This little pizza place is amazing! Located just south of downtown Redlands, right next to the fox theater. They have great salads and pizza, they even have GLUTEN-FREE pizza dough!! My fiancé is gluten sensitive so we always have to find places that have gluten free options. I will say you can not even tell that it's gluten free at all. I got the Rocket Man pizza, it was scrumptious!!! It had prochuto (I don't know how to spell it), fresh arugula, and fresh mozzarella on it. I was very happy with it. They also have a nice selection of bakery items and they also have gluten free desserts. We got the flourless peanut butter cookie, I haughty recommend you try it. They even had a gluten free carrot cake there. I've tried other pizza joints, such as pieology etc, this place isn't anything like it. It has a freshness, and a sense of comfort. Staff super friendly, food quality it great and you don't wait that long at all. The only down side is that they don't have a fountain machine for pop (soda). There was a sharp drop in quality/value about a year and a half ago and it has remained. They stopped providing Wi-Fi. Worst iced americano I've ever had, every time. Pretty much just brown water. I have given them many chances, it's always terrible. Food quality has been inconsistent. This place used to be so good a few years ago but has gone downhill. Absolutely horrid. Very disappointed. I ordered at 8:30,it arrived just before 9:05 as promised,but somehow it arrived COLD. I don't mean Luke warm...I mean cold. Usually I'm not one to write bad reviews. I ordered 2 Pizzas for 50.00 that was my mistake which I won't be making a second time. By the way I live 2 blocks away. I just don't get how in 35 minutes you can order a pizza and get it cold. The pizza wasn't great either. And I'm not a picky eater. I'll eat beer battered rocks but this was just gross. My wife and I always love this place. It's almost like their fantastic pizzas and coffee act create a gravity that you just can't escape if you're nearby. We love the desserts/pastries too and my favorite has been the pecan bar. Value is great for the quality of food and service has been great, even during the trying times of the pandemic. Favorite pizzas include the jalapeño popper and the Triple B, both of which are irresistible. My wife and I usually split a pizza and a salad, and I enjoy the iced tea here too, always fresh made. New ownership is creative and understands the local market, and is dedicated to the tradition of fresh tasty food and coffee combined with friendly and attentive service. Yikes! This place needs help, as in an adult manager on site. Both times I've been here the place is being ran by kids. Not to say they weren't nice but as far as operations there needs to be someone on site to make sure quality control is in check. Our pizza was probably one of the worst I've ever eaten. Drenched in a sweet balsamic and very not proportional. It was like it was falling apart. I felt like telling them but I was already annoyed by the fact that our salad and pizza were sitting on the counter forever while we sat at our table outside and not one out of the four teenagers running the place came out to tell us it was ready. There wasn't even many customers at the time maybe 2 at most. It's not like they were to busy to come outside and say "your pizza is ready." Or better yet just bring it out to us. Pizza is good. The dining room is always dirty. I have been here three times, not once have the tables been cleaned or an offer to clean them. Have had to clean a table every time. Young staff which is fine but they do not wipe off tables. Because of that I wonder about cleanliness in prep. There is an A rating on window but dining room a mess. read more

Came to this restaurant, because I am a loyal customer who wants to support local businesses. However, I was extremely disappointed. The restaurant opened up for dine in, however, there was no social distancing (all the tables were opened for customers and the tables were NOT 6 feet apart). Not only that, the chef was not even wearing his mask properly the entire 4 hours I was there. I am extremely disappointed. Tried this new place for lunch pretty good. Basically they serve brick oven pizza and salads. Also have pastries and Stumptown coffee. Ordered the "Starch de Triomphe" pizza which my wife liked and the Kale Ceasar Salad which was quite nice. Nice ambiance. Will be returning to try some items. Kinda of a casual place though with paper plates and plastic utensils, also you need to pick up your own items when they are ready. read more

Whenever I'm in Redlands I always try and make it a point to get a pizza from here. It's hard to find a good specialty thin crust pizza in the IE. I had some great pizzas in LA and this is up to par. I love mushroom pizza and theirs is good but I tried the the butternut squash pizza for the first time and I think it took over as my fav. I've also had their eggal sandwich in the past and it's great. I've never really thought to pair basil in a breakfast sandwich but it really brightens it up. Never had a bad experience with customer service. I always try to order ahead of time so I've never had any problems with the wait and everyone that I've encountered has been pleasant. read more

100th review: Bricks and Birch (B&B), established in 2015, offers a whimsical take on artisan style pizzas cooked inside a wood burning, brick oven. The pastries are baked daily and their coffees are ideal. The venue was quiet even though it was filled with mostly students on their laptops studying, but we managed to find the last table in the house. The B&B offers outside seating which was almost full as well. We ordered the Mushroom Brie and the Ron Swanson pizzas during this visit. Thin crust, just the right amount of fresh toppings and cooked to char perfection. You can eat the crust on its own! One of the best brick oven pizzas we have ever had in the county of Riverside. The staff are extremely friendly so don't hesitate to ask any questions that you may have. They carry genuine big smiles which means they are happy at what they do. The venue is well-kept, designed well and to me, perfectly sized. No room for boldness here which makes the ambience socially pleasing. read more

Good food. The "Kale Caesar" was excellent...but made with baby kale so it was better! Tender and flavorful. Ordered the Magpie pizza which was incredible. There was a lot of Smokey-flour on the bottom of the crust from what may be a brick oven needing to be brushed clean. Service was a little slow for lunchtime especially since there were very few patrons present. I assume this may be due to a high volume of phone-in or online orders. Mmmmm! Fresh wood fired pizza! Today I got the ron Swanson and the mushroom Brie. After I placed my order the restaurant called me back to tell my they were out of Brie and if I'd like to substitute it for other cheeses they have. No problem I ordered shredded mozzarella and Parmesan. Super cool for them to call me back. Mushroom pizza was DELICIOUS and cooked perfectly! I Unfortunately the ron Swanson was burnt and black. ;-( SAD. The cashiers were friendly and the place was super clean. I just wish I could sit and eat my pizza right when it comes out of the oven vs having to get it to go (thanks a lot covid) I'll be back to dine in when the world is normal again. read more

I absolutely loved the pepperoni pizza from this place! Simple yet tasty and their dough was just incredible even eating it alone. I had to ask what their secret was and believe or not, it was a secret homemade recipe that no one knows about except the owner. They make their dough daily and when ordering your pizza its made in their brick oven. I'm so sad this place is beyond reach for me. I will definitely have this if I am ever out in Redlands again. I totally recommend it for anyone passing thru or staying in this town. It's located in downtown Redlands and a must try if you are strolling thru. They do offer a couple of gluten free pastries (I always order the Flourless Peanut Butter cookie), and their gluten-free Cauliflower crust is UN-REAL...seriously, unreal. I could hardly believe it was gluten free, it actually scared me enough to double-check lol. Their vegan cheese is good too, it's definitely on the thinner side, as far as vegan cheeses go. I do feel like when we've ordered in-person, the toppings are usually more generous. There have been a couple of times when we've ordered for takeout, and the pizza seemed a little skimpy. Especially, since this place is a little pricier, I appreciate when they actually give a good amount of toppings. I always order the Ron Swanson on GF Cauli crust with vegan cheese, I love it! Hubby always orders the Swineapple, he loves it too. In the past I've had their mushroom pizza, and it was amazing. Last time we came, we ordered 2 pizzas (one with GF crust + vegan cheese), 2 glasses of wine, and 2 pastries, and it came out to around $78 ($90 with the tip). Tried their brick oven pizza for the first time a few weeks ago and came back again much sooner than I had anticipated. Both times I tried the butternut squash ricotta pizza. Crust is great but I found out quickly that the topping amount varies. The first time they didn't add that much squash and bigger scoops of ricotta with a nice amount of mozzarella. The second time they added a lot of squash and mozzarella but not so much ricotta. I wish they'd be more consistent so it'd be easier to customize my order. read more

Bricks and Birch is a great place to come for coffee or pizza. That seems to be the baud of their business and they do it very well. The menu consists of a variety of pizza, as well as a few kinds of salads/bowls. The pizza is cooked in a wood fired oven that is right next to the register. The pizzas get more creative with the ingredients, but I decided to stick with the classic margarita. A true test of quality. The verdict: pretty good! The crust is a consistent thickness throughout, the amount of cheese is perfect and the basil sprinkle adds to the flavour profile. I would say that the sauce was maybe a little too creamy. I would like it to be more tomato based and have the mozzarella flavour build on that of the sauce and not just blend in. I got a slice of pumpkin bread was great in flavour, but something was off about the texture a little bit. My favourite pastry though is the lemon blueberry scone. Had a fantastic blend of citrus acidity, sweetness, and blueberry fruitiness. Would definitely get the scone again. A suggestion: since the pizza had quite a lot of sauce, the lady that handed me the pizza said she could make another with less sauce. But why not just ask the customer how much sauce they prefer? Overall I had a good experience and would come back again for the pizza and a friendly environme to hang out read more

They definitely aren't in a hurry to make your food. Every person working is under 28 and more interested in talking about the wild night they had instead of getting peoples orders out. As for the pizza, it's was ok. I would t go telling anyone I had the best pizza ever, then the coffee was burnt tasting and lacked anything that would make me want to come here in stead of starbucks. The pizza oven is super small, they can only fit two 6in pizzas at a time. My advice, is don't half ass two things, whole ass one thing. You can tell by the way on a Saturday afternoon they aren't busy. read more
