GREAT texture on the "thick" noodle option. Perfect chewiness. These were slightly thicker than spaghetti, but thinner than udon. Handpulled Lanzhou style noodles is what they are famous for. No disappointments on the noodles themselves. Broth was very flavorful. Could've been just a tad hotter, temperature wise. The sliced beef was a little tough and dry? Seems like that shouldn't be possible for a beef noodle soup. But if cooked too long, moisture can actually be driven out of the beef or other meats. And I think next time, I'd opt for the beef rib vs. the sliced beef. Friendly service. I like their house made chilli oil. Normally its not my thing, but it actually complemented everything and didn't overpower the other flavors. I wasn't sure how much room I had in my stomach, otherwise would've had the combo meal. It's a better deal. As far as the dine-in experience, I was a little frustrated with the ordering by QR code. My 5G connection was super slow. And I had trouble logging into their Wi-fi. Wild Cumin is the name of the old restaurant before them, but still the name of the Wi-fi. But my phone kept trying to log into their point-of-sale Chowbus network which has a similar name. It kept popping to the top of my list of networks. And with the handwritten password on the table , it was hard to tell upper or lower case and all one word? I think all lowercase, all one word is what finally worked, but best to ask the staff if you have trouble. Suggestion: visiting this restaurant (as well as 99 Ranch and other shops/restaurants here at Great Wall Shopping Center) on the weekend is a little bit of a nightmare with parking. Try to visit on weekdays or off-peak hours on the weekends if that's your only option. Way less stressful if you avoid the crowds. Food tastes better if you're not mad. My 2nd visit: picked up take-out so I could get home to watch some hockey. I had the beef shank (cold appetizer), spiced egg, braised pork over rice with added "New Orleans" wings, add-on beef rib, and the chef special cucumber salad (large). The sliced beef shank cold appetizer is a winner. Excellent flavor. Just the right drizzle of sesame oil. VERY good. Spiced egg. Forgettable. It tasted kind of dry and not much flavor. And it was neither hot nor cold. And it was a very small egg. Braised pork over rice. Disappointing. From the photos on the menu, I thought this would be "lu rou fan", or the red pork belly over rice. I don't read characters so, maybe I just assumed incorrectly from the photos. In photos, the pork is in a rich red sauce. My dish was in a very thin, brown braising liquid. The meat was brown and I thought it was beef at first glance. Also, as I mentioned with the beef noodle soup, the meat was dry. Cooked too long or at too high a temp. And the braising liquid didn't have much flavor. This was a miss for me. But if their business picks up, maybe they won't hold this as long in the kitchen and less chance of being overcooked. "New Orleans" chicken wings. These were nice and juicy and welcome deviation from the fried wings that you can get at just about any Chinese restaurant in the area. Very flavorful. I don't hate the fried kind, but these were nice. The hint of paprika was hard to pick up at first. I wish it was just a little more heavy on the seasoning. Beef rib. YES! This would've been better with the noodle soup the previous night. There's a pretty good amount of fat. That might be off-putting for some, but you don't have to eat it the fatty part if you don't want. The meat was tender and flavorful. The one rib I added to my braised pork order was plenty for me. But if you might want to get an add-on rib, just in case if you order the beef rib noodle. Chef special cucumber salad. Excellent. Din Tai Fung and Dough Zone do a similar cucumber salad, but this one is REALLY GOOD. You can tell they salt the cucumber for a long time to draw out the moisture so they are nice and crunchy. And they are zesty! Nice big pieces of chillis in the sauce and big slices of garlic also. The spice level is higher than the other, but not too spicy. Just right. And if you have these as leftovers. The next day it's even better. Come for the noodles and you won't be disappointed. As I mentioned previously, they are a new outlet.
