I don't eat cheese, so I was a little intimidated ordering a smash burger without it, but no cheese, no problem. The meat itself tasted different -- richer, cleaner, and higher quality than your typical burger spot. The edges had that perfect crispy smash, and the inside stayed juicy. When the meat is that good, you don't need anything extra.
