Welcome to the neighborhood Chef Cut! We've been waiting for you! When we heard that Old Brea Chop House was going to open a butchery/wine bar/deli experience, we were all in. If you have been to the restaurant, you know that they aren't messing around. And this new place is no exception! We came in with zero plan in mind except to check out the offerings. We were excited at the menu of sandwiches, salads, sides (like Tallow fries) and desserts. So many things that I want to try. However, the very nice gentleman at the counter told us they could make a little charcuterie plate which is not offered yet but will be and that was how we went. The cheese and meat they selected was fantastic and we enjoyed this with a beautiful glass of wine in their cute seating area. When "The Butchery" closed in this location, it left a hole for premium cut meats and thoughtfully marinated entrees. Can't wait to try Chef Cut for when we need meat for a special occasion (or maybe just a regular old day). We will be back! read more

Jersey breakfast in Brea! Growing up in New Jersey, the Taylor ham (aka pork roll), egg and cheese sandwich was a diner staple. In fact, I eat it pretty much every day for breakfast when I visit "home". You see Pork roll is a pretty much a Jersey thing and it's difficult to find it in any other state, let alone the actual sandwich on a menu. So when I went online and saw Chef Cut had it on their menu, I went the very next day to check it out. For those of you unfamiliar with pork roll, it's a breakfast meat sliced thin and fried. It kind of looks like round spam and tastes like a cross between bacon and sausage. When you fry it, you have to make three to four small slits in the meat, so it doesn't puff up while cooking. This pork roll sandwich was served in a foil wrapper, the exact kind of thing you'd get if you ordered it to go at a Jersey deli. When I unwrapped it, I felt like I was instantly transported to the Garden State. This sandwich looked legit. One bite later and I was in heaven. This sandwich not only looked the part, it tasted absolutely authentic. The jersey style "hard roll (iykyk) was layered with runny eggs and melted American cheese and topped off with ketchup. You gotta do the ketchup! The only bummer here is Chef Cut doesn't open until 10am, so you're you'll have to wait until then to get this bit of Jersey breakfast goodness. read more

I had their double smash with fries during the weekday. The burger is probably the best value they have on their menu. The hamburger was really good. It was perfect for me because I don't like vegetables. I think they should give options for vegetables though. Smashburger tend to be on the crispy side. Crispy was the only thing lacking from the burger. The tallow fries were also very good however, I don't think it's worth the price tag. I could go get McDonald's fries for a lot cheaper. The reason why I'm giving this place at three is because of the breakfast burrito. I came here last sunday at 8 o'clock. Everything says that they open at 8. But they recently changed their hours to 10. Google maps said they open at 8 and so did their own website. But that's not even my biggest issue. I saw someone get a breakfast burrito that was a chorizo and it was twice the size of my burrito. Don't know if that was a food, blogger or influencer size burrito. But as you can see from my burrito ain't that big. For a price tag of $15 I would expect a lot more. It had enough eggs. It had plenty of sausage, but it barely had any cheese or tater tots. Potatoes are the cheapest things you could fill these things with and it lacked tater tots. The sausage taste great the eggs were kind of dry. They added some grilled onions or something that stood out. Tasted good, but not really a fan to have onions in breakfast burrito. My other biggest issue is their new hours is 10 AM. Breakfast is from 10 to 11. They were packed for a Saturday morning, which is great for a new place. But I got there around opening and order to go. I didn't get home until around 10:45 and I live right down the street. Maybe they need to adjust their times on the weekends. But I definitely will not be coming back on the weekend. There was way too many people there and then not enough standing room for everyone to wait for their food. When they are busy, the flow of the space doesn't work very well. They need to be chairs outside or chairs in that little waiting area at their front door. Definitely won't be back for the breakfast burrito. I'll definitely be back to try out the hamburger again. read more

Came here for the first time on 9/8/26 and ordered the bacon breakfast burrito with a flat white coffee. The burrito had tallow fried tater tots in them and eggs were soft and fluffy. The burrito was a little on the greasy side due to the tallow-fried tater tots, but it added to the flavor. The flat white was a little underwhelming and milky. The espresso beans seem to be pre-packaged. Just ok. All of the employees working here were very friendly and nice! I returned a few days later on a Saturday late afternoon. There were a lot more people inside having their lunch. I tried the turkey sandwich that had a strawberry rose jam spread which was so good! The turkey wasn't like the typical deli meat you buy at the market, the slices were more prominent. The focaccia bread it came on was slightly crispy on the outside but chewy and fluffy on the inside. They should make a strawberry shortcake with the crumb of it!! It would be so good.. I also tried the Italian sandwich which came on a hoagie roll. The bread was light and fresh, very homemade. We also ordered the tallow fries, which were very good! The sandwiches are large. Everyone is so nice and friendly here. When we ordered waters, they came in a 16 oz type plastic cup with lid and straw. And they came back to offer refills! Very nice.. it's the little details that make a good restaurant into a great one! Can't wait to return. Wish they had online ordering for easier and quicker pickups to-go. read more

The staff is exceptional here. It is rare to find this level of service. The food is phenomenal. We went three days in a row though I couldn't remember to take pictures each time. My favorite is the turkey sandwich. It is incredibly well balanced in flavor. The strawberry rose jam and focaccia bread truly elevates it. I DREAM of it. My husband enjoyed the Italian sandwich though I didn't get to try it. The fries are generous in serving and surprisingly reheat well the next day! The potato salad is incredibly refreshing. We also tried the wagyu cheesesteak which was amazing. The sesame bun was so good! It was just such a comfort food sandwich. The breakfast sandwich and the breakfast burrito were also absolutely delicious. I couldn't decide which I liked more. I haven't gotten around to cooking the skirt steak but the jidori chicken cutlet was delicious! This was the best tasting chicken I think I've ever had. It had such a rich flavor. As for desserts, the cheesecake is light and the crust is perfect. The compote is perfectly balanced. The toffee cookie is everything I want in a chocolate chip cookie. I'm not usually a fan of soft cookies, but this made me understand the hype. My husband did think it was on the sweeter side. I thought it was perfect. Likewise, the cannoli was unbelievably good. I don't tend to like them since I've only ever had soggy ones. But this one is so crisp and creamy and the chocolate adds such a nice flavor and texture too! The tiramisu is absolutely amazing! It's been a long time since I've found a good cheesecake, let alone a good tiramisu. You can really tell that a lot of care is put into this establishment. Stopped by for the cheesesteak and it was 10/10 amazing! The sesame bread did a great job holding everything together. The Wagyu beef was seasoned well and combined perfectly with the grilled onions and American cheese. It was such a great Philly cheesesteak which is hard to come by in SoCal! I'm already planning my next visit to try the smoked beef and horseradish . Service was amazing, constantly had someone checking in and offering help. Well I have been eyeing this one while doing my errands at Mothers. A local butchery deli style sandwich shop in close proximity has been long overdue and now I am looking forward to frequenting this spot. Thus far I have visited twice this week. I was too enthused and took my bites before I remembered to take photos I recommend the smash burger so simple and tasty on a potato bun. The beet salad was also super delicious. Both the pastrami and Wagyu cheese steak are also highly recommended but a word of caution they are filling so for those who can't eat that much I recommend splitting your sandwich ordering a salad and/or the amazing crispy light tallow fries! The service is friendly they use high quality ingredients and not to mention related to our favorite local steakhouse Old Brea Chop House. Only thing missing is the pricing for their meats and seafood which I'm sure will come. read more

My husband and I have been in twice and both times we had a great experience. Everyone is super friendly and gave great service and recommendations. The interior is really cute and feels upscale for a butchery. We were able to find a table easily both times but it can be busy. The first time we came in we tried the caesar wrap and wagyu cheesesteak. The caesar wrap went to number one on my list of caesar wraps in orange county. The wagyu cheesesteak was also amazing and melts in your mouth. We paired those items with the tallow fries and the portions are so big this meal fed us all day. On our return we got the turkey sandwich and the pastrami sandwich pairs with their garlic fries. The jam on the turkey sandwich was so good and it gave a nice sweetness. The pastrami was delicious. We want to come back and try their breakfast and dessert. The display of desserts always look so good but we are too full to try them! read more

Chef Cut is a hidden treasure! They sell prime cuts of meats and a good choice of cheeses but they are outstanding when it comes to sandwich making. I ordered a turkey sandwich which was made on focaccia bread. It was filled with turkey, bacon and an awesome strawberry rose jam. It was excellent and very large. I had to take half the sandwich home. For me it was too much to eat in one meal. The service was excellent, and we were checked on several times - just in case we needed anything else. Love the selection of classic NY deli/Italian sandos and butcher options. The wagyu cheesesteak was 100/10, yes you must get this, no questions asked. The tri-tip horseradish sando was a miss for me. Like tri-tip typically is, it was just too chewy and lacked flavor. Personally I would've liked more horseradish which I didn't taste much of because of the strong onion jam. Also tried the mushroom arancini which was a miss too. Lacked salt and overall flavor. The butcher options and premade foods/sides by weight had no prices listed anywhere that I could see (maybe I missed it). Everything looked good but no listed prices may mean high price per pound. We stopped by on a Sunday, it was busy but efficient. Finding a table looks to be tricky and based on luck. We got our food to go. The Chicken Cesar wrap was so good. Refreshing dressing was made fresh, chicken was well cooked.The beet salad was a nice surprise many times people tend to create sweet beet salads, this one was bright & refreshing and so good with the walnuts (that were not candied). This place just opened up and I was super impressed, they remodeled it to make it this nice modern classy atmosphere with a great selection of meats, seafood and best of all they have caviar... not just any caviar, Thomas Keller's new caviar!!! Great prices on bottles of wine and they said they do free corkage at their restaurant if you buy the bottle at the butcher shop! We got the wagyu cheesesteak and it was huge! Like big enough for 2 people big, they had some of my favorite sides from their restaurant available Togo so I'll be having their twice baked potatoes and cream corn to go with the ribeye I picked up as well as their tiramisu for dessert, nice selection of gourmet soda's, beer and wine, this place is definitely a great addition to the neighborhood. read more

Coming from a fan of the Chop House the food is not worth the money or wait for that matter. There is a limited amount of seating and this place was not designed with large parties in mind. We ordered our sandwiches and awkwardly waited in the middle of the seating area while everyone ate and stared at us. There was a manager checking on tables, when our food came out and we still had no table, the server was more proactive in finding us a place to eat our food. I had to eat standing at the bar area and the other two in my party luckily found some chairs and were able to sit at counter height to eat. We were about halfway when tables became available, nobody offered to clean one for us. Nobody offered us water that everyone else had and I watched them get refills. I was also charged wrong at the register and the cashier was nice enough to either offer a partial refund or a dessert. I observed many of the patrons knew each other so maybe that's the way to get better service?? read more

Went for the soft opening and tried a few different things. The smash burger was delicious, my hubby had the cheese steak and a meatball sandwich which he raved about. We also had some cheese cake for dessert and some cookies. The cheese cake was homemade and some of the best I have ever had. They are supposed to open this weekend and you need to try it. so there was three of us tables were all filled when we got there while waiting in line a table cleared so one of us went over and saved the table. all three of us ordered the italian sandwich. when the sandwiches came to the table they were wrapped like any sandwich and the server just gave us our sandwiches no plates no trays no nothing. so we just used the wrap from the sandwich as our plate. they forgot to bring my beer we had to get up and tell the server halfway through eating. the sandwich was good not great. minimal choices at the meat deli. the whoke experience wad good not great read more

We came at 12:15 on a Tuesday and were not surprised to find all of their tables taken. The problem is, once you place your order, there is no line management to wait for a table so you are either standing next to the bathroom, on top of people eating or along the deli display cases. Then you have people grabbing tables who ordered after you so your food comes out but you have no place to sit. It wouldn't be a big deal if this was a $10 meal but when you are paying over $60 for 2 people, you don't want to have to fight for a table. We decided to take our food to go because again, at $30 a person, when you do find a table, you want to enjoy your meal and you could tell the people who were eating were going to be there for awhile. The wagyu cheesesteak sandwich was a huge hit but the tri-tip bbq sandwich was a bigger miss. The fries were probably the best I've had in years. The miss on the tri-tip? It was chewy and hard to eat in sandwich form. The bread and sauce was amazing but the tri-tip just didn't do it for me. We are so excited to have a nice butcher in town and I would probably try their sandwiches again but will definitely come back for their fries! read more
