At an unassuming end of an Echo Park parking lot are a pair of massive parasols providing temporary respite from the blaze of the sun; under its shade is a solitary figure pouring over the heat of a sizzling steel plate, sandwiched between two great flames in a solitary act of creation. The place is Alejandra's, and the creation is some of the best quesadillas you can get in LA. Coming up to the stand, you eye the menu and make your order, $8 dollars each or $10 for a dual topping type. There is potentially a bit of a wait due to every meal being freshly made on order, but it is a good and worthwhile wait, the staff, clientele, and food being most hospitable. At your order, purple dough is flattened to a blue corn tortilla, each tortilla freshly pressed and grilled in front of you. You watch it sizzle and rise brown, flip over, and continue its cycle to grow crisp. Topping highlights for me include squash blossoms and pork, which is chicharrones with a surprising crisp and crunch better than almost any other I've had, the ring of each bite echoing autumn leaves crunching under my feet, its condensed jerky flavour hemorrhaging in the still present sweetness of a meat once juicy. The stand provides a salsa bar with red and green sauces available, and other vegatative essentials- onion, cilantro, and pepper- serve as a lush and fresh forestry for the surprisingly substantial spice of the salsa to lick upon; piled upon the mountain of food and flavour, the green and red splatters evoked the Hollywood Hills, the red salsa smokey and particularly burning like the fires of last year. It's an addicting taste well worth the visit and short walk to sit and enjoy the meal in Echo Park. I'm excited to come back and try more ingredients for sure, very likely two or three quesadillas at a time to help expedite the process, as it can't be helped. 6.4/10 read more

The quesadillas including the tortilla are made to order so be patient, it's worth it. $8 each and they take cash or Venmo with a $1 fee. The blue corn tortilla is really what makes this special. It's perfectly chewy and fluffy, creating a perfect bite. I came too late and they were out of a lot, including the squash blossoms. So I went with the mushroom quesadilla and it was stuffed full. I have a really hard time giving 5 stars for Mexican food in LA (because 5 star Mexican food here is outstanding) but this deserves it. It's a little food carte that's there 2 or 3 days a week, it's been serving food for 20 years (by the mom Alejandra for a while and now her daughter). The blue corn tortilla is the best I've had.... So nice and soft, I thought it was my usual favorite flour rather than corn. We had the chorizo and potato for 1 quesadilla and squash blossoms with pork for the other. Both were outstanding. I tried huitlacoche (also known as 'Mexican truffle') for the first time and it was sooo gas. I had been meaning to hit up Alejandra's quesadilla cart, which is located in a covert parking lot in Echo park. Look for the rainbow umbrella and the blue corn tortillas. You can't miss it. Well actually you can so that's why I'm telling you the visual cues. Anyways, her cart has grown quite the reputation for being one of the only places cooking up huitlacoche in LA. The english translation is literally 'corn smut' and the photos on google do not look appetizing-- not one bit. I mean... it's quite literally fungus that grows on rotten corn. I can only describe the taste as earthy, mushroom/umami-esque, and subtle. It really isn't as potent as it looks. The tasting notes were quite mild and it paired amazingly with the Oaxacan cheese and freshness of the blue corn tortillas. You can also choose between squash blossoms, mushrooms, or chicharron in the quesadilla as well if you're turned off by the idea of corn fungus. I live and work in the OC so when I saw this highly reviewed gem, I took time off work and made travel plans to intentionally come here to see what it was all about. After studying the reviews here extensively, my friend and I decided to come on a Friday right at noon as a few reviewed mentioned the cart wasn't ready until that time. We arrive at our projected time and our blue corn quesadilla's were made right in front of our eyes. I ordered the chicharron (as it came highly recommended) and my friend ordered the chicken. A highly rated street cart in my neighborhood, that's only accessible on the weekend? I definitely bookmarked this to add as a "to try" on my list. The opportunity finally arose one afternoon, when I failed to bring lunch to work and informed my co-workers that I was going to try an affordable Oaxacan Quesadilla Cart up the street. I pulled up the hidden menu that was only available from a helpful Yelper via the photo section, took orders from my co-workers and was quickly on my way. I lucked out on parking as I was able to find street parking since the street signs indicated street cleaning until 12pm and I was able to arrive a few minutes after noon on the same side of the street that the cart was located on. The experience was not just like an ordinary bacon-wrapped hot dog cart that you can see on any given weekend or night outside of a bar, but was just one woman who was not only cooking your quesadilla or huarache but also collecting your money with the slipping on and off of a plastic glove that she stored in her pocket. Most of her customers were Spanish speaking, so with my minimal Spanish and food-ordering skills, I was able to put in my order and receive it successfully. I did not hear anyone put in their order in English during my 15 minute wait. Vegetarians, have no fear, there are good vegetarian options as well as I ordered a quesadilla with cactus (nopales) and another one with mushroom, both VERY good. My co-workers and I were very happy with our orders, with the quesadillas costing $3 each, it made my office happy and full that day, putting a cap on our Friday. One piece of advice: if you are ordering for others for the first time, it may be more helpful to try to take them with you, as you will have to add your own toppings, cheese, salsas, etc. and everyone likes their quesadilla according to their particular taste.
