Matcha soft serve and Hoji-cha soft serve ice cream :)
    Sierra W.

Soooo delicious! Our first visit was February 13th around 7-8pm. We kept walking by so lost at first and so confused knowing it was supposed to be next to the Tamari Bar but after walking past like 4 times we notice an employee open up shop. It's like a to go window next to the Tamari Bar and maybe they were closed unofficially for a few minutes? Once we spotted Baiten we ordered the matcha soft serve and Hoji-cha soft serve. Sooooo delicious and big portion. We were very pleased. Staff were quiet but friendly. I was super happy with my matcha soft serve and tbh it was some of the best soft serve I've had, it was so creamy, so sweet, and perfectly balanced with the matcha! I would totally come back and recommend :)

I've had their soft serve here back in 2022, and I came back on a Thursday night just to have it again! This place looks more like a popup but is essentially right next to Tamari Bar with its own seating over to the right-hand side. The front is just the counter with displays of their fruit sandwiches and the bases of their baiten sundaes, which are essentially parfaits. I got their matcha deluxe sundae, which has a lot: red bean paste, matcha jelly, pocky sticks, mochi, corn flakes, vanilla soft serve, a matcha drizzle and small cracker on top. The whole thing looked like it was gonna topple over when I got it but thankfully it never did even as I took videos of the parfait and even ate it all the way. Soft serve has a smooth consistency and the matcha drizzle never took over the taste of the vanilla, while the whole parfait still contained everything matcha-based. Pretty much everything fit in very well, and I found myself eating this much faster than I thought. This is a place I'd bring friends and family to, they have tons of great stuff for your sweet tooth! This is in Cap Hill though, so just be wary of parking.

Came here to get a quick bite with some friends. Got the curry and hayashi rice. Pretty good and decent value. You can order food and then sit and eat at the patio.

Made a quick stop here for a dessert from a meal! There wasn't any seatings, just a booth and some standing tables. Got the hojicha soft serve. It was super smooth and creamy and the hojicha syrup was super delicious! Would come back to try their fruit sandos!

Very cool walk up desert spot. They really evolved over the years and have more offerings. I tried the yuzu soft serve which was a perfect after dinner treat. If I was grabbing food, I'd totally get their Area 206 curry. I love their curry! They're fast and there was no problem ordering. They have an outdoor area to sit but we just walked around Capitol Hill. I'm sure this spot is lively in the summer!

The soft serve here is always so good and the outdoor seating is perfect on a sunny day. I finally tried one of their sandwiches and was a little let down. The bread was pretty dry and the whipped cream was way overwhipped, so it felt heavy instead of light and fluffy. Service is pretty standard, and it's all walk-up window style with outdoor seating only.

Came here because of the great reviews. The shop is pretty small, so it's easy to miss if you're just walking by. The staff member was friendly and helped us right away, which we appreciated. The ice cream itself was decent, though I wish it had been a bit creamier--it also melted pretty quickly. Overall, it was okay, but not quite as amazing as I expected.

Loved it!! The flavors are delicious and the soft serve is REAL soft serve! The service was great and I love that they only charge $1 for a bottle of water. Highly recommend for those who love these flavors!

One of the best Japanese soft serve in Seattle! Their vanilla base is simple, creamy and perfectly smooth and they drizzle the right amount of syrup on top. If you are deciding between flavors, you can order both in the same cup! I have had all of their flavors and I still can't pick a favorite. A must visit for a quick, satisfying dessert!

The perfect sweet treat! We walked to here after dinner and it was the perfect sweet treat to end the night. We definitely liked the yuzu one better since it had more flavor

AMAZING Japanese soft serve. I had their Yuzu soft serve and it was fantastic! The soft serve was light, creamy, and sweet. The Yuzu sauce was sweet and citrusy which I loved! The vanilla soft serve and Yuzu went so well together. The service was good. The cashier answered any questions I had and the soft serve was quick to be made! The ambiance is okay. There's very limited seating and it's only outdoors. If I'm craving soft serve again, I'm definitely coming back here!

Baiten functions as a take-away dessert spot on the patio of Tamari Bar, their sit-down restaurant. They primarily serve desserts, specializing in soft serve and fruit sandos. I recently tried Baiten for the first time and wanted to try one of each between the soft serve and fruit sando, opting for the matcha soft serve and strawberry cream sandwich. The sandwiches are all premade, with the only difference between the soft serves being the syrups, all coming with the same vanilla base. There was only one person behind the window, and it felt like she didn't have much interest in serving us. She might've been having a long day, but she didn't really talk to us at all when we were ordering. She asked what we wanted and didn't say anything else in the entire interaction. Everything was pretty quick. It took about a minute for her to construct each soft serve. Right outside the window is a little patio. There are a few tables, some with little stools, some without. It made for a decent spot to enjoy our dessert, but could definitely get cramped even with a few groups. I tried my sandwich first, not wanting the lingering flavor of the matcha to overpower the delicateness of the strawberries and cream. There is a full "regular" size and a small "cube" size for the sandwiches. Before ordering it, I didn't really realize it, but the cube size was very small. While trying to savor it, I still finished it within three to four bites. It wasn't anything super special. The cream was light and whipped to a nice consistency, while the strawberries were sweet and on the softer side. The bread was nice, but because it was so small, it could not contain all of the ingredients very well. This made for pretty unbalanced bites that were somewhat unpleasant to eat. Also, for five dollars, I thought it was a little pricey, but I was still happy with the sandwich overall. The soft serve was a lot more mediocre to me. I would actually say the soft serve on its own probably would have been great, but it was drowning in syrup. The syrup did not have a great flavor or texture to me at all, with the matcha flavor tasting super artificial. A lot of the syrup is also dumped on the top and bottom of the soft serve, making for extremely high concentrations in the first bites. And because it was filled over the top, it was really hard to mix the syrup in evenly. This made it really hard to appreciate the soft serve, with the syrup completely overpowering both the texture and flavor. Once I got to the bottom of the cup, it became pretty much inedible just because of how much syrup there was. With some minor adjustments, I think Baiten could be an excellent go-to choice for dessert in Seattle. However, at the moment, I feel like its competitors like Indigo Cow do it a lot better. I wouldn't say I had a bad experience at Baiten, but it definitely didn't warrant a trip back in the near future.

Baiten is a great stop if you're craving soft serve with an Asian twist. When I couldn't decide between the hojicha and matcha soft serve, the employee informed me that you could do both! The matcha flavor is on the lighter side and the hojicha flavor is more pronounced, but I prefer it this way. Overall, both flavors aren't too sweet and they pair really well with the vanilla base. The soft serve is also a decent portion size and filled me up without being too heavy. You order from a walk-up window and there's no indoor seating, but there are a few tables outside if you're lucky enough to grab one. I've enjoyed this place and have returned a few times since, I highly recommend coming here!

The mixed berry bingsu was my fave! The berries were fresh but the best part was the ice cream! Super flavorful and I loved the fruit syrup too. For both, the bingsu itself is very light in flavor and texture. It melts in your mouth and pairs well with the toppings, especially that sweetened condensed milk. I hope to come back to try other items soon!!

The crème brûlée was warmed and freshly caramelized on top. This is not made in advance and just refrigerated which seems to be more common these days. The hot chocolate hit the spot!
