Perfect for an anniversary! My hubby and I recently moved here from NY, and were looking for somewhere special to celebrate our 13th wedding anniversary. Bonsai did not disappoint! It was secluded and very intimate (2nd floor hidden at the Hilton with an amazing view of the gulf). My hubby let them know that it was our anniversary, and we arrived to a table covered in rose petals with a view of the sunset. Our waiter, Marcus (who was very attentive the entire night), immediately came to our table and offered a glass of champagne to celebrate. He also offered for us to either make our own selections, or have the chef pairing. We went off on a limb and took the wine and sake pairing, which was the best idea ever! Our absolute faves were the Wagyu appetizer (melted in your mouth and we wish we had 2 orders), the ramen with pork, smoked tuna roll (the smoking presentation was out of this world) and a sushi sampler (so fresh). The wine/sake was paired perfectly. We sent our compliments to the chef and he came over to wish us a happy anniversary and ask how our dinner was. We rarely get out without the kids and Bonsai made sure our night was one to remember. Thank you Bonsai! We will be back. read more

It's tucked away on the 2nd floor of the Hilton, so you need to look for it, but it's worth the hunt. The omakase is delicious even time and the fish is very delicious all around. I also appreciate their sake menu. Plenty of delicious choices. But this is not where you come for budget sushi. Presentation and flavor are good, but not cheap. read more

This food was spectacular! Don't be put off that it feels like you're walking to your hotel room! Although the space seems somewhat random, the food is definitely worth a visit. I would sit inside for the ambiance (our party of 10 sat outside and the pool activity just below was slightly distracting). We all enjoyed our meals...the tuna appetizer was a piece of art! Wagyu beef melted like butter in your mouth. We were all very happy to find this unexpected treasure. The meal is comparable to world class seen by our experienced through travelling overseas. He had also provided clear description of the meal and how it was prepared right after serving it to our table. He is funny and yet professional on his job. The waiter that served was very attentive to our needs and constantly checking to ensure we are comfortable and have everything we needed that evening. He is very knowleable of the menu and has provided recommendation which drink will be a good pair to our meal. The atmoshere is great and its perfect setup on our special night. Went here for my birthday. Our waiter, Keith, was great. He explained everything on the menu, gave recommendations, and was very attentive. The food was unreal. The artistry and taste were worth the money. Highly recommend the waygu beef appetizer and the smoked tuna roll. Don't say no to the green tea gelato for dessert! I'm posting this review to see if it actually shows up because I suspect most of the reviews are fake news. I have to say that I've eaten sushi in Tokyo, Japan which is arguably the best place in the world to enjoy sushi. I've also eaten sushi in Tuscaloosa, Alabama and the sushi was even pretty darn good there. The food at this restaurant is terrible. We started with the appetizer that the server raves about; pork belly. The pork belly was mostly fat and gristle; my wife's portion was entirely fat! They were kind enough to substitute the appetizer with another dish. We ate 3 sushi rolls and they were all awful. I've honestly had better sushi at a Whole Foods or Publix. The quality of the ingredients are mediocre at best. The tuna is stringy and get stuck in your teeth rather than melting in your mouth. They salmon they smoke in the $20 cold smoke doohickey you can buy on Amazon is all smoke and mirrors. Honestly the only things we enjoyed were the million dollar view of the beach and the $80 bottle of Moët. read more

My husband and I dined at this lovely establishment last night and every detail was impeccable. We had the omakase with sake and wine pairings. The service was outstanding and the food was as beautiful as it was delicious. Chef Omar's talent is evident in every bite! The flavors and textures used complemented each other quite nicely. The tuna matsutake was delicate and creamy and marinated just enough to be reminiscent of edo style sushi without being overpowering. The hickory smoked tuna was visually stunning and its flavor well balanced. It was like eating a work of art. The nigiri and sashimi were perfect in their simplicity. Hamachi needs no help. Next was the ramen. The hand rolled noodles and depth of flavor of the broth were magnificent. I'm not really a dessert person, but the dessert served was playful with its use of color and geometry and not overly sweet. I finished every bite of it. read more

So I finally got to try Bonsai at The Hilton on Pensacola beach! I went with a couple friends and we did the Omakase menu, it's basically a tasting menu of various items and you can also include a wine and sake pairing. First of all the setting is very nice and intimate. There's also a nice deck to walk out on that overlooks tge pool and there was a fire dancer out there! As far as the service it was a 10 we had Sarah for our server. She was very knowledgeable and explained all the items very well in detail! We had a fresh infused sake that was delicious. We also had this cool siphon sake as well for hot sake and it was delicious! It's worth it to go just to try those! I posted the menu below so you can see the descriptions of what we had! The NAMA was probably one of my favorite things I had! Then we had the KOROBUTA pork belly and the Wagyu beef!!! Flavors were on point! We had the nigiri/sashimi app as well! The hickory smoked tuna was great super smokey and a beautiful plate, the salmon brule had a very unique flavor profile(good as well) my favorite of the rolls though was the FLORIDA CITRUS then... yes there's more! We had the hand rolled ramen, my friends had the KUROBUTA PORK ramen and I had the TAKO LOBSTER ramen! What can I say about that TAKO ramen but damn... those fresh rolled squid ink noodles lastly we had a very light dessert and some wine, the dessert was a matcha ice cream with mochi and red bean paste and fresh fruits! The perfect ending to a perfect dinner! Also, I want to mention we had fresh ground wasabi root and also a choice of soy sauce one was a dark rich soy sauce and one was a soy that was a Matsutake soy that's light in color and it was my fav! I'm gonna buy that for my house! I would bathe in it, it's that good! There were a few times I wanted to lock my plate but I was in public so...Anyways this is worth the go! Wait staff was wonderful and the sushi is high-quality however I wouldn't go out of my way to eat here. To be fair we didn't eat any ramen, which I LOVE, but $50 didn't fee right when I have so many amazing ramen shops where we live locally. The nigiri was sliced SUPER thick. We eat a lot of sushi and this was odd. The waiter told us they'd already cut the size but I still felt it was huge at 1oz single servings. The waiter seemed like that was a common reaction and offered us a knife. Simply slicing the fish thinner would win. We ordered two maki after that - smoked tuna and Florida citrus. My husband loved each, but for me the smoked tuna tasted ashy vs Smokey. I tried a second piece 10 min after delivery to see if it had dissipated and it had not. I couldn't eat any more. $22 cocktails, $50 ramen, ashy rolls and a view of the beach? Not worth the buzz for me. They must do well though because we saw them turn away several hotel guests who didn't have reservations. ‍ They do serve a complimentary dessert which tasted great. we came here looking for something fresh and light amidst all the fried food options around our hotel and were blown away!!! our server, morgan, was SO knowledgeable and kind and helpful and made our experience perfect - loved her!! the food itself was everything we were seeking and more - obviously very carefully crafted, high quality ingredients and honestly it all felt like a good deal given how amazing our meal was. my mom also wants me to say that the vegetarian options were the best she's had here by far :) highly recommend!!!! read more
