I was most surprised by the amount of beef tendon. In fact, I asked for a side of fish sauce to dip the tendon lol. On my second visit, I built my own phở bowl ($17.48). You get a choice of 3 meats, so I chose wagyu steak, wagyu eye round, and brisket. I thought the meat quality was great. The broth, on the other hand, was having an off night I think. But the reason this place popped up on my radar (been wanting to go since the Santa Ana location) was the Pho Brisket on Rye sandwich. I love me some pho and I love me a good deli style sandwich on rye. Glad to say I'm a big fan of this sandwich. Great flavors and love the dip aspect. The fry add on is very reasonably priced as well. It's a lot of good and I would say it would last almost two meals for a lot of people. From this observer's eye, AND BROTH just might be the belle of the ball- From its enviable perch in the hall's epicenter, they serve a continuous array of steaming bowls of Vietnamese pho and noodle-based dishes. While awaiting an order to be fulfilled, I submitted my order for their Pho Brisket Sandwich on Rye, vowing to return 15+ minutes later once I had faithfully deliver my appointed client orders. Being a self-appointed Ph.D in Sandwich Arts, gleaned from a lifetime of savoring this country's finest sandwiches from Katz Deli in New York to Pat's Cheesesteaks in Philly to the Muffuletta at Central Grocery in New Orleans, I instantly recognized that the RYE BREAD would make an imperfect vessel for a brisket sandwich ... and pivoted to a French Roll. Understanding Pho in a way that Northern style pho is what started this craze just for the Southern style to be predominately eaten around the states if not the world. I can't speak to the service because I have never stepped foot inside this place and always ordered the food the Pomona but it never disappoints even with the travel. I make sure to add tripe and crispy flank I believe, tendon and meatball. Side of the chili oil Ofcourse, but xtra onion, and basil and all the things except sprouts go in a here. Seeing how good they were I was excited to try the spring rolls. And, they were so hot, I had to wait a moment and start with the Pho. Important to note that And Broth makes their Pho with fire-roasted bone marrow broth without artificial additives and they use Prime beef. That made me even more excited to try it. Well... it was delicious. Gwen and I both loved it. And, we've been going to Pho restaurants on dates night since college - so we have quite a few to compare it to. The meat was tender and full of flavor. The broth was perfect. The noodles were just right. After adding in our sprouts and a tiny bit of spice and heat (Gwen doesn't like it spicy and since sharing I held back). Only bad decision was not ordering our own bowls. Splitting was enough with apps, but it was so good I would have ate more. Tiny criticism is the plastic spoon. You get a real bowl so I'd love a real spoon. I stopped by And Broth with a small group and really enjoyed it. The food hall itself is fun and lively, and it makes for a great setting to grab a casual meal and just chill. I did the build-your-own pho and chose the pho brisket on rye, along with the BBH sando. Starting with the pho, the broth was great. It was complex, deeply flavorful, and you can tell a lot of care went into it. The quality really comes through. That said, I'll be honest, traditional pho is already close to perfect for me, and it's hard to improve on perfection. While this version was fantastic, I think I still personally prefer a more classic, traditional bowl. That's not a knock on them, that's just my personal preference. I had been wanting to try &Broth since I saw they opened in Glendora Public Market, especially for their fusion menu items making traditionally noodle soups into sandwiches with broth dipping. I ordered the BBH sandwich for takeout. The sandwich is put in a bowl container which is super nice so it stays put and the broth is extra wrapped with a small plastic bag. The cut profile of the sandwich is stunning. Layers of beef that are traditionally in BBH like brisket and Vietnamese cold cuts. They add the BBH flavoring paste as a spread which packs the sandwich with flavor, but in certain points can get a little salty. Veggies include pickled onions, cabbage, cilantro and pickles carrots/daikon given on the side. First bite I was so pleasantly surprised! Genius to make this into a dipping sandwich and it really worked. My only critique was that the bread at moments got a little hard to chew off. That outer layer that was a little tough. I was able to finish the whole sandwich and not feel bloated or overly full since it was mainly protein. Overall a win for me! read more

Wow! This place is a hidden gem inside the Glendora Public Market. We ordered the dry pho and garlic shrimp noodles and both were packed with so much flavor! The dry pho was seasoned well and had a great balance with all the vegetables. The garlic noodles were filled with umami - I just wish it had more greens but otherwise was very addictive. My family all got the build your own pho. And Broth has Wagyu beef options which is a game changed in the pho. They have regular pho noodles as well as homemade noodles which are a little thicker than the regular ones. You can even add homemade pickled onions, chili oil, peppers, and more to your pho.
