I'll post a few pictures as well because the presentation really deserves it. I sat at the bar and had the chance to talk with Hong, the chef preparing my food. I learned that he took over the restaurant from his brother and still visits sushi restaurants around DFW at least twice a week to keep learning, tasting, and improving his own craft. That told me everything I needed to know. There is real passion here. Hong believes the details matter, from a clean bathroom to the right Japanese knife, specially purchased for left-handed use.
