    Baiten offers creamy vanilla soft serve ice cream with your choice of syrup. The key word here is syrup, the ice cream itself is vanilla flavored, and the additional flavors come from the syrup options. They currently offer Matcha, Hoji-Tea, Kuro-Goma (black sesame), and Yuzu (Japanese citrus). The shop itself is very small since it's basically a window shop, either renting space from or connected to Tamari Bar. It's more like a little dessert stand located on the restaurant's patio area, with only a few outdoor tables available. The soft serve was okay, but not as creamy as I was hoping for, and it melted pretty quickly. If you decide to add a syrup flavor, I'd recommend asking for only a small amount. Mine came absolutely drowning in syrup, and honestly, the flavor tasted pretty artificial and overpowering.

    It's a cute asian dessert spot. I came here to try their pretty popular (or trending) fruit sandwiches. It was good but it was pretty much what it sounded like. I personally liked the matcha flavour one a lot. But having tried this - I think I can make this home pretty easily - in fact anyone can - just the concept is interesting.

    As a soft serve lover, Baiten is one of Seattle's summer soft serve staples! We tried the black sesame, strawberry matcha and whiskey caramel. The caramel was perfect for sweet lovers, the matcha strawberry was a good mix of sweet fruity and earthy and the black sesame was great for those who enjoy the sesame flavor like me! The location is also really nice to sit out at on a nice day. I just wish there was more syrup for the generous amount of soft serve!

    Baiten was amazing! We ordered the Kurogoma and Kinako Deluxe Sundae, which was the perfect afternoon treat for a warm day. It came loaded with various delicious treats from silky pudding to crispy bites of Rusk (a sweet, crunchy Japanese bread snack). The employees were very nice and greeted us with a smile. I will definitely come back!

    Soooo delicious! Our first visit was February 13th around 7-8pm. We kept walking by so lost at first and so confused knowing it was supposed to be next to the Tamari Bar but after walking past like 4 times we notice an employee open up shop. It's like a to go window next to the Tamari Bar and maybe they were closed unofficially for a few minutes? Once we spotted Baiten we ordered the matcha soft serve and Hoji-cha soft serve. Sooooo delicious and big portion. We were very pleased. Staff were quiet but friendly. I was super happy with my matcha soft serve and tbh it was some of the best soft serve I've had, it was so creamy, so sweet, and perfectly balanced with the matcha! I would totally come back and recommend :)

    I've had their soft serve here back in 2022, and I came back on a Thursday night just to have it again! This place looks more like a popup but is essentially right next to Tamari Bar with its own seating over to the right-hand side. The front is just the counter with displays of their fruit sandwiches and the bases of their baiten sundaes, which are essentially parfaits. I got their matcha deluxe sundae, which has a lot: red bean paste, matcha jelly, pocky sticks, mochi, corn flakes, vanilla soft serve, a matcha drizzle and small cracker on top. The whole thing looked like it was gonna topple over when I got it but thankfully it never did even as I took videos of the parfait and even ate it all the way. Soft serve has a smooth consistency and the matcha drizzle never took over the taste of the vanilla, while the whole parfait still contained everything matcha-based. Pretty much everything fit in very well, and I found myself eating this much faster than I thought. This is a place I'd bring friends and family to, they have tons of great stuff for your sweet tooth! This is in Cap Hill though, so just be wary of parking.

    Really amazing ice cream here, the texture and creamy taste are soooooo good. The matcha flavor also wasn't overpowering and went really well with vanilla ice cream. Nice lady working there too! The sandwich was fun to try, fresh fruit. Cute little hole in the wall spot.

    Excellent service. Super nice lady helped us. We ordered yuzu soft service and Macha one. Both delicious. The custard is really good. We also got mixed fruit sandwich. It was fresh and tasty. Casual place. Would absolutely return.

    Made a quick stop here for a dessert from a meal! There wasn't any seatings, just a booth and some standing tables. Got the hojicha soft serve. It was super smooth and creamy and the hojicha syrup was super delicious! Would come back to try their fruit sandos!

    Very cool walk up desert spot. They really evolved over the years and have more offerings. I tried the yuzu soft serve which was a perfect after dinner treat. If I was grabbing food, I'd totally get their Area 206 curry. I love their curry! They're fast and there was no problem ordering. They have an outdoor area to sit but we just walked around Capitol Hill. I'm sure this spot is lively in the summer!

    One of the best Japanese soft serve in Seattle! Their vanilla base is simple, creamy and perfectly smooth and they drizzle the right amount of syrup on top. If you are deciding between flavors, you can order both in the same cup! I have had all of their flavors and I still can't pick a favorite. A must visit for a quick, satisfying dessert!

This place is super popular, but the line moves quickly. They have QR codes available whilst waiting in line so you can try to decide your flavor ahead of time. What's great is that you can also ask for samples when you reach the counter. I know frozen Greek yohgurt is all the rage right now and Hellenika doesn't disappoint. I got the Ube Coconut flavor and it was incredible. I definitely didn't taste the coconut as much as I would have hoped, but it was such a fun flavor with which to experiment. The frozen yoghurt was not as tart as I would have expected but there is a slight aftertaste in case you don't enjoy that aspect of eating yoghurt. They had some other unique flavors such as Tim Tam, Seattle Fog, Lemon Curd, etc which paid homage to their Australian-Greek heritage while also honoring Seattle. I cannot recommend coming here (especially with friends to have company in line and then people to share different flavors with). It is worth the wait in line especially during a Seattle summer.

Their process starts with cultured milk. The milk is churned into gelato in small batches. We couldn't decide what to get so we went with a flight of all 8 flavors served in kids cups. I thought the cultured gelato went well with all the fruity flavors (Marionberry and Canteloupe), but my overall favorite was Ube Coconut - I just really like that flavor profile. Brendan's favorite was Dutch Chocolate and he was ok with Canteloupe and Marionberry Charlotte's favorites were Ube Coconut and Honey Matcha Shanying's favorite were London Fog and then Ube Coconut. That's especially unfortunate for a business located in the middle of a major tourist area. As for the drink, I'm not sure how a hot latte ends up being served cold, but it definitely shouldn't happen. I also sampled the tiramisu gelato, which was overly sweet and didn't taste very authentic. Overall, I regret spending the time, money, and calories here. There are plenty of ice cream shops throughout Pike's Place. The Shy Giant Frozen Yogurt is a good option with no wait and affordable prices!
