This was one of the best places we went to in Banff for dinner! I highly recommend going here if you are in town! The service was excellent and the food was amazing! [[HIGHLIGHT]]It's a bit of a romantic setting, so for me and my mom we didn't need it but if you're on a date or with your husband or family for sure it's a nice atmosphere.[[ENDHIGHLIGHT]] I did see a group of guys that looked like they were having a business dinner as well so It's for everyone! We had the Alberta tenderloin, the mashed potatoes, which are a must because they just melt in your mouth, and they are the best mashed potatoes ever, the carrots, the halibut with peas, and the birthday dessert, which was ice cream with the various sauces. All is delicious, and if we went again, I would order the same thing plus more.!

[[HIGHLIGHT]]Amazing experience, very calm ambiance, light music, staff was attentive and quick with everything.[[ENDHIGHLIGHT]] Got 2 rounds of drinks, and literally ordered the whole menu. [[HIGHLIGHT]]Also got to choose my steak knife made from real deer antlers (in the image) the steaks were great, the desert was great.[[ENDHIGHLIGHT]] The pictures speak for themselves

Went on Saturday date night for my husband's bday dinner. The restaurant is very much like the hotel. Service was the best part of my experience. They were attentive but not too intrusive. The food was okay, not the best. I think all of the plates were missing something. It was a good meal overall.

Oh man, where to begin! Absolutely incredible. Although the dessert was my personal favorite, the ribeye was also one of the best I've ever had. Needed NO sauce & cooked perfectly, medium rare. My husband & I were sharing because we had a late lunch so we weren't super hungry, they even offered to slice the steak for us for easier sharing. The bread & butter was also good. We tried the mushrooms & didn't care for them but honestly we're just not a huge fan of mushrooms but we were trying to branch out. Otherwise, superb! Our waiter was James & he was truly so kind.

1888 Chop House restaurant, deserves to be based at the classic world famous - Fairmont Banff Springs Hotel! An elegant superior fine dining restaurant it is ... I was had at ... Bison! First off - it ain't cheap here so bring mad crazy amounts of cash on all 5 of your cards!!! Our waitress was fantastic. Knowledgeable & informative, Alysha made our time here smooth as butter! Our Champagne & cocktails were a delight! The tables next to us were all staring, when our drinks were wheeled over to our table for us to decide on what to try! Can you say - bottle service anyone!?! Like a Boss! LOL! Then came the main course - Wagyu Striplion, Mac N Cheese, Carrots & Bison. The Wagyu was in a class by itself - a tasty & succulent delight! The 3 that ordered it swore that it was so great - best ever - such so they would be naming their first borns - Wagyu! I was on a mission when I got to Alberta ... having enjoyed the province's tasty triple AAA beef over the years, I longed to try Bison & wow what a sensation it was to my taste buds!!! Can I say WOW, WHOA, DAYUUUUUMMM any louder!?! Very impressive meat & went straight to my heart! Loved it!!! Order the Bison - medium! To be honest my eyes thought - these servings are waaaayyyyyyy too small for my belly! Forgetting that this is fine dining & all about the experience = taking your time & enjoying the bubbly = doing it right! Sometimes I just need to remind myself of that - not to rush the meal! LOL! After dinner we pondered dessert but we were all feeling just right! However, one in our party suggested we share the ultra magnificent - Yuzu Crème Vanilla Sable (try saying that fast) & gosh did it knock our socks off or what!!! A fight broke out to move the dessert closer to each other as we slashed each others spoons prying for a piece! Truly one of the most exquisite desserts I've ever had & one I won't ever forget! Make a reservation ... limited hours & seating! Fine dining at it's finest indeed!

If you are looking for a gorgeous evening out, with views, vibe, drinks, food and the service to go with it... here it is. Impressed because I didn't expect to find this here. Shame on me. Located in the Fairmont, this place is gorgeous. Valet the car, spent the 50 and enjoy your evening. We had drinks at a few different lounges and then made our way to dinner. Halibut to steak... flawless. Great job

Oh my gosh, the wagyu steak was incredible!! Loved the mashed potatoes too. [[HIGHLIGHT]]Wonderful atmosphere and great service in a stunning location![[ENDHIGHLIGHT]]

We were fortunate to eat here the night after our wedding (also hosted at the Fairmont) and our meal was incredible. The service was wonderful and our food was absolutely divine. I will say my ice cream did taste like it had melted some and then had been refrozen, but otherwise everything was impeccable!

I only ended up here because I was staying at the Fairmont for a work trip. On a normal day this place is way out of my price range and I could never imagine eating here. Prices aside, the food is great, just not sure if it's worth the money but you are paying for the location and ambiance. I ordered the scallops and the crab cake for my meal, small portions expected, my table also ordered a ton of sides. My favorite thing was the carrot side, I've never loved carrots so much in my life! Drinks were plentiful and I got to try Pappy Van Winkle which I must say didn't impress me all that much. It's definitely a high end restaurant and I would love to try the other spots in the hotel.

I didn't like that, I don't want some cheap sad looking salad, I'd rather just pay for what I want to eat. You get paper napkins at a this sit down restaurant. I couldn't taste any pesto in the fettuccine. The dish was mediocre, nothing special. My server was attentive. As I was walking to my table I saw a guy throwing up at his table and the hostess said he's a regular. Wait you know he does this and you seat him in the middle of the restaurant where everyone can watch and lose their appetite? I sat in the back on a high table next to the window and even though the blinds were down right next to me, the sun was still so hot on my face. You need to reapply your sunscreen before sitting there.

We started with two small plates and a vegetable: Salmon Crudo, Pickled Marinated Fried Chicken and the Cabbage. Wow. Wow. Wow. We decided to eat each one entirely before moving to the next one. Each one had such unique flavors, we wanted to focus on them and enjoy without confusing our taste buds. I highly recommend doing this! Then we ordered the Lamb dish. Our menu said it was going to be a curry dish, but when it arrived it was a Mediterranean dish. It was honestly dreamy! But we were confused because I guess we had a copy of the old menu. Nonetheless, I basically licked the plate! Lastly we ordered the chocolate salted caramel budino (pudding) for dessert. It was so luscious and went perfectly with our end of dinner hot drinks of tea and cappuccino. The serviced matched the food: also fantastic. Super professional and friendly waitress (I forgot to ask her name) she was so personal and we enjoyed talking to her. They comp'd our lamb because of the menu mixup which was so nice! While waiting for everyone to come & settle down, they were serving appetizers. Everything on the menu was so delicious. Drinks were good! Tried the wine they were offering - Cabernet, ot was earthy, dry, just perfect. I had mocktails but decided that a shot of tequilla won't hurt. Had to do a repeat on that - yep, it was that good. Main course was absolutely light. Had the chicken, my dad had the fish, and my mom had the beef - we had a taste of everything. The dessert was a flourless chocolate cake that tasted really good. I was surprised at how goodot was. I did not get to try their menu because it was already pre ordered but i would definitely be trying it out next time. Before I forget, staff was super accomodating. They made sure everyone had their parking validated, etc. There is parking but can get packed easily so plan ahead.

The wait staff was pleasant knowledgeable and accommodating. We were in a large party so we had a semi private dining area. Their specialty cocktails were great and very appealing to the eye in regard to the presentation upon delivery to the table. Very well put together flavour notes hit. The noise level in the restaurant was perfect for socializing so no complaints there. We did have a large party which probably pushed the kitchen staff a bit because some of the plating of a few dishes came out and were not complete ( 2out3 dishes came missing some plating components) when we made a comment to the waiter he went to investigate. They realized the issue and made a course correction on our bills which was appreciated. I hade the pork chops and I'll say the plating presentation was good but the quality of the the chops not so much, now I've worked in the industry in the past so I usually give a wide birth when it comes to the doneness of my proteins. But these were over cooked or seemed to have been cooked from a frozen state because they were dry as an Alberta summer. Not to mention tough and for that reason is why I'm only giving a 3 out of 5. Pork chops should be cooked through but full of juice these definitely missed the mark. The other components of the dish were great cooked proper with a perfect balance of seasoning. I'd come stop in again if I was in town but I'd probably wouldn't get the chops again.

Admittedly, I'm not much of a drinker but I'll have some once in a while and Bear Street seems to have a pretty good selection. I tried a Vietnamese Coffee Stout which I enjoyed. I'm definitely more of an eater than I am a drinker and the eats at Bear Street Tavern are excellent. My party got 2 pizzas and a salad and we enjoyed it all. To start we got the Tavern Bowl. It's a bunch of different vegetables with a Tahini Miso Dressing and kimchi on top. All the different textures and flavors worked really well together and the salad served as a nice break between bites of pizza. The Wheeler Hut pizza has mushrooms, ricotta, truffle oil, pesto, and mozzarella. If you're a fan of truffle flavor you'll enjoy this pizza. As soon as it was brought out I could already smell the truffle. The Mediterranean has olives, feta cheese, sun-dried tomatoes, artichokes, red onions, chili flakes, spinach, mozzarella, and balsamic glaze. A little busier than the Wheeler Hut, but it was equally delicious. I'm not sure which pizza I liked more. Both pizzas had a fantastic crust with some char. Substantial enough to stand up to the toppings but still a little doughy for a nice chew. The char gives a nice crunch as well. Service is quick and friendly and the prices are fair, especially in a tourist area. I definitely recommend Bear Street Tavern.
