This place was such a disappointment. I was told a medium steak is pink with some "blood". That's fine as I like an all pink steak. Got the baked potato with it. Took a while and when it came out, the baked potato was literally cool in the center. I finally got my server and asked if he could microwave the potato. He was nice and apologized and said he would get me a new baked potato. I didn't mention the steak being more than medium, was actually well done. The replacement baked potato came out and it looked like it was from yesterday. Yep, just nuked a previously cooked potato and put some sour cream on it. We had a girls weekend and stumbled into Brazos and we were so glad we did! The decorwas quaint and welcoming. We were greeted by Jennifer our waitress with a warm friendly smile. Jennifer was an amazing server and we enjoyed talking with her (at the time it was slow). All 3 of us enjoyed out breakfast tremendously: crunch French toast, Speight avocado and farm house. The presentation was fantastic! Our only concern was the coffee was a new choice and seemed to be a little weak. After telling our server she made a stronger pot. She proceeded to tell us it was a new local vendor. I would highly recommend this restaurant and if we were staying another day we would come come back for dinner. Love the hotel and love the bar! Such a fun time! Great food, great service and such friendly employees all around. We were helped by Cassie when checking in. She went over and beyond our expectations and always with a smile. She went out of her way to coordinated a few activities for us, when she overheard us discussing what to do while in town. Just unheard of royal treatment! The bar was a blast with Blake! Felt like we were on a tropical vacation with the fancy drinks and such attentiveness to our needs. We enjoyed the food and drinks, and the hotel/restaurant is very nice. I did not give a better rating because of the overcrowding and how loud the place got. Our chips and green queso were excellent, but took over 45 minutes. The menu no longer has the meat and cheese plate appetizer or the ribeye dinner. I would check to make sure there is not a big event happening when you make reservations, which is a must. The lobby and bar area fills quickly. Our table was in a bad location, so we were constantly getting bumped into. It became hard to enjoy our meal. I will try it again; hopefully it will be a calmer evening! read more

We ate here on the night of our arrival as Hotel Indigo guests. My husband had the double cut pork chop and I had the chicken breast stuffed with spinach. They were both delicious. We also had the salad with the candied pecans and it was outstanding! Our server was a young man named Sydney. Sydney was very kind, professional and very knowledgeable about the menu. Met friends for breakfast New Year's Day. The service was unbelievably awful with an inattentive waiter who sat us in front of a loud speaker and in the direct path of the sun which was in my eyes, failed to bring a spoon for the coffee and got my order wrong. Even though I asked for a spoon, he obviously forgot while my coffee got cold. The speight special looked great but when they had to remake it because it was doused in hot sauce that was very spicy, they cut back in the eggs. This is our go-to spot in Waco, so it's probably time I left a review. My husband and I were in college at Baylor when Hotel Indigo first opened. It became our spot pretty quickly after our parents had stayed here a couple of times and we realized it was a great bar to escape the loud, dirty, college bar alternative on nights we wanted to just have a nice drink and hang out with a couple of friends. We now live in Austin and come back to Waco quite a bit and almost always eat or get a drink here. We've always had positive experiences. Food & drinks are great. Wow, we finally get a nice place in Waco and it was a total joke. Decided to drop in on our anniversary, menus were just pieces of wet paper stapled together, no drink menu, had server try to remember what they offered, couldn't remember more than "I think Coors? Maybe?", first 3 drinks I ordered she returned back saying they didnt actually have it, took forever to get drinks once they finally found a beer back there, waitress quoted my wife a wine and said it was 7 dollars, turned out to be 10/glass, just a terrible experience from start to finish. read more

1) Its oddly situated in the lobby of the hotel. 2) We sat awkwardly on these lounge chairs pulled up to a table instead of actual dining chairs. 3) Service took forever. I ordered coffee, and it took 20 minutes. Still got it before my food. 4) I ordered chicken and biscuits. Both were extremely dry. They don't come with anything moist except a very small amount of honey butter which you'll only get in one bite, and only after you've eaten through half the sandwich. The chicken itself was unseasoned and the biscuit was too crumbly, so overall it was a pain to eat and tasted bland. 5) I asked for gravy, but they don't make gravy. How do you have chicken and biscuits but no gravy? I asked for ketchup or hot sauce, and the server offered salsa, which I agreed to. 20 minutes later, I finally got my salsa. Salsa was terrible. 6) Overall, it took about 45 minutes to get an order of French toast, chicken and biscuits, and stuffed avocado. Definitely too long. They also got the avocado order wrong, but it only took them about 5 minutes to bring out the corrected order. 7) While I hated the chicken and biscuit, the stuffed avocado was decent, but overall had the same ingredient and flavor profile of salsa. The French toast was pretty good. 8) While the service took forever and made the order mistake, the server herself was very nice, and made an effort to make small talk. She also was kind enough to split the French toast order for my two kids. Overall, wouldn't go back. read more

First things first: this place is inside Hotel Indigo, but you don't have to be staying there to go enjoy the good food here. Thankfully, someone decent is actually open for Sunday brunch. Excellent breakfast. I got the avocado breakfast (I forget what it was called on the menu). I opted for this because the waiter informed me it's their most popular breakfast item, which I tend to order when I'm trying a new place for the first time. I was tempted to order the eggs benedict over crab cakes; I'll order that if and when there's a next time. My wife got the Waffles Bananas Foster. Quality. By the way, I was particularly impressed with the taste of their coffee (I often drink mine black). Luckily for the Brazos Bar, when it comes to Sunday brunch, they're the only game in town because they're the only ones smart enough to be open. With Waco's apparent "Bible belt" culture (not saying that's a bad thing, btw), you'd think Sunday after church would be major for restaurant business. But it's not - who knew. Came here for breakfast. No one at the greeting stand, waited for a couple minutes then asked the hotel lady about breakfast, told me it was seat yourself. So we sat down and waited for about 10 minutes with no one coming to greet or talk to us. One server was attending the only other table with people. My friend called in and told them we were coming so they gave us a free plate of chocolate covered strawberries AND a free glass of champagne! We were so surprised. Brazos Bar & Grill is a great, friendly upscale bar inside the Indigo Hotel in downtown Waco. The food is outstanding. This is not your typical hotel fare. The green chili queso is killer as is the coconut shrimp. Chicken nachos and avocado tacos are favorites. Chicken Montelongo, chicken breast stuffed with baby spinach and Buffalo mozzarella topped with shiitake mushroom sauce is scrumptious. The bar, with local personality Blake mixing your favorites, is a great place to see and be seen. In short, this place is great. We love it and recommend it without hesitation! read more

I've eaten at the Brazos Bistro twice since it opened recently. Waco finally has a cute, gourmet bistro! The first time, I had the spring mix salad which comes with a delightful, light dressing and tiny apple spears, and the roast chicken which was delicious. Then for lunch I had the chicken pizza. The crust tasted totally homemade and there were chunks of fresh tomato and chicken on it with a very nice sauce. I had the salad again too. I'd expect a baked potato to be loaded with toppings for the price of the meal and if you can't find quality asparagus switch to something else. Food is really overpriced and the service isn't that great. The atmosphere also leaves something to be desired I would find someplace else if you're looking for a good meal. Great place for fine dining mate. I surprised my sexy wife with a night out at the Indigo. We enjoyed fine food & a room on the 4th floor. Needless to say, I was a night to remember. You only live once bro, so don't waist it on fast food & motel 6 everytime. Give that beauty of a wife a special night more than once a year. Breakfast in bed is also a great way to top off the stay.
