Feeling we had run out of food options or interest after only two days, we realized the reviews here were better than the composite in Yelp. I'm glad we came here. This is a limited chain started in the 70's. They've never seen a reason to update the dining style. This has got to be one of the last places in the country with a large salad bar you get to graze before dinner. Being a steakhouse, there is no reason to go with half the menu. We had a mix of steaks and prime rib. As expected, the prime rib is somewhat more cooked than I'd like, and the steaks were cooked pretty solid. The sauces available all looked good. Some of their meat is prime grade. That puts them above most places. We each had a cocktail. There was no Rye in the house for a proper Manhattan, so we had them with Makers. They were solid other than that. This is a restaurant that seems to cover both the more casual restaurant world they apparently started out as, and the finer dining we went for. read more

We were just visiting and decided to eat there because it looked packed which is always a good sign. We had to wait about 10 minutes, not bad. It was ok. The salad bar is a pretty decent choice with lots of veggies and several pasta salads to choose from. The steaks are decent but I wouldn't call them outstanding. The cows that gave their lives for our indulgence are probably not overly proud of the meat patties they became as they lacked overall flavor. I guess I just expected more from a town rich in agriculture. I would go back and probably add extra toppings to the steak to increase the overall flavor. Beck, our server, was great. But we were pleasantly surprised at how tender the steak was and I called to ask if staff and customers are required to wear mask and THEY DO ! Yay! Visited the Cattle Baron in Roswell, NM. Ordered the chicken fried steak with an appetizer. The entree appeared before the appetizer, so I cancelled the appetizer. Slightly irksome, but not enough to get my panties in a big twist. Mistakes happen in any trade, and the real measure of an establishment is how they handle their mistakes. About a minute after I turned back the appetizer, the manager came to my table, very sincerely apologized, and comped the appetizer. My entree was excellent, and I ate the appetizers later that evening at home, and they were great. So, yeah, Cattle Baron, here's five stars. read more

Checked out Cattle Baron on a cross-country stay over. We avoid the chains and always look for local fair. What attracted us were the reviews on the salad bar and this place did not disappoint. Staff was very friendly and Deborah took excellent care of us. The menu is steakhouse oriented, but the salad bar is by far the best we've seen post pandemic. It was late Monday, so went with a simple cheeseburger - which in reality is ground steak. The onion rings are the best! Salad bar has all the right amenities, along with soups and desserts. We did curbside as we had driven from Phoenix and were tired. Got back to hotel with food. There were no utensils, no napkins,no condiments. Very frustrating.The chicken strips dinner was delicious. Just arrived and it's not a good sign when a pile of vomit is outside the entry door. It extends into the entryway. The desk was notified and a guy came and mopped the entry. Did noting to wash down the cement in front of the door that you have to walk thru and track Into the restaurant. I'll review the food later but initial impression is a ZERO!!! We went to our table, passing several overflowing trash cans. I wanted to order the beautiful salad bar but after seeing macaroni in the vomit outside opted for spaghetti which I felt was a low risk food. Server forgot to bring one person's salad. The staff is great and the restaurant is very well kept. I ordered the "fresh" catfish, let me tell you it wasn't fresh. It tasted like it was caught in the green lake. I recommend you don't order the fresh catfish plate. I ended just eating the sweet potato fries. I would come back and order something different. read more

This place oozes Texas....but the food is definitely New Mexico....And the long haired pseudo straight, server was a hoot. I had Prime Rib....the most fatty piece of Prime Rib ever....It was under cooked...yet, as a carnivore....I loved the beef, the seasoning tried to be more than it could be.......the rice pilaf was as good as Rice A Roni My Wife's Rib Eye was over done at first serving so she sent it back. Out from the back came a server who looked like Frohickey in the X Files.....man it was weird...almost deja vu..but not.......it came out raw...but like me...we didn't want to make a scene...we were just too pooped from the 8 hour drive into Roswell. We ate here and the service was impeccable! Deborah, our server, was kind and attentive. We have 2 small children and our 2 year old was tired and irritable. She was very understanding and even brought him a special plate of oranges and maraschino cherries :) The food is very tasty also. The salad bar is huge and comes with most meals but can be added onto others for a reasonable price. I had a tasty 8 oz filet mignon and my husband had the 8 oz prime rib, which we both enjoyed. We stopped at this restaurant in our road trip on the way to Santa Fe. We were hungry so the salad bar was a wonderful thing and it was fresh and delicious. The bread that our waitress brought to the table was warm and very good. The shrimp pasta that my husband and mom ordered was great so was my meat. Soft, tender and yummy. We have eaten there for both lunch and dinner. The salad bar is excellent with lots of variety and unique salad dressings to choose from. The salad bar also includes 2 soup of the day choices. I had the chicken enchilada soup which was delicious. For appetizers, I tried the green chile won tons and the jalapeno bacon stuffed shrimp. The shrimp was excellent but the won tons were a little bland for our taste. For dinner, I had the 8 oz bacon wrapped filet. I didn't bother eating the bacon, it was limp and didn't look appetizing. The steak was cooked to a perfect medium and was so tender. Next time we come, we will try to hit up Happy Hour and dine at the bar. They have great Happy Hour specials including $2.50 for their house wines. This is one of our favorite Roswell dining establishments. This is a great place to eat. It is conveniently located right next to the Marriott hotel and is within walking distance. Their salad bar is by far the best I have ever seen in a steak house. It comes as a side with an entree but it could have easily been a meal in itself. My cajan chicken fettuccine was delicious. Beyond the food is the nice full bar and nice wine and beer list. What makes the place exceptional though is it's people. We were seated promptly. Everything came out in a timely manner and our waiter was a young personable man who's charm and sincerity in wanting us to have a good experience made the night as he would say "memorable ". This place is amazing! The salad bar has anything and everything you could possibly be looking for, including wheels of fresh cheese at one end for you to shave a few bits off for yourself. I came here for dinner one night while visiting Roswell for work. I grabbed a seat at the bar and had an amazing time. The bartender Anthony (whose name tag said Joe lol) was super attentive and engaging. I had a dirty martini and a a cesar salad and the food was great, but the best part was the atmosphere at the bar. I met other 3 people who were there by themselves on a work trip and we all started chatting. Our bartender engaged in the conversation with us and made sure we were good. After driving by and seeing Cattle Baron reopened and from the great feedback from the locals I thought I'd try dinner here. After a hot day on the airport ramp checking our stored aircraft I thought a good salad was in order. I ordered the crispy chicken salad as the description made it sound inviting. Unfortunately it was far from what was described on the menu and actually missing a couple of the items. Advertises salads but only had one house salad. Flys on the bar. Waitress never got us water, even after asking 4 times. Over cooked salmon tasted like long frozen. Pass on the rice. After a few days on the road we craved a really good steak dinner and Cattle Baron seemed like a local favorite so we stopped in. The restaurant has a rustic feel that makes you feel like your are entering into a mountain lodge. The place was busy on a Friday night (always a good sign) and the smell was amazing. We were seated within 15 minutes and the staff was very attentive from the moment we arrived. As a part of most entrees the restaurant offered a salad bar option but they did allow substitutions for fresh steamed vegetables when we asked. We shared a peppered ribeye with a baked potato, mushrooms and steamed vegetables. We both enjoyed glasses of red wine (they do not have an extensive wine list but our choices were fair quality) to compliment our tender ribeye. The meal was more than plenty for the two of us, and it was very well prepared. The only recommendation is that we would have infused more peppercorn into the crust of the ribeye to increase the flavor profile. Overall, it was a lovely meal that made it worth the stop in Roswell. read more

It has been more than 10 years since my last visit and i was eager to take the family. My wife ordered the catfish, my son the special which was salmon and I had the ribeye. The catfish was excellent and by far the best meal at the table but only came with one average sized piece. My son's salmon was ok but for $25 I expected much more. My ribeye was extremely tender but lacking taste. I was truly disappointed knowing I could have gotten a far better tasting steak at Outback for about $10 less. Staff were great and place was clean.
