    You will not believe this place or its product ! It all started when I found a sample of the paper thin CRISPY jerky. The wafer thin crunch immediately initiated the journey to find more. My partner in crime and I drove out to Baker & Barstow to seek this texture, and every jerky shop within a hundred miles before we finally realized- there was NOTHING LIKE IT ! Once we found the name of the company, we couldn't believe it had been in town the whole time! It certainly felt like we struck gold. We were enthusiastically greeted by the owner of the operation, who gave us a tour of the sparkling clean facility like we had just won a golden ticket ! In the heart of the Las Vegas valley, there is a team innovating jerky, into something that is unlike anything else you've ever tried. Gas stations, grocery stores, and even other so-called boutique jerky companies are selling low quality, over priced trash, this isn't just beef jerky, its meat candy ! There's traditional style chewy jerky with a buttery feathery pull, but the CRISPY jerky is where the money is. Crunchy, melt in your mouth goodness. I left with arms full of bags. My favorites are definitely the honey BBQ which, tastes what a Lays BBQ chip wishes it could be. And the Ponzu Sriracha with gorgeous umami and a low heat. The Spicy Teriyaki glaze candied jerky should come with an addictive substance disclaimer. Its insane how something could taste so good. I swear its flavor changes a you savor it. It's indescribable and deserves an experience. As tempted as I was to eat it all, ( and i seriously could have,) I recognized it as something so good, it MUST be shared. I made sure that everyone I could give to, got a little bag of this incredible meat so they can start the hunt for it themselves. Thank you for sharing the pot of gold at the end of the rainbow we were chasing. We will definitely be back, again and again. :)

    Stopped in for the first time yesterday and we were greeted by Chris and Christian. Christian took us for a tour and let us try different flavors of beef jerky. If you're a beef jerky fanatic you need to stop in and grab some. Everything we tried was excellent. I highly recommend this place. Thanks Christian and Chris!!!'n

    Found this gem on Google looking for local beef jerky and did not disappoint. This is a small shop and where it is made. Christian, the owner, was very generous with his time and showed us around including taking us back where the magic happens. The samples were generous and mostly everything was delicious. I will definitely be back for more!!

    Here's some of the products they have on the wall, but they also took me to the factory where they have way more stuff.

    Best jerky in town by far!!!! he let us tour the factory and it was really unique. I must do next time I'm in Las Vegas.

The staff all seem ecstatic to be there, and are impeccably versed in the menu and cooking methods. We did the Bazaar Tasting Menu ($215), which lists 14 items. These come as three sets of three one-to-two bite samples to begin, then the main event, which is the spectacular ribeye (Australian Wagyu when we were there) with three sides. There's also a flan for dessert. Particular standouts of the small bites for me were the jamon iberico taco (the pork is sliced tableside from its own cart, which has a glamour ringlight) and the "beefsteak" tomato tartare, which is like salsa as candy. The steak is expertly cooked "Jose's way", arrives sliced for you, and served with three sides -- a potato course, Brussels sprout petals, and piquillo peppers. By the time we got to this point, I couldn't possibly do justice to the sides, though I would love to have a jar of those peppers in my pantry. Bazaar Meat is a proper Vegas dining event, and if you're game for a big carnivore meal, you shouldn't hesitate to book your night.

That said, this review is really about my disappointment with some of the menu changes. First, they removed the oxtail consommé, and I'm not exaggerating when I say I still dream about that soup. Second, the caprese salad used to be my favorite bite in all of Vegas, and I eat at all kinds of restaurants around town, so that's saying something. But they no longer make it with dehydrated tomatoes. Now they just slice cherry tomatoes in half, and it's lost that perfectly blended flavor. The tomato taste is way too overpowering now. The A5 Philly cheesesteak has also changed. There's noticeably more cheese than before, which is a bit much for my taste. All that said, the service is still top notch and the food is still good overall. I'm just genuinely sad that, with these changes, it's no longer my favorite restaurant in town.
