It's hard to fully express my appreciation for burger-chan (#1) into words, but for my 400th review in Houston, it appears I must. Willet and Diane, the husband and wife duo have taken a non-conventional approach to casual dining and in doing so, have amassed quite the reputation and have become one of (if not *the*) city's most beloved burger spots. Formally Kuma Burgers from back in the day, their transition from their previous location in Greenway to their current Galleria locale has been well received by their dedicated local following. Their limited hours means the window is short, resulting in practically daily lines during their uber popular lunch service. They close at 3pm, so get there plenty early for food guarantees and a seat. The format (#2) is genius: find a mini clipboard that is color coded (based on the food item) and customize it by noting what is / isn't wanted. I'm ordering a minimum of two 5oz patties and am forever tempted with the add-ons, including cheese, bacon, a fried egg, slabs of spam, avocado, and an endless barrage of sauces that include scallion aioli and sambal mayo. The end result is a spendy burger that is of my doing. A delicious doing. I've yet to have a bad meal here. I consider myself fortunate to have tried a number of items, from different burger combinations to burger alternatives such as their highly underrated falafel burger and panko breaded mahi mahi fish sandwiches. I've also enjoyed their tater tots, fried cheese curds, sweet potato + regular fries, and even the curly fries. While I don't usually indulge in too many drinks, I have to say they have one of the coolest water machines out there. It spits out ice perfectly and the water is ice cold. I've also tried some of their indulgent shakes, including strawberry, corn and black sesame. There is also a robust list of alcoholic beverages in the form of craft beer for adults who want a little buzz with their burger. Lastly, their staff gets some major kudos. While Diane handles the register and Willet oversees the kitchen, the rest of their young staff is hustling away at getting food out and keeping the place in pristine condition. They really do an excellent job at making the dream work with some quality team work. I appreciate their efforts and love their approach to community. They are often participating in collaborations with others in the food space and coming up with interesting seasonal, experimental items, and even daily riddles to keep customers engaged. BEST SMASH BURGER!! I stopped in for lunch on a weekend and was pleasantly surprised to find no line, though I suspect this place can get busy, given the signs suggesting you calculate wait time by multiplying the number of people ahead of you by 2 minutes. Based on my experience, though, with the friendly staff and a few customers changing their orders or filling out forms incorrectly, the wait time might be a bit longer than that. I decided to build two different burgers, along with fries, a chocolate chip cookie, and a chocolate milkshake. I went all out on the first burger, piling on toppings I typically enjoy- making it nearly impossible to mess up. To balance things out, I also built a simpler burger with just lettuce, tomato, and onion to taste the burger in its most basic form. Let me start with the buns. The sourdough is the clear winner here. It's incredibly flavorful, and after tasting it, everyone in my group who had tried the Brioche said they'd stick with the sourdough from now on. The patty itself had the perfect crispness you get from a smashed burger, and it was well-seasoned. However, I found the single patty to be a little too thin for my taste. I'd definitely recommend going with at least two patties for a better meat-to-bun ratio. The toppings were fresh, crunchy, and nicely balanced, although the sauces were a bit inconsistent in their portioning across the burgers, so I might ask for them on the side next time. The milkshake was good, but nothing that would blow your mind- still a nice treat. The chocolate chip cookie, however, was spot-on, delivering exactly what you'd expect from a classic: chewy, warm, and delicious. First time here and would not be back. Not because it was "bad food" but I went a better smash burger place recently. I got the 2 ounce double meat (lady at the counter said the meat is paper thin). I don't eat a lot and neither does my husband but I wish we would have split the burger. They were too big for us. The burger it self was "ok". I didn't like the taste of the pickles and there was nothing special about it. My husband was also not that impressed with his burger either. Wait was kind of longer for what you would consider fast food but if the line were outside of the door, I would probably try to come back at a different time. We were lucky to only have the line be from the counter to inside the door on a Sunday around 2pm and this was honestly the best burger I've ever had. The curly fries and regular fries were whatever but their burger menu is so extensive with so many options and combinations to choose from, I feel like I have to go back to try every possible combo. I think I might have found a new favorite burger spot! I absolutely love how customizable the burgers are. I don't like my burgers to be too tall so I made sure to get a 2 oz patty so that it'd be easy to eat. I have been trying to visit Burger-Chan for a while now, but it has been hard given their limited lunch-only hours. I finally put it on the calendar when my girlfriend and I saw the owners recently featured on Rice's Valentine's post. We arrived right around noon, and the line was from the cash register to the door and then some. The line was this long or longer the entire time we were dining here, so be prepared to wait. They have clipboards for you to customize your order of beef burger, chicken sandwich, fish sandwich, hot dog, or Loco Moco prior to getting to the register. It is nice to figure out exactly what you want while you wait. We ordered a burger and a Loco Moco, which is a burger rice bowl with gravy. The sit-down area was packed, but people left while waiting in line, so you should not have trouble finding seating before getting your food. In total, we waited around 30ish minutes from arrival to getting our food. The burger was fantastic. I opted for 2 2oz patties, and they came out thin and perfectly smashed. The pickled jalapenos added a depth to the flavor as well, and everything came out perfect. The Loco Moco was delicious as well. The buttery gravy and fried egg tied the whole meal together. I added some jalapenos from the burger to it as I like spice. It is no wonder why Burger Chan can be open for limited hours and stay in business. We came on a weekend around 1:30PM and it probably took us close to an hour waiting in line and getting our food. Its a super casual spot in a strip mall that seemed pretty empty on the weekend. If anyone's been to Los Tacos No 1 by Time's Square, this felt like the Asian decorated, burger version of it. Anyway, its a build your own burger spot with various protein options including burgers, chicken, fish, hotdogs, and falafel. They also have fried sides like curly fries, tots, and taro chips. I built my own burger, got curly fries, and a black sesame milk shake. I was not really impressed with the burger. It was fine but not memorable to me. The curly fries were nice and crisp and the various sauces we tried were also great, scallion aioli and sambal mayo were my faves of the day. The black sesame milk shake was also really good and I love finding Asian dessert flavors in traditionally non-Asian desserts. I was able to try my partner's chicken sandwich and that really blew me away. I didn't expect to like it but it was a really nicely grilled chicken breast, seasoned like a yakitori skewer and I absolutely loved it. Honestly probably the best burger you'll get in Houston. Super customizable, as you can tell by the menu, but the quality of the meat and all the ingredients was top tier. Standouts were the sourdough bun, the roasted jalapeños, and the sautéed onions. For the sauce I highly recommend the scallion aioli. I prefer to put the sauce on the side as to not take away from the flavors from the burger. The egg on top is a great addition. How long have I lived in Houston and this is my first time having burger-chan. I love a good BBQ burger, I expected a good BBQ burger, but burger-chan doesn't have a good BBQ burger. That reason alone doesn't deter me from coming back because their burgers are actually really well crafted. My boyfriend's scallion aioli grilled onion double bacon cheeseburger was PHENOMENAL. I will drink that aioli, drench it on everything when I revisit. Operating hours are 10AM - 3PM, and the restaurant remains busy every single hour. This is my second time coming here. I tried to rye bread this time. It added a unique flavor. I got the mayo sauce, but I tried my friends sambal chili sauce, and I liked it more because it was spicier! You must try to the sweet potato waffle fries! I tried their pre-built "burger-chan" burger and it was pretty good (although not my favorite smashed burger in Houston, to be honest). I'm glad I got the Thousand Island dressing on the side because I also snagged an order of Scallion Aioli and that was much tastier on the burger. Pretty good curly fries on the side. Burger-chan was a new and fun experience! When you walk in, you see little clipboards to select from and place an order to your specifications. The restaurant itself was cute, clean, and decorated with coloring pages and chalkboards with quotes and daily puzzles (cute!). Counter service workers were friendly and quick! We got two beef burgers, fried cheese curds, and curly fries with a soda. The beef burgers were large and juicy. I generally enjoyed the burger, but I think it's good to be aware that there is some kind of seasoning, perhaps (maybe it was the pickles), that have a flavor that is unique to their burgers. It was a good flavor, but kinda sweet and unexpected for what I thought was a typical smash burger. Trust...I ate the whole thing . The curly fries were nice and crispy and maybe needed a little dash more of salt. The fried cheese curds were BOMB! They were crispy on the outside and soft and warm on the inside. Don't shy away from trying out their sauces. I loved their variation of ranch (lots of dill?), the peri peri sauce is spicy spicy, and the honey mustard was solid. Great food!! I got takeout and it was incredible. Not a long wait - only four people in line at noon on a Wednesday. Highly recommend adding sautéed mushrooms and onions to the burger. I got all the freebies on it as well. The sautéed Serranos are also a really great flavor if you can handle the heat. The kids size is more than enough for me - I'm like a 5'5 petite girl so use that information as you need. Overall, this is my new favorite burger in Houston! I never came here when they were in Greenway plaza. The restaurant was packed for Saturday lunch, and the line moves very slow. We waited in line for about 30 minutes before even ordering. After ordering we waited about another 20 minutes to get our food. Despite the long wait times, the service here is impeccable. Diane, the owner, took our order. She was very thorough and so friendly and personable. There was a small wait to get a table but as soon as someone got up to leave, the tables were cleaned immediately. All of the staff were so helpful and friendly. The restaurant was very quaint and clean. There is writing on the walls and they have coloring pages that you can hang on the walls. The green tea shake was delicious. It wasn't too sweet and hit the spot. The burgers are pretty good but I've had better. The beef is cooked more than I would like but the variety of toppings add flavor to the burger. I liked the brioche bun the best. Overall, this is a good burger place, but I'm not sure if it's worth the wait. read more

I love the mark your own food choice system. It takes away from the anxiety of going up to register to decide and being asked a bunch of questions. I enjoyed all the choices of proteins, sides, sauces and fries. Any place that serves curly fries gets a thumbs up. I liked the large parking lot and outside dining area. Wow! I cannot wait to get back to this place. I went because it's rated number one by some food tiktok influencers I follow. I have to agree!! The ingredients are so fresh, the chef even hand picks and cleans the lettuce every morning for the burgers. That burger was to die for, it left me dreaming. Not to mention the scrumptious cheese curds with that delicious marina sauce. It's been on my list to try for a while now. After hearing about them on "What's Eric Eating" and numerous articles and social media postings, finally made it out. And after visiting, I wonder I didn't I come sooner. The moment you walk in, there's this friendly vibe. I love the customization you can do to your order.
