Nothing spills, nothing's sloppy. Location: It's in a super convenient spot. I can call the order in from work, they tell me it'll be ready in 15 minutes, and we pick it up on the way home. Easy, no stress, and it still feels like a treat at the end of the day. Tips: The combos are the way to go if you want a ton of food and some variation. It's the easiest way to try a little of everything without spending a fortune. Don't forget the coleslaw and sides! Think ahead about buns and sides if you're planning to stretch it into multiple meals. We keep fresh buns at home and toast them for each round, then reheat the pulled pork and pile it on with coleslaw - so good and enough food to last us a few days. To pair, throw together quick nachos (tortilla chips, shredded cheese, sliced black olives) in the microwave for 60 seconds - pair with sour cream and salsas you like! At home, if you're heating the potatoes, add a little butter on top before warming them up. It keeps everything moist and brings the flavor back to life. PSA: I love that it's an older Bend staple. Baldy's hasn't changed in the 26 years I've been going, and I had no clue it opened in 2005 as well (according to Bend Source)! Hits the spot! Stopped by on a lark after work needing a quick take out. They had a rack and two sides for $18, and I was sold. Upgraded to the onion rings which were far better than expected - that seasoning is a winner. Ribs were good, not overly sauced, and pulled apart relatively easily. The food was amazing! Our server Elvis L was attentive, friendly and helpful! We had the burnt ends, onion rings, and open faced pork/brisket sandwich! With Mac and Cheese! All good! Last night I showed up half an hour before closing. I was a little concerned that they would be closing up shop. However, not only did I get spectacular service, but the food was amazing. I ordered the ribs and brisket combo with beans and jalapeño cornbread. Everything was extremely flavorful and the meats had the perfect level of smoke. The ribs were tender and came right off the bone. I was asked if I wanted the brisket lean or fatty or a combination. I got the combination and it did not disappoint! The restaurant was clean, simple and well appointed. Music and decorations were homey but not kitschy. Just right. I can't believe this place only has 3.5 stars, we are from SoCal and pay 30+ bucks for baby back ribs. Baldy's baby back's are so fringen delicious, coleslaw and their beans are outstanding. The burnt ends were really good. 5 stars for that item. They were tender and juicy, not overly charred or fatty. If we go back, this is what we're going to order. The other items were ok, but not super spectacular. The brisket we ordered didn't have a good bark or a solid smoke ring. It was a little dry and a bit bland. Service was bit slow, which was a surprise because all they needed to do was slice the meat and give it to us. We probably waited about 20 minutes for them to do this. Visiting Bend, Baldy's is a small place with even fewer parking spots available. Brisket sandwich was packed with great tasting wet brisket, with a side of potatoes Au gratin. The entire meal tasted great, did not eat the bread, didn't want a full platter of brisket, so it was just the right size. Others had the Mac and cheese with brisket and the Baldy Burger, which also tasted very good. The service was awesome even though we came in an hour before closing time and a large party of 8+ ordering ahead of us, the food still came out pretty quick. Prices are in line for bbq and we would visit again if we are ever in the area. Not a fan of the original bbq sauce, more on the vinegary side, which I do not prefer, but am sure others do. I'm surprised by the negative reviews because we really enjoyed the food. Their hours are a little strange being that they open at 3. We got there at 2:35pm and we stood outside in shock that we didn't notice their hours.. but thankfully a nice man came out to let us in early which was appreciated! My husband and I both got their pulled pork sandwich which was delicious, lots of meat! Their max and cheese is good too, big serving. I tried their onion rings which were good but I wish I would have gotten their regular fries (which I stole from my hubby) because I'm not a fan of very thick cut onions.. other than that we give them 2 thumb's up! read more

Unplanned visit, but so glad we decided to stop in. We ordered full rack of award winning baby back ribs (very yummy) The garlic mashers were garlicky perfection. Baked beans were baked beans ‍ (although the rest of my party felt they were delicious. Pulled Chicken sandwich was yummy. Cole slaw was delicious I ordered the wet (fatty) pulled brisket sandwich. Avoid. Total Rip-off. Baldy's used to be one of my absolute favorite restaurants in Bend. It is now probably my least, having had the following experience for the third time we are done. Their prices have gone up and their portions have shrunk. What they call a full rack of ribs is a joke, reduced easily by half what the portion had been pre-Covid times. I don't mind paying premium for excellent food, but quality of the ribs has gone down, the food is over-cooked, and as said the portions for what they charge are akin to a middle finger in your face: an outright rip-off. We've been eating at Baldy's for years in the past, but haven't been since before Covid until tonight. We were very disappointed in the brisket. We ordered a half pound order and out of that, there were only 2 good pieces. It was very fatty and chewy. Very disappointed. If I were basing my review on just that, I would give a 1 star. Bend - and Oregon in general - just does not do BBQ well, as any trip to the South, Texas or Midwest will confirm for you. Frankly, I don't understand it. Baldy's does win awards for best BBQ in Central Oregon, so there's that. - Brisket is solid, very tender but not real smoky. If you're looking for a pink ring, you may be disappointed. - Chicken is also good, but also not smoky. - Links are well above average. They come sliced, which is fine. - Beans merely average. - Cole slaw is above average. Could use a kick to take it over the top. The meats came with sauce on top even though they have two varieties on the table (which tasted OK but are fairly similar). Why does the kitchen put sauce on the meat? That's a question for any BBQ joint. I should have asked for dry. - Cold dining room during winter. They need to do a better job heating the place. - It's a little expensive for lunch. BBQ places tend to be pricey but I find Baldy's even more so. - Pepsi instead of Coke. This used to be a fast-paced hopping bbq place with great food. I stopped by the east side location yesterday for lunch, and a solid disappointing is what I have to leave here. The food was bland and watery tasting (except the Cole slaw). My friend's corn on the cob was so water logged and without taste. Literally, I saw water fall from the cob with every bite. So for the last nine months, I have been working in Redmond and it seems like the quality of the food is going down. The atmosphere at the Redmond location is great. I stay in Bend and I stopped in tonight and spent 36.00 bucks and asked for this cherry crisp pie and the kid behind the counter every asked the owner if they still carried it because he wasn't sure and they went and looked and of course they did have it when I got back to my hotel, it states it comes with vanilla ice cream. I didn't get my vanilla ice cream. Now the reason, I know that it was the owner because I've seen him at the Redmond one a lot. Well, they're making it. I go to use the restroom. The dispenser for your paper towels almost fell off the wall. There was no paper towels in it. I let them know that I had to use toilet paper to wipe my hands off with. I don't think I'll ever go back was not one of my greater experiences there which is really sad because nine months ago when I first started coming over and working in Redmond it was the place to go. I went every day for lunch so that being said, I will go back to Redmond, after my experience here at Bend. read more

I just don't understand why this place has low reviews. The BBQ is fantastic! The sides are great! I see people complaining about portion size, but baby back ribs are just that - BABY. We get a full rack of ribs plus two sides and it feeds two of us easily with several ribs as leftovers all for under $30 even with upgraded sides. That's a great deal for dinner for 2! Despite living in Bend for over two years now, I still had not been to Baldy's. That changed when a group of friends wanted to run by there on a Friday for lunch. I could tell from the smells emanating from the front door as we walked up that we were in for a treat! We were seated outside and greeted quickly. A buddy and I decided to split the rib lunch special, a full rack of baby back ribs, bbq beans, and coleslaw for $17! Great deal! Other friends ordered the brisket and chicken sandwiches with fries on the side. Wings: These were ok. Decent size and the sauces were pretty good; really good blue cheese dressing for dipping. My only complaint is that these seemed low/slow smoked judging by the texture and color of the meat. I love smoked wings, but prefer them smoked briefly and then higher heat finished to crisp the skin a little more. I'd prob pass next time Ribs: Perfectly tender, fall off the bone! The portion was perfect to split with somebody for lunch also. The server brought two different barbecue sauces to the table but the ribs were perfectly sauced and needed no extra imo Sides: Pretty generic, not bad, but not stand out Brisket: Tender and juicy (I suggested my buddy order the 'wet' cut. I'd be down to order the brisket sandwich next time Cornbread: This turned out to be a let down for me. I wanted more honey flavor and a good bit more jalapeno flavor/spice. We ordered a full rack of baby back ribs and brisket with 3 sides. The ribs were tough and dry, definitely seemed overcooked. They were slathered with lots of bbq sauce but that didn't make them more tender or moist. The brisket was okay but not great. The sides were good but we were definitely disappointed in the ribs. Based on the other reviews posted here, it seems to be "hit or miss" on whether you get a good meal here. read more
