbage. Don't sleep on this dish! It was more fulfilling and flavorful than you ever thought a cabbage could be, and the char on it gave it a nice punch of heat. At the end of our meal, we talked other Miami spots with our waiter, exchanged restaurant recommendations, and learned about Zitz Sums' sister izakaya restaurant (called Dojo, which we will definitely be trying). Overall our favorites were definitely the dumplings bao buns and French toast dessert. I personally really liked the steak. Fantastic speakeasy of a find that is well worth it's Michelin bib gourmand award. Headed by Chef Pablo Zitzmann, his previously experience working for Nobu and the wonderful Asian dimsum fusion restaurant of No Name Chinese, Zitz Sum has some of the most unique elevated Japanese and Chinese fusion dishes I've tasted! There were so many great options on the menu when I went in August (menu seems to change every month and season) that I was so grateful there was a tasting menu option for $85 which definitely filled me up. The restaurant itself is tucked away in a business building so don't be afraid to just enter the lobby and the front desk will direct you accordingly. I was able to grab a reservation on a Saturday evening without too much difficult and was sat quickly. My waiter was very attentive, explained the different choices on the tasting menu, offered his recommendations for cocktails (I got the matcha ginger cocktail, which was so unique I highly recommend!), and checked in on me frequently throughout the tasting menu. As the tasting menu likely changes per season, I'll highlight some of my favorites. The oysters had such a unique savory profile and the Serrano pepper kick was strong! The arepas with basically unagi on top was a work of art; perfect fusion of cultures and the texture seeminglessly blends between the cheese filled corn arepas and the smoothness of the eel. I loved the chicken wontons in brodo shoyu broth, the savory broth was so nostalgic to eating soup wontons as a kid. The grouper was somewhat bland, but the koshihihikari rice was next level. I asked my waiter and the chef describes the dish almost like a tiger rice with pumpkin seeds and a squash puree that holds the whole dish together; it reminded me of a thick savory congee, such a unique and delicious combination. Sending with the French toast was extraordinary, freshly fried outer layer with the expected soft pillowy inside you'd expect of japanese bread paired perfectly with a scoop of vanilla gelato on top of crispy peanut butter flakes. Delightfully unassuming. This restaurant is tucked away inside of a financial building. You would never guess it's there. It ties together variety of culinary delights from around the globe. this was a great date night out. We did the tasting menu. The food is definitely five stars. I took away one star because when they asked if there were any dietary restrictions, I let them know. I could not have spice or anything acidic at the time and this was not taken into consideration after I was reassured that certain dishes would not be too spicy or acidic. Unfortunately there were a few that I was unable to eat completely so my husband had these. The server noticed I was not able to eat it and offered to bring something else, but at that point I had lost my trust and did not want to risk it a little frustrating when spending so much on a tasting menu however it did not take away from the fact that the food itself was well executed. I was so excited to try it because i had heard so many great things about the menu, and read that it was one of the top 50 restaurants in the US. However, the disappointment began with the limited drink selection, only featuring wine and sake-based cocktails. The small menu was further underwhelming, with several desired items unavailable. The culinary experience included the TARTARE, CRUDO, and SHRIMP & LOBSTER HAR GOW, all of which were good but failed to impress. The standout was the BAO with Niman Ranch short rib & habanada sofrito. The WONTON IN BRODO had a flavorful broth, and the KINOKO HOT POT was satisfactory. The CAVATELLI, though decent, lacked the wow factor. Felt like everything was missing either salt or citrus. I had desert but I can't recall anything about it other than that it was very thanksgiving-ish and not my thing. The service was ok as well. But again, nothing extraordinary. One redeeming factor was a cocktail whose name i can't recall but resembled a spicy smoked old fashioned. A definite must try and the appetizers were the star of the show. Starting with a potato dumplings, which were my absolute favorite because they reminded me of gnocchi and we're in a sauce that was delicious and topped with truffle. The wontons were also really good and perfect for anyone that likes pork. One of the more popular appetizers was the Bing bread, which is perfect if you want something late to start the meal. Now the cucumber salad was controversial, because not everyone at my table liked cucumber, but the mix of avocado with the other vegetables made it a surprising crowd favorite. As for the entrée, we shared the rice and snapper and I definitely recommend getting more rice and perhaps an additional entree if you're sharing and your group is bigger than three. It is hard to say enough about this gem of a restaurant. We made a recent visit, our fourth I think, and for the first time indulged in the tasting menu. What an astonishing culinary evening it was. We started with the restaurant's unique cocktails then made our way through nine and more May offerings, each one something that had someone at the table saying "I've never had anything like this," or "now that was a surprise." I'm not exaggerating to say that every bite was exquisite. I'm sparing detailed descriptions of the dishes, as the chef changes things up constantly depending on what's best to buy in local produce and protein. I will say, if the Hokkaido Scallop Crudo is on the menu when you go, do not pass it by. Enhancing everything about the evening is the skilled, knowledgeable and cordial wait staff, especially our waiter, Gab. As I said, the menu is--while not "challenging" exactly--complex and utterly unique. Gab guided us through each course with clear explanations of the ingredients, preparation and intent of each dish that seriously enhanced our enjoyment. I was curious. Could a place that makes the Top 50 restaurants in us by the New York Times live up to the expectations? Thankfully yes. In so many ways. We went for the Chefs Tasting menu in which the kitchen picks dishes off the menu for you. There were so many of them! I think we had over a dozen for our group of 3. Some were small like the savory Japanese custard as a tease. Others were more substantial like the ranch rib eye. Hard to pick favorites but the bao and dumpling course was my favorite. The dumplings had a hot and spicy kick to them but were full of the salty shrimp flavor. The bao was so interesting with herb chutney and labneh; they were filled with lamb shank. So good. The Hong Kong French toast for dessert was a special treat but the semifroyo was a surprise too. We left full and happy. We sat outside in the courtyard and enjoyed the warm spring evening. It's a little bare bones compared with interior but also a bit quieter too. Service was terrific. Our server and the accompanying staff were friendly and helpful and always on top of things. Felt like we were at a friends house with a great host. Overall, cant wait to go back on our next trip to the area near UM. read more

Pretty great meal! I went last night with some coworkers and we ordered most of the menu so I got a pretty well rounded taste of what Zitz Sum offers. My favorite dish of the night was probably the pancake you cannot come here without trying this. The sesame dip offered on the side is phenomenal. Another favorite was the bao. If you eat beef do not skip it. Tender and comforting to is was definitely a group favorite. We ordered the hot pot and steak for entrees which were also phenomenal. For desert we had the chai tea pudding which was good but not anyone's favorite. On a different note the ambiance was very nice. Perfect for a date night as it's dim lit with candles. I would recommend this restaurant. The service was great and very attentive. They only have a wine, beer and sake but the cocktails were great. read more

I went back to the place just the other day, and it was very nice and refreshing to see the chairs are more comfortable and you are now using cloth napkins, which gives the place a more upscale touch. Best Restaurant in Miami ⁉ As the summer months begin to roll in, we took advantage of the outside seating. We had let the team know in our reservation that we were celebrating an anniversary and were greeted with complimentary champagne. Our server was phenomenally interactive in the process. It felt as if we had our own food guide as we took every bite. We discussed to great detail the mastery of each ingredient that the chef carefully melded together. The food was paced and after 6 dishes we were STUFFED. We had crafted a contingency plan in our mind prior to our meal to stop at a ventanita for some sandwiches to top off the meal, however that was not necessary at Zitz Sum. The portions were PERFECT. Hot off a Michelin Bib Gourmand award so had high expectations for Zitz Sum and for the most part, it delivered with small plates of big, bold flavors. Zitz Sum seems to have e some staples but the menu is constantly evolving. Do not expect to see the same items on the menu day in and day out. The menu is on the smaller side with four sections: Izakaya, Dumplings, Konro Grill, and Dessert. The menu is small enough that we were able to order every dish from the first two sections, two from the third, and one dessert. Most of the items were excellent. My absolute favorite was the Hamachi Crudo. The juxtaposition of flavors was powerful. I also loved the Summer Salad and Wagyu Tartare. The Karaage was good but nothing special. I have had Karaaage that was just as good or better elsewhere. From the Dumpling section, the Har Gow was my favorite. The dish did have a bit of a kick. Also enjoyed the Brisket Bun. I thought the Wonton in Brodo, a staple on the menu, was kind of bland. We only ordered two dishes from the Grill section. I was not a fan of the Pork Belly. Although I do not often eat steak, the Wagyu Churrasco was exceptional. The menu changes often, so don't have your heart set on any dishes you see or read about. Just be ready for bright,, new interpretations of dishes you might already be familiar with. There is now an omakase available. Service was approachable and friendly (even for such a restaurant with so much buzz). Since my visit in June , Zitz Sum has been listed as one of NY Times top 50 restaurants (one of only two in Miami on the list). Nice to know that when I return there will be a new array of dishes to try! read more
