I had an amazing spontaneous experience with Blister's Bbq! Happened across it while driving through Rexberg and wanted to see what the local fare was all about. They are a South Carolina inspired bbq and they did not disappoint!! I tried the bbq chicken, tri tip, and brisket and everything was awesome!! My favorite was the chicken, they smoke it for 5 hours and use both dry and wet rub. It was flavorful with nice texture and mouth feel. Not dry or over seasoned. The tritip hit more like a traditional brisket and the brisket more like pulled pork, but high notes all round. Of the sides I tried, between the potato salad, coleslaw, and fries, the fries were the star of the show!! I shared the platter with 3 other adults and a toddler and we were all impressed!! Was the best place in town when they were in a gas station. Not so great any more. I had a chicken rice bowl, medium heat. The chicken was super dry and there was no spice to the sauce other than VERY VERY SALTY. Had wings buffalo style. They looked good but were over cooked, dry and absolutely no spice to them. FIRST, Let me say I would eat here again, BUT it would have to be a long while between visits. As a 5 time 1st Place BBQ Ribs Champion, I have ruined ribs for many who then go to other BBQ joints and order ribs, only to be greatly disappointed. At least that's what they tell me. SECOND, as a smoking purist I firmly hold to the sentiment that if you need to add BBQ sauce to your meat, you haven't done it right. Blister's fails on this sentiment. I'm in Rexburg once every few years and have been to their original location and now new location as of today. I could not sense any smokey flavor to either the Pulled Pork or the Brisket. They stir into the pulled meat BBQ sauce to the point of sugar pickling overkill which is a tell tale sign of trying to mask the lack of smokey flavor and the dryness of the meat, especially the brisket. Brautwurst? NOT! Being from the midwest and close to Wisconsin, I know brats. Blisters Brat is simply a polish sausage, it's no Brat. I also know Kielbasa or Polish sausages and Blister's taste and texture is exactly that of these. I'm sorry. I have to call it as I taste it and for those who think this place is 4+ star worthy, you need to get out more. And because I can smoke meat better than almost any place I've been too since I picked up the hobby 15 years ago, I have yet to be more impressed than what I smoke myself. I went for ribs. There were no ribs. I'm not sure how barbecue place is sold out of ribs, but they were. I got this nasty greasy fries, brisket with cheese and all sorts of sauce and ranch dressing on it. I took a bite and threw it away. the salad it was pretty tough too. I wish I could recommend it but it's a place downtown across from the police station. We never pass on the opportunity to eat BBQ in a gas station, so Blister's has been high on our list of 'cue joints to visit in Idaho. Although we were unable to sample the ribs and the fried green beans, what we did try was very good, with an excellent price point. Shelling out a little over $20, we purchased a two meat (tri tip, turkey) platter with house cut fries, a side of scones, and 2 refillable soft drinks. Both meats had good smoke and flavor, with the turkey offering a moist and buttery texture that we thoroughly enjoyed. Both the fries and scones really hit the spot, so much so that we ordered seconds to go. So, once again gas station BBQ really hit it out of the park! Blister's really lives up to its national reputation (Kelli Acciardo at Food Network ranked it in the top 45 nationwide), and we look forward to our next visit. read more

Def 5 stars, we love smoked meat. Usually we just make our own smoked meat, because most places are just subpar around us. But we decided to try this place because it looked good. And yum Soo good. Our two little girls loved the turkey. I loved the ribs rub (didn't need sauce) and so did my hubby. We also loved the pulled pork, one of the best I've tried, usually they're overly sweet. We were hoping we found the Rudy's equivalent in Idaho but not quite We tried the brisket and tri-tip, I would give the tri-tip a 8.5/10 it was tender and juicy but could use a bit more flavor. The brisket was more like a barbecued chopped beef with sauce. It's was good but many of the pieces in the chop were dry, tough, and stringy....7/10. The place was packed and we waited ~ 40 minutes for our food during a weekday lunch hour. Some people waited over an hour for their food. I usually don't like BBQ foods but Blister's exceeds all expectations! Their food is always served hot, the meat quality is amazing, and their fries are crispy. I've never had a cheesesteak before and I thought mine was very good. It was a bit heavy for me as it's a massive mound of steak, caramelized onions and cheese (but that's also what makes it so good.) This is by far the best BBQ in all of Idaho. This is definitely a North Carolina bbq style shop. That being said, is it going to compare to being in North Carolina, Memphis, Kansas City, St Louis, etc? No, it's not, but remember where we are, we're in Idaho. Has anybody ever said oh we gotta go to Idaho bc the food their is bomb too? Never, you go for the fishing, great outdoors and who can pass on the Titan Mountains. Me personally, North Carolina pulled pork is my favorite style of pulled pork, so I was excited when I found this shop was North Carolina style. My husband and I stopped here for lunch after hearing a good review from a family member. I placed a to-go order--a brat and a pulled pork sandwich. The pulled pork was fine, but nothing special taste-wise. However, my brat was actually a kielbasa, and it came without a bun. Not knowing it would not have a bun, I asked for ketchup and sauerkraut. The red-haired young man acted like I was a real pain for asking for sauerkraut, which I didn't use because I had no utensils or bun. Perhaps Blister's BBQ should stick to food they understand. Wow what a hidden gem. We needed to stop for gas on our way to the tetons in Wyoming. Also decided to get some lunch but didn't know anything about Rexburg. Wife popped out the phone and found blisters BBQ inside a Gas station. Went inside (not sure where I was going) and found the whole town in there. It became obvious why. Seats all full but we got bbq to-go--wife again got out the phone and found a nearby park to eat our delicious bbq. Stopped by this Mobil station and found BBQ! I actually thought it was great. The ingredients are well prepared, there is plenty of seating, the place was clean and there was a good amount of drink choices. I had the three meat sampler platter to try the various meats. Tri-tip was very good, not dry or tough. Brisket was nice as well with a good slow cooked texture and roasted flavor. Pulled pork was nicely smoky and the portions were generous. I don't know if it's the best BBQ in Idaho, as I;m just a visitor, but to find very good BBQ in a location like this makes for an excellent stop on a road trip. I'm reading reviews and people seem to be hung up that this isn't the best BBQ in Idaho. Sure, it's not the BEST, but it's damn good, and that is what matters. I went to school at BYU-Idaho for two years straight, and Blister's was definitely a regular pit-stop for me. I always get their brisket sandwich. It is very flavorful, and I always love getting both sauces from the nice guys at the counter. One is a typical BBQ sauce, and the other is a vinegar based sauce, also yummy. I have tried their tri tip before, but I wasn't a fan because of how thick the cut was. For me, I simply like brisket more, but others might like the tri tip. Another favorite of mine to get is the fried green beans. The dipping sauce they give you is tangy and perfectly pairs with the green beans. Blister's also knows how to do their french fries, so be sure to try these out as well. Great place for lunch or dinner, and I love pairing it with a dirty soda from Great Scott's. read more
