First and foremost the medium is no joke HOT. Anyone can make something hot. But the flavor of the hotness is world class. Whatever they do, (brine whatever) the flavor is deep in the meat, including the breast. Absolutely fantastic. My only advice is if you find a raw jalapeno to hot, go one level down in spice.
