A new Viet spot in Springfield? Had to try it out, here's my review: FOOD Pleasantly impressed. The pho was amazing, broth was savory and the brisket was thicc and juicy instead of thin. The vermicelli bowl was also very good. It came with pork, shrimp, and the crispy egg rolls. We ordered a side of Summer Rolls and they were good, but not the best. But the crispy egg rolls tasted really good. AMBIENCE It's very nice and clean inside with a fusion of cultural elements from Vietnamese culture with a minimal aesthetic. SERVICE Service was great! We were greeted and seated upon entrance very quickly. It didn't take long for them to notice we were done looking at the menu. And the food was out in under 10 minutes! CONCLUSION Definitely plan on going here again to try out their other dishes, but this was a great first impression. 3.5/5 We were craving pho and were in the area running errands so we came by to visit Pho Hong Anh, but saw Brothers Bistro in its place! We entered and the interior is more modern and "hip" than before. It was a seat yourself kind of deal and then a waiter/waitress will come to take your order. We came around 1:45-2:00 and it was pretty full. We ordered the 19. Cơm Tấm Đặc Biệt (a rice dish), 46. Phở Tái Chín, and 54. Bún chả giò (a vermicelli dish). It took a bit of time for us to get out dishes and surprisingly, the pho was the last one to come out. The meat had come out fully cooked. The pho was really good! I don't know if I would order the number 19 again but I think that's more of a personal preference thing. Service was not exquisite. But not bad either. We paid upfront, later found out we were charged for a coke when we didn't order one. They were able to make it right though and apologized. I don't know if I'd drive out of the way to come here, but would order the pho again. It is a bit pricey but what isn't these days? read more

Brothers bistro is the real deal!! This place was highly recommended by some friends and we are so glad we were able to check it out. The menu is very impressive offering a variety of all the best Vietnamese entrees and appetizers. We decided to try a little bit of everything so we got the spicy beef noodle soup and their rice noodle platter that comes with grilled pork, steak shrimp balls, and eggrolls. Everything was packed with flavor and well balanced. The spicy beef noodle soup portion is pretty generous and every bite was savory and just a little spicy. The grilled meats were perfectly cooked and made the perfect bite when paired with the rice paper, noodles, and veggies. The iced coffee was a perfect way to top off the meal. Came here for a weekday lunch after a friend said this was a great spot to grab a meal in the area, since they are affiliated with another Viet restaurant in the area. Spring rolls were decent, but on the small side and pho was decent but not stellar to be honest; I'm told their rice platter dishes are much better. Service was quick and ok- one of the employees had a difficult time understanding me and got my order wrong (I wanted no onions and cilantro in my pho, yes, I sure did say I wanted to have no onion/pepper breath in order to later to smooch my partner). Nice decor. Floor was very--- slippery: I'm not sure if they just mopped and didn't have a sign out or the rain from outside just sticks to their floors (god I hope it was water and not grease or lack of cleaning), but I think I almost died when I was in the middle of the restaurant and almost slipped on my behind. Highlight was the thai hot pot. Lots of good food that cooks really quick in their flavorful broth. Also had the crispy egg rolls and snails in coconut curry sauce. The egg rolls were delicious and decent size. The sauce for the snails had great flavors, unfortunately it was really tough to get the meat out, even though they provide you toothpicks to help. The place was quiet and everything was very clean. Tried this place for the first time today I had the #19 and 2 Saigon Beers which bought my total to $30ish with a 20% tip Presentation was really nice. Servers were friendly and helpful. They bring you three spicy sauces in a container which I loved I will come back. I didn't love some of the stuff on my plate but that's due to personal preference. First time at this new spot, very impressed! I was a regular at Queen Bee in Clarendon a million years ago, and eventually switched to Eden Center after Queen Bee closed. I can only speak to the spring rolls (cha gao) and caramelized shrimp, but these were excellent. Tons of flavor, very fresh ingredients, well prepared. I'm here now, and it looks like most of the other diners are Vietnamese. I'll definitely come back to check out more of their menu. (And hopefully they will eventually add banh mi). This is a nice casual place with delicious pho and other options. The Pho Brothers Dac Biet is pretty large and had a nicely flavored broth.. Great solid spot for Vietnamese food. I haven't tried the pho there but here are the dishes I tried and highly recommend: Com ga ro ti - crispy chicken marinaded in a delicious sweet and savory sauce. If you're familiar with Vietnamese quail dishes this is basically using the same sauce but on a big quarter piece of chicken. Really good! Hen Xuc Banh Da - shredded clams eaten with crispy rice crackers. Must try, great appetizers that is easy and fun to eat Banh Xeo - Vietnamese crepe stuff with vegetables, beef and pork. Cooked very well and great "light" entree that won't make you feel heavy afterwards. Com tam dac biet special - a large entree with grilled pork, shrimp, tofu, shredded pork, and an egg. This is a big dish and will leave you feeling full and satisfied. Overall everything we had was super delicious. A must try solid place for traditional Vietnamese food with a little bit of something for everyone. Highly recommend especially for those wanting to try Vietnamese food for the first time. read more

I just came for lunch & ordered "com tay cam dac biet" which clay pot rice seafood & Chinese red sauce. Not much seafood except 3 shrimp & 2 a small pieces squid with a looot of vegetable & rice. Missing Chinese sausages & need more seafood. I paid $20 for each order that total $40 with unsatisfied. Need to be check your food quality. Very disappointed & has never happened like this before. I used to come to this place all the time before it was sold, so I was really interested to see how much it has changed. The ambiance is very nice, and has a new modern look to it. It's a great place to come for celebrations since they accommodate for large parties. Food wise, I wish I had better things to say. If you don't have high standards for Vietnamese food, this is a great place to try. The pho broth was great, it was very hearty. The vermicelli had a great flavor, but the meat could have been a bit saucier. I love my vermicelli with more dressing, but it wasn't bad. Overall, it was OK. Considering the price, I would not say it's worth around $20 for something you can try elsewhere. If you're planning to visit with a large party, I definitely think it's a nice place to go to. Just consider that the prices have drastically increased. The service was good, as they were kind and quick with our orders. If you're willing to spend the extra money, it might be worth a try. We found this little gem by accident. It is not a fancy place . The restaurant is very clean and spacious. Staff is very friendly and gives very helpful recommendations for dishes. This restaurant smells interestingly of incense when you walk in - at least that means it masks the smells of food. Despite the incense, this ain't no vegetarian Buddhist temple though, since there's plenty of meat to be served here. Restaurant is fairly clean and new, decent ambiance, with some newer V-pop music playing softly in the background. #48 Hủ tiếu: They asked me if I wanted my noodle to be "dai" (clear flat vermicelli noodle), "mềm" (white flat vermicelli noodle similar to pho noodle), "mì" (egg noodle), or a combo of two different types of noodle. These choices aren't indicated on the menu so be prepared, but I did like that they gave me those options. I also ordered my dish as "khô" (dry noodles with sauce to mix and a small soup bowl on the side, as opposed to noodle soup altogether). The mixing sauce which was soy-sauce based, tasted pretty basic IMO. The bowl of soup on the side was bland and basic AF, it didn't have that beautiful aroma of dried squid and pork bone soaked in which is what it's supposed to taste like. #19 Cơm tấm: This is a pretty sacred Vietnamese rice dish that you'll find at just about every Vietnamese restaurant in the US. Here, it's served with many toppings incl "lạp xưởng" sausage, two types of spring roll, grilled pork, steamed egg, etc. The problem I noticed was that the grilled pork had this disturbing sweet-sticky taste that reminded me almost like it was trying to be General Tso's chicken. Also the bowl of fish sauce to accompany the rice tasted too sweet for my liking. The main plus about this restaurant is that the portion size is quite generous, so considering that most entrees are in the $15 range, you do feel like you're getting a good amount for your money. Also if you're not picky or experienced with Vietnamese food, this place may be a good pick. Brothers Bistro isn't a terrible place but still I felt very "meh" by its lackluster cooking (one dish was too bland, the other too sweet) and will be unlikely to return. read more

We ordered two phos and two platters, both pho and one platter were excellent, but the second platter (sweet and spicy vegetarian, #77) was served in some sauce that was neither sweet nor salty. It was extremely bland, had no flavor, and tasted like a collection of steamed vegetables. The two white members of my party had to ask for chopsticks, and they got them the second time they asked.
