    Living in Hutto for over six months now, I had realized that I had yet to truly find a taco joint…read morelike I had found in Lubbock or Tyler, some of my previous home bases in Texas. In my research, the food truck Taqueria Jaguar's seemed like a possible contender. I want to first address my own limitations in this review. I am a white man. I am an outsider being welcomed in by eating this food. I am not a subject expert. I am usually knowledgeable on what I do and don't like, however, and can destroy any plate in any cuisine class. I had been craving some birria recently, so I ordered a set of their birria tacos and then an order of plantains to go with it. The service was pretty efficient, and it wasn't long before the food came out hot. The plantains were fantastic. There was so much that I couldn't finish them myself, but they tasted pretty amazing. I recently discovered how fantastic plantains were, and Taqueria Jaguar's fried plantains were top notch. I highly recommend them. When it came to the birria, however, I was left disappointed. I fear maybe it was the experimental nature of my order instead of going for some al pastor tacos, but I felt the meat was not great. It was cooked well, but it had no flavor. I could best compare it to when my grandma made me chili and told me it was amazing, when I had to put so much cheese on it to hide its lack of flavor. I don't know if it was from the goat meat versus your typical beef you'd get elsewhere on the menu, but I was shockingly disappointed in how weak they were. I didn't finish them, sadly. I hope to return and give Taqueria Jaguar's a second chance. If people praise this food truck like they do, I think I might just be wrong. Until then, it is not my trusted taco joint. We had beef fajita (chewier), pastor (tender) but lacked flavor, and chicken fajita which was fine. We got a quesadilla (photo with campechana. I didn't enjoy the taste. It was a corn flavor unlike the normal one. We also got the birria tacos and consume. It was the not flavorful and the consume was pale and watery (I know it's not supposed to be thick). Maybe it was an off day. Their chips were fried fresh (flour I think) and they gave us a lot of little salsa containers. We couldn't dip them (you had to pour). The green was good and spicy but I didn't like the red one. I'm glad we tried this place.
