We were able to try Carabella's while staying at The Cliffs in Princeville. They visited our location twice during the week we stayed and we had them for our last dinner on the island. It was nice to be able to take your pizza back to the room and eat on the lanai. The staff who took our order were very kind. We ordered a few beverages, which they kept cold for us while we waited for our pizza. The pizzas come 10 inch only. We ordered 3 pizzas for a family of 4, and had about 4 slices leftover. We had the Hawaiian, Meat Lovers, and Margherita. I personally enjoyed the Hawaiian the most, the pork and pineapple combo was delicious. The Meat Lovers was also well received. The Margherita was pretty good as well. Crust on all the pizzas were great, perfectly wood fired. The prices are excellent, $11 to $14 depending on which pizza you want. Came to the Carabella's pizza food truck on Saturday evening when visiting Kaua'i. The town of Kapa'a does a farmers market type downtown festival on the first Saturday of every month with food trucks, live music, booths, etc., that fills the entire town. Such a blast! They do authentic wood fired pizza and it is absolutely delicious!! The local woman behind the counter that took our order was super friendly as well. We ordered the supreme and pepperoni and the pizza size had a perfectly thin crust (but not paper thin). Love, love, love this local spot! read more

While vacationing in Kauai I was excited to find out that Carabella's Pizza food truck was going to be at the Cliff's in Princeville. In addition to their regular menu Carabella's also has gluten free and vegetarian selections. Their pizzas are 10 inches. I chose a gluten free vegetarian pizza and a gluten free sausage and mushroom pizza. Both were excellent and we had left overs. Food truck, complete with a trailer holding a large wood fired oven. Wife ordered the $12 garden vegetable pizza, while I ordered the $13 meat lovers pizza. Their most expensive pizza is the $15 supreme. Waited 10 minutes with only two persons ahead of us. They prefer cash but will take credit cards with a 4% surcharge. Got the two pizzas, and just did manage to get it back to the 100 yards to the condo, playing hot potato, with feral cats waiting in the wings for any droppings. 10" meat lover's pizza covered every inch with pepperoni, homemade sausage, bacon, red sauce over cheese. The razor thin rust was blackened on the back in several places, almost burned, baked until it was crackly firm. Wife's garden vegetable pizza came with carmelized onions, peppers, zucchini, mushrooms, spinach, olives, red sauce over cheese. Firm crust, smoky flavor, and crunchy toppings. The wood fired oven reminded me of a character from past TV shows -Fred Flintstone comes to Kauai! This is a food cart that comes to our resort, where we're staying in Kauai. My family was coming over to our resort, for dinner, we were planning to have BBQ out in the garden, but since the pizza truck is coming over, right outside our entrance, we might as well take advantage of having pizza cooked for us on a WOOD FIRE! Doesn't that sound appealing. We thought so too! We ordered 5 different types of their pizzas: 1. The Margherita, 2. Hawaiian, 3. Supreme, 4. Spicy Italian, and 5. Mean Lover. They were all ready for us in 15 mins. the time they said it will be ready. Everybody in my family, including a toddler almost 2 LOVED THEM. For me it is more of a "We need to go to the store since we are out of food, oh wait the Carabella's truck is here and I can get it now. Let's do it!" The pizzas are about 10" with multiple predefined selections as well as the ability to add your own toppings. The staff was friendly and the pizza were made reasonably quick for pizza, maybe about 10 minutes. I had the Spicy Italian. It was okay. I'm not sure what it was but there wasn't any part of it that that was necessarily bad and there wasn't a part of it that was excellent. There spicy Italian sausage wasn't really spicy at all. Since this is a "food truck", we have spotted it at KCC, the monthly art walk, and down in Lawai. The owner says that they are also scheduled up in Princeville. The pizza is a 10" thin crust and it is cooked in a real pizza oven! It's tasty and there are a lot of choices. Our family really enjoyed the pizza. They are willing to customize the pizza to fit your tastes or needs. My wife asked for a cheese-less pizza and they were willing to meet her needs and make it her way.
