    Located near the SA Recycling Building this little food truck packs a punch! The service is spot on and all orders are made fresh! The ingredients are sliced, fried and hand tossed right in front of your face! The Cemita is unique and looks like a classic torta but has way more flavor. The bread is soft and keeps its integrity throughout your time eating it! I believer this place is cash only so be mindful of that!

    I've been searching for a good place that sells cemitas in Santa ana and all the places Ive tried have failed me. I would drive to Los Angeles to find them till I found this spot. It's a small food truck located in the heart of a neighborhood. It's a hidden a hidden gem. So I've decided to start the a Yelp page since they are fairly new and nobody has made one for them . I highly recommend this place the cemitas are on point and hooked up . Will be returning

The photos caught our eye, but they don't even do justice to the actual experience. The modest facade completely hides the gem buried within; the moment you step through the doors, you are transported into a beautiful, vibrant atmosphere. Despite arriving just before 7:00 PM on a busy Saturday night, we were seated incredibly fast. We had the absolute pleasure of being served by Karla (with a 'K'). Her enthusiasm, attentiveness, and deep knowledge of the menu were top-notch--truly a model for how the entire service industry should operate. As for the food? Out of this world. From the presentation to the flavor, the attention to detail is flawless. It is completely clear that Rosa Madera was created by someone with immense vision and heart, and they've managed to find a staff that shares that exact same passion. We are so hooked that we will absolutely be making the trip back from San Diego with the sole purpose of eating here again. In the meantime, my friends and family are going to get sick of me over the next few days, because I refuse to shut up about this place!

The restaurant may have potential because the food itself was flavorful, but it seemed like they were either understaffed or unprepared for the number of customers they had. Another disappointment was the drink selection. We were told they don't have a liquor license, so hard alcohol isn't available. Their sodas were canned, and when we asked for juice for the kids, they told us they were completely out. As for the atmosphere, the restaurant is on the smaller side and felt more like a converted house than a traditional restaurant, complete with a fireplace and television in the dining area. The food had good flavor, which is the only reason I'm giving more than one star. Unfortunately, the long wait times, missing meal, lack of drink options, and poor service made the overall experience disappointing.

I arrived at 8:21 PM and was told that I couldn't order food or sit down to eat because they were already closed. I was confused because both Yelp and the sign literally posted outside the front door say they close at 9:00 PM. When I pointed that out, I was repeatedly told, "No, we close at 8." That simply doesn't make sense when your own posted business hours say otherwise. I completely understand that a kitchen may close 30 minutes before the restaurant itself closes. Had someone simply told me, "Sorry, we decided to close the kitchen early tonight," I honestly wouldn't have cared and probably wouldn't even be writing this review. Things happen. What bothered me was being repeatedly told that the restaurant closes at 8 PM when the sign directly outside says 9 PM. It felt less like a misunderstanding and more like I was being given an explanation that clearly didn't match the posted hours. If the restaurant actually closes at 8 PM, then the hours posted outside and online need to be updated. If the restaurant closes at 9 PM and the kitchen normally closes at 8:30, then I would have appreciated someone simply being upfront that they were closing early tonight. I've been a regular customer and have generally enjoyed coming here, so this was disappointing. Customers are usually much more understanding when you're simply honest with them rather than giving them an explanation that directly contradicts what's posted on your own front door.
