But six rings and I rise Wipe the sleep out of my eyes The shaving razor's cold and it stings... What sits nice is the delicious Pad Thai dish from Bo's Thai. A food truck w. others in a small park, with shaded seating. The "Pad Thai" w. large juicy shrimp, sprouts and green onions, over lushish sauced noodles. Each bite was a Delight... Washed down w. an Iced Coffee. This Food Truck is so Right...     A delicious little Thai food truck. The service was quick with everything made fresh to order. They even have little plum candies to take, yum! The food was delicious and hit the spot. We got Pad Sẽ Ew and Pad Thai both medium spice. The Pad Thai had a got spice to it but not too strong for this white girl! The Pad Sẽ Ew didn't taste spicy even at medium. But I preferred slightly over the Pad Thai because the veggies gave it more flavor. Delicious all around. There is seating behind the food trucks. The parking lot can get a bit crazy so be ready to have to maneuver out of there.

    I have finally found a Thai place that is delicious and authentic! I've tried a few places in Santa Fe and this is the first time I was immediately convinced I'm coming back for more. They were quick to take my order and the food came out relatively quickly. I only waited maybe 10 minutes! As soon as I got to my car, I had to dig in. Flavor 9/10 I asked for hot and ended up adding more chile flakes just because I knew it wasn't going to be as spicy as I like Noodles were perfectly chewy, while the veggies added a nice crunch to the dish The shrimp want my favorite, so next time I'll be sure to try the chicken! Definitely stop by if you're in the area and craving Thai, you won't be disappointed!

    If you want authentic Thai food in Santa Fe, this is your spot! I unfortunately didn't get a picture of the Pad See Ewe, but it was so good with perfectly cooked noodles and a true medium for spice. The green curry with tofu was my next favorite. It was full of veggies and delicious jasmine rice to accompany it. The papaya salad is only available on Friday's so I had to give it a go and I really liked the addition of dried shrimp. It gives it a boost of umami that I've been missing in Asian food here. I only wish I had ordered it spicier because your girl likes some heat! Next time!

    Pretty good Thai food. I had the pad Thai and the stir fry basil. Overall pretty well prepared.

    We have been to this food truck several times now and it doesn't disappoint! Our favorite is the Pad Thai and Penang curry.

The chile oil used is mostly oily with some not so spicy Chiles used (that could just be my heat tolerance) but nonetheless, they were delicious. The hot tea was fresh and he brought it out with water, which I appreciated.. I was however slightly disappointed in the Dan Dan Noodles, I didn't take a picture just because it honestly was served not too appetizing or picture perfect like most of the previous reviews. Everything was mixed together, and the meat was all in the bottom under all of the noodles. The flavor was pretty good, but I didn't get the normal Szechuan flavor or spiciness that I've had in the past at other places. I do love the fresh noodles, but the overall dish was a little underwhelming. I would have liked it to be a little more presentable, along with more of a noteworthy flavor other than meaty broth with some chile oil (again more on the oily side not so much spice). Overall, the experience was decent and good service. I will come back to try something else and maybe it just wasn't a dish for me.
