She service is EXCELLENT. You can't door dash because they charge too much and the owner is awesome enough to not transfer that cost to us. I order online and show up to get it hot and ready. Disadvantage of doing that is it doesn't seem "biscuit of the day" is available online. If you can show up in person you will be delighted by a surprise of whatever the biscuit of the day is (and even get a free sample). I went again today and got "chipotle" who's was awesome. Dog friendly - they even get a free treat and you can buy some to take home. Never been so passionate about people knowing about a place to eat. "Mike" is even there actually banging out the ABSOLUTELY BEST BISCUITS you will ever get. I find myself wishing for this when they are closed and crave them. In no way can I praise them more. Mike! Food is great. Fluffy biscuits stuffed with decently cooked eggs and tasty sausage and well melted cheese. I cannot understand why the staff likes to make it look closed earlier than the states hours. I was there 45 minutes before closing time, and the chairs were already stacked on the tables. It's as if they can't wait to bolt the door! I even had to take my own chair down after asking if it was okay to sit in the place. This happens frequently (I often go to Butcher Frank's next door). Well butter my biscuits! Biscuits at Mike's deserves more than 5 stars IMO. The biscuits are some of the best I've had anywhere, let alone in Colorado which has some good competition. They are flaky, buttery, and the perfect shape and size for a loaded up sandwich. For about $9-$11 you might be thinking "that's too pricey for a breakfast sandwich" and you'd be wrong. The ingredients are all fresh and delicious and worth every penny. The best part - they don't skimp on the filling. The eggs are bountiful & oh so fluffy paired perfectly with a thick slab of meat to create that just-right balance. We tried the good ol' classic - Bacon, Egg, and Cheese along with the Big D - pork roll (NOT Taylor ham amiright Jersey peeps?), fried egg, and cheese as well as the Fried Chicken & honey. The total came to $30.44 and it was one of the best dang breakfast stops we've ever had. The catch - you have to get there early as they're only open until 11am during the week and noon on weekends which is challenging for us night owls. But hey, if there's one thing that'll get me out of bed it's a biscuit from Mike's. Don't walk, run (or drive the half hour we do). I've been following this food truck on IG for quite some time, but just never made it out up north and early to find them. The Mr wanted to take a trip up to Fort Collins one Sat morning, so I HAD to make the detour to find this bright, blue food truck. Their menu is simple with a handful of breakfast biscuit sammies - egg, cheese, and different meats like sausage, ham, bacon. They have a few specialty sammies too like the fried chicken and honey, pulled pork and cheese, and portabello and cheese. And I learned that they have a secret menu where I discovered the "Brian" - fried chicken, cheese, honey, and an over-medium egg. Ps. they have a few creations named after the loyal customers who keep ordering them. The Brian was delicious and so was the BSH that the hubs ordered (bacon, sausage, ham trifecta with cheese and egg). We ordered both sandwiches on their biscuit of the day: Cheddar Jalapeno. These sandwiches were so good, so flavorful, and the biscuits were perfectly flaky yet dense. The best way to start a Saturday! My only regret was not stocking up since it will be a while since I can return. Great, friendly folks serving up the breakfast biscuit sammie of your dreams. I planned on going back for the fried chicken and honey biscuit but they were big enough I couldn't handle it. I haven't had a biscuit sandwich this good since I moved here from Georgia. He was in Longmont today, but his schedule shows they set up in Berthoud and Lyons some too. We brought our food down to an empty baseball field and ate in the dugout since the bleachers were wet.
